But mostly potatoes.
Ok. So, this morning I ate a cooked turnip with basil paste (it's a base for green pesto, if you'd add some cheese, you'd get pesto). I know it's a bit weird-ish, but I needed to get rid of all perishables from my fridge. Then had a nice snack, when my friend brought me fish with potatoes and veggies, so had it around 10h, cause that one turnip DEFINITELY doesn't fill the stomach, lol. Then had my lunch - a cup of green tea and fries, a portion. And now I am nervous and would like to eat again. And it the meantime I had devoured a kilogram of tangerines. A peer and an apple. All this excitement of going home is driving me nuts. In combination with insomnia. No, it is not insomnia. I do fall asleep. Only I do it too late, and I do wake up. Only, too early. Hmm... Maybe it is insomnia? Addition, 20:15h I AM nervous. Actually it is more Finland that makes me a bit nervous than Croatia. Although... Knowing what expects me there... Nah, THAT I'll survive. There are other more difficult things in life, lol. And the whole point of this writing is to say that I have cooked more tonight. So, approx 200gr shrimps with plenty of chii pepper and a bit of salt AND a good splash of coconut milk (my last perishable from the fridge, lol). No idea how it's gonna taste, but will let you know. :D Btw, the whole house smells like "almost-curry". Might get the full curry aroma if some turmeric's been added. Ok, just tried a bit. TOO MUCH SALT!!! Darn! And too much chili pepper, lol! But I don't mind the chili. I do mind salt. Soooo... what shall I do with it? I think I'll cool it down and put in the freezer. Might come useful in a stew or salad or something like that, lol. Good night. Still need to pack. |
Rice/beef day
For days I've been having that weird craving for cooked rice.
So, this morning I cooked my favourite breakfast (you know, the one with coconut milk and goji berries and hazelnuts). I made a lot, so will have for tomorrow morning, too. And for lunch, nada. I was so full of rice, lol, that I skipped lunch all together and am going into the dinner (eating it now - I know, quite late...) So: approx 50gr rice 1l water (or soup stock - I did that, still had some soup left, so wanted to use it) 200gr beef (cooked in my soup), cut into pieces 200gr pasternak, cubed 0.4l tomato sauce 3 cloves garlic (either sliced or cubed - minute) oregano powder chili peppers 1 spoon oil Put one spoon oil in your pan, let it warm up a bit. Then add rice. Let the rice fry a bit. Then add stock (water), approx 0.6l and let it cook. Add your chili pepper to the rice, to make it a bit different, lol. Let it cook until all liquid evaporates. put the rest of stock in another pan, add beef, cubed pasternak and let it cook. Add tomato sauce, and let it simmer. When you're almost sure you're going to turn it off, add garlic. Let it simmer for a minute or two. Just before turning off the heat, add oregano powder. Serve with green salad. Delicious! |
A Chinese day
Today my unit had a farewell lunch party for a a colleague. He's off to a better pastures. We went to a Chinese restaurant.
So, when ordering, I asked for veggies with prawns and garlic and ginger. No milk, sugar, soy, cashew nuts, that taste enhancer powder, and no idea what else I said. Anyway, it was delicious and expensive. I guess more natural it is more money needs to be spent, lol. And for dinner, I had guacamole with rice cookies. Well, I was watching "Red Dwarf" (thnx R.) and cutting the tomatoes and garlic. Forgot to cut onion. Hmm... Anyway, peeled and cut two avocado's, mashed them all together, with lots of pepper, some salt and chili pepper. It was very, very delicious and quick and I am full, and I should sleep, rather then eat. LOL Going to finish the rest of the Red Dwarf (I really, really like that serial)! |
Pasta day
Today was a very stressful day!
Thank goodness I had a comfort food like pasta, lol. So, 300gr buckwheat pasta 1/2 jar basil paste (without cheese, cashew nuts and additives - check Xenox!) 20gr pine nuts (need to be roasted a bit) 80gr grated goat's cheese Cook the pasta, when ready, leave it in the water for another minute or two. Then throw away the water, add basil paste, pine nuts and cheese. A real comfort food! :D Breakfast: Millet porridge with a mashed banana. Dinner: I am ashamed: I had a bag of salt/pepper crisps (and I know I shouldn't have)! Mea culpa. |
Brussels sprouts-recycled
Hey, it's 111 post today!!!
Actually, I should have written before, my dears, but... Ah, what can I say? The laziness hits hard as the end of the year approaches, lol! The worst is that it doesn't hit writing only, but cooking, too. :D So, for the past few days the only interesting thing I have made was on Saturday: buckwheat pasta with dried goat's cheese and walnuts (literally! Nothing else! Btw, the walnuts were taken from the freezer.). Actually, it was the only day since Thursday I cooked, lol And this morning I woke up at 6h ((!) yes, I know, I know, but I also went to bed at 21.30h) and cooked my lunch. 1/2kg brussel sprouts 1/4 pineapple, cut in small cubes 100gr shrimps 1 onion (big one), wedged 3cm ginger root, sliced 2 cloves garlic, sliced I steamed brussel sprouts and shrimps together. In the meantime, I fried onions, and when nice and soft, added ginger root, garlic and pineapple. Pinch of salt. Kept on stirring for another 3 minutes. Then added sprouts and shrimps, stir fried for another 5 minutes and finito! Eating it now (well, started at 11h, couldn't control myself, lol). Breakfast, millet porridge with 1/2 pineapple. Dinner? No idea Snacks: 1/2 pineapple, 1 banana, handful hazelnuts On the other front, I've done the Imupro 300 test and am waiting for the results. I must admit I am a bit nervous about the results. Will keep you posted. |
Thursday...
Today I had a very strong breakfast:
2 hard boiled eggs 100gr smoked ham 3 tomatoes few spoons of ajvar Snacks: 80gr macadamia nuts 50gr crisps (salty) 2 banana's 10 tangerines 2 cups of coffee with oat's milk Lunch: Fries!!! Yaaa-hoooo!!! :D Not sure if I'll manage to eat anything for the dinner. I think I had more than enough snacks and animal protein, lol. Hmm... I still have chicken soup (new batch). Maybe soemthing like that... Otherwise, today for lunch, I was to have the ratatouille from Sunday, lol. But, it'll stay in the fridge until tomorrow, lol. Adio! Millet day
Today I was absolutely out of ideas what to cook.
For breakfast I had my millet porridge with grapes and hazelnuts, and I was thinking of rice with... But then thought, hey, I shouldn't have two different types of grain in the same day. So, I thought hey I do have millet porridge, so let's have the millet day today, :D Colourful Millet 70gr millet (a bit too much, but will fill me well, lol) 2 carrots (cut in thin stripes) 1 red pepper (cut in small pieces) 1 yellow pepper 70gr meat (any, I had something that had to be eaten asap, cut in small pieces; btw, you need not meat in it! Could be 100% vegetarian, lol) 5 cloves garlic (sliced) 2.5cm ginger root (sliced - after peeling) salt chilli pepper (I know! I'm overdoing it!) 0.75l chicken soup stock (or simply use water - I have decided to start cooking my grains in soup) :D 2tbs chicken fat (I used the chicken fat I had from my last baked chicken, you can use the olive oil or something similar) Put millet in 0.5l soup and let it simmer on a low heat. In the meantime, fry meat in the chicken fat for 10 minutes, stirring. Add cut peppers and carrots. Keep on stirring for another 5 minutes. Then add chilli pepper, garlic and ginger, and the rest of the soup. Let it simmer on the low heat for another 10 minutes. Serve it with green salad. A bit too spicy (way too much chilli pepper, but delicious)! :D Bon appetite! P.S. Dinner? Again some kind of fruit. Plentiful of lunch, :D |
Brussel Sprouts-2
I like brussel sprouts. They're nice and healthy and a bit bitter and simple and easy and quick to cook.
So, this morning, I cleaned brussel sprouts and decided to make it simple (was - as usual - late for work). Here it is: 1/2kg brussel sprouts (uncleaned is 1/2kg) 100gr smoked ham, cut in pieces 2 small tomatoes lots of chilli pepper Steam your brussel sprouts for 10-15 minutes, depending how soft you want them. In the meantime, fry smoked ham for a minute, add sliced tomatoes and red chilli pepper (don't overdo in spices as I do, lol). Fry for another 2-4 minutes Put it all together and that's it. Now, later on I have remembered that I wanted to add some walnuts, too. So, when frying your ham, add approx 40gr walnuts and fry them a bit as well. Nice and crunchy! Breakfast: millet porridge with hazelnuts and grapes. Dinner: an apple, I think. Groetjes! |
Ratatouille
Today is the first day I really miss television. Since May.
First day! And the only reason is because I feel so tired and maaaaybe a tiny-winy bit lonely, and still a bit sick. And this weather definitely doesn't help any of these, lol. Today I've been in the gym. You KNOW how much I despise going to the gym. I still remember the time when I spent huuuge amount of money to go to buy the membership and then ignored going there. What a dombo! Anyway, A. has bugged me and bugged me and bugged me for almost a year about going with her one evening, so tonight, as it was my free day, I have decided to see. So, you may be proud of me: have spent there 20-30 minutes and then, thank god, was time to go (btw, I was late, because I couldn't find it. And I am so happy I was late as I don't like spending my time there). Oh, and I was taught by the owner of the gym Jack something and I must admit he IS good! A very, very good teacher. Anyway, I have been there. And I've seen it and tried it and now hopefully, I'll be left alone. Until the moment she finds something else that she enjoys and wants to share with me, lol. And as for the food today, I made, yes the ultimate food allergies/food intolerance number one. I took it from the book, "The Big Vegetarian Cookbook", ISBN 3-89508-552-9, but with my small modifications. 2 spoons olive oil 1.5 onions chopped 1 courgette, chopped 1/2 red pepper, chopped (approx 1x1cm ) 1 green pepper, chopped (approx 1x1cm ) 1 yellow pepper, chopped (approx 1x1cm ) 5 garlic cloves, chopped finely (not too, though) 1 eggplant, chopped 3 tomatoes, chopped 2.5dl tomato juice freshly grounded pepper dry basil, oregano herbs Warm up the oil, and add the onions. Fry them until they get yellowish. Then add garlic, stir for a minute and courgette, and peppers. Continue stirring for another 5 minutes. Then add eggplant, tomato, herbs and pepper. Let it simmer on the low heat for another 15-20 minutes, or until the vegetables are soft. The serving suggestion is to eat it with the bread. I ate it on its own. Well, I've made it super spicy (overdone with the pepper, lol), and my whole house smells of pepper and tomatoes. But I like it. (I was very warm afterwards, lol. Very, very warm. All that pepper...) Oh, and to make it a bit fuller, I cooked approx 200gr shrimps, apart, and added to the stew later on. A bit crunchy. Still have another portion for Friday, need to put it in freezer. And now going. Cauliflower day!
Today I had a cheese day!
So, I wanted to make something special. Plus I had the cauliflower in the fridge waiting to be cooked, lol. So, for breakfast I had 2 pieces of goats cheese with a few spoons of ajvar (check ex-Yu&Turkish shops) plus two rice cookies. Rich Cauliflower Soup 2 cauliflowers LOTS of red chilli pepper some salt slab of sheep/goat feta cheese (approx 100gr), cut in small cubes 80gr sunflower seeds (roast them!) nutmeg powder (a spoon! Can add a bit more, lol) 2cm ginger (grate it!) So, clean the cauliflower, and from the nicer one take 1/3 of the small rosettes. Those won't be cooked. Those you'll use when serving the dish in the end. Cook the rest of the cauliflower and cut chilli peppers until the cauliflower is completely soft. Bland it. Just before finishing add a good spoon of nutmeg powder and ginger mix it all well together. When serving, add those raw cauliflower rosettes, and cheese and mix it all well in. Generously sprinkle with sunflower seeds. Btw, it's delicious! Groetjes! |
The filled eggplant/peppers (beans day)
For the past few weeks I feel like eating meat.
And I do... As you've seen more or less every day I eat meat. Yesterday I ate with my friend. Usually she doesn't cook, so I haven't cooked anything either. Well, she had her own food yesterday, oh lucky me. Well, that "made" me eat fries. Oh, poor, poor me, ;D BUT... In the evening I so felt like eating some meat, and I have eaten way too much and ham and beef and lamb and chicken that I was out of ideas. Actually, I wanted a medium RARE stake. Hey, me, eating red, bloody meat!!! Me, who over-bakes every meat she gets her hands on. No, I'm not pregnant, thank you for asking. Anyway, finally I went to the shop and found an ostrich stake. And baked it. It was delicious and bloody. Now that I think I about it, I feel so disgusted that I've eaten it that way. Bwa... disgusting! Red! Anyway, that was last night around 20h (and you know I don't eat after 18, max 19h), so it was a real need, lol. And yesterday I prepared meal for today. I've been at the Ayurvedic doctor and one of the things that still remained in my memory is no protein mixing, i.e. no meat and milk, or meat and beans, or milk and beans. So, I though I would never do that but,... For breakfast I had white beans salad. 100gr white beans So, you need to soak beans for minimum 8h. I have soaked mine for 24h. And in 3 waters (all in vain hope that I won't have gasses). Then I cooked them in a very little water (just covering the top of beans) until all water evaporated. 1/3 I took aside for the breakfast. I added 1/2 onion (cut) and salt, pepper (freshly grated-bought the pepper mill just for that reason!), lemon juice and Sanja's olive oil. I need more oil, this one from Sanja I use so scarcely, because it is soooo good, and cold press, etc, etc... but even with such a saving plan, it's still disappearing. And then for the lunch: the rest of the beans 3 tomato’s 2 peppers 1 eggplant cumin (red somewhere, trillion years ago, that it helps reducing gasses, lol) lots of garlic, tiny pieces a splash of oil red chilli peppers (grated) salt Mash the other 2/3 of beans, then add cut tomato's, lots and lots of garlic, some oil, lots of chilli pepper (if you like it hot and spicy), fry a bit your cumin on dry frying pan (I'd suggest a Teflon frying pen for this purpose), and add it to your mixture. Cut the peppers and/or eggplant in half lengthwise (I didn't have enough eggplants so had to use peppers, too.) Deseed the peppers. Scoop out the eggplant meat, so that it stays hollow. Get the oven to 200 C. Fill the eggplant halves and/or pepper halves and put them in the baking mould. Oh, yes, do put some baking paper in. The pepper stains will be almost impossible to wash out. Bake for 30-45 minutes. Let it cook down. I had my baked filled vegetables with salad (dressing: grape oil, salt and lemon juice) As a dessert, a banana (I still need my sugar, from time to time, lol). For dinner, I still have 1.5 pepper. And am already looking forward to it. |
