Today is the first day I really miss television. Since May.
First day!
And the only reason is because I feel so tired and maaaaybe a tiny-winy bit lonely, and still a bit sick. And this weather definitely doesn't help any of these, lol.
Today I've been in the gym.
You KNOW how much I despise going to the gym. I still remember the time when I spent huuuge amount of money to go to buy the membership and then ignored going there. What a dombo!
Anyway, A. has bugged me and bugged me and bugged me for almost a year about going with her one evening, so tonight, as it was my free day, I have decided to see.
So, you may be proud of me: have spent there 20-30 minutes and then, thank god, was time to go (btw, I was late, because I couldn't find it. And I am so happy I was late as I don't like spending my time there). Oh, and I was taught by the owner of the gym Jack something and I must admit he IS good! A very, very good teacher.
Anyway, I have been there. And I've seen it and tried it and now hopefully, I'll be left alone. Until the moment she finds something else that she enjoys and wants to share with me, lol.
And as for the food today, I made, yes the ultimate food allergies/food intolerance number one.
I took it from the book, "The Big Vegetarian Cookbook", ISBN 3-89508-552-9, but with my small modifications.
2 spoons olive oil
1.5 onions chopped
1 courgette, chopped
1/2 red pepper, chopped (approx 1x1cm )
1 green pepper, chopped (approx 1x1cm )
1 yellow pepper, chopped (approx 1x1cm )
5 garlic cloves, chopped finely (not too, though)
1 eggplant, chopped
3 tomatoes, chopped
2.5dl tomato juice
freshly grounded pepper
dry basil, oregano herbs
Warm up the oil, and add the onions. Fry them until they get yellowish.
Then add garlic, stir for a minute and courgette, and peppers. Continue stirring for another 5 minutes.
Then add eggplant, tomato, herbs and pepper. Let it simmer on the low heat for another 15-20 minutes, or until the vegetables are soft.
The serving suggestion is to eat it with the bread. I ate it on its own.
Well, I've made it super spicy (overdone with the pepper, lol), and my whole house smells of pepper and tomatoes. But I like it. (I was very warm afterwards, lol. Very, very warm. All that pepper...)
Oh, and to make it a bit fuller, I cooked approx 200gr shrimps, apart, and added to the stew later on. A bit crunchy.
Still have another portion for Friday, need to put it in freezer.
