Today I had a cheese day!
So, I wanted to make something special. Plus I had the cauliflower in the fridge waiting to be cooked, lol.
So, for breakfast I had 2 pieces of goats cheese with a few spoons of ajvar (check ex-Yu&Turkish shops) plus two rice cookies.
Rich Cauliflower Soup
2 cauliflowers
LOTS of red chilli pepper
some salt
slab of sheep/goat feta cheese (approx 100gr), cut in small cubes
80gr sunflower seeds (roast them!)
nutmeg powder (a spoon! Can add a bit more, lol)
2cm ginger (grate it!)
So, clean the cauliflower, and from the nicer one take 1/3 of the small rosettes. Those won't be cooked. Those you'll use when serving the dish in the end.
Cook the rest of the cauliflower and cut chilli peppers until the cauliflower is completely soft.
Bland it.
Just before finishing add a good spoon of nutmeg powder and ginger mix it all well together.
When serving, add those raw cauliflower rosettes, and cheese and mix it all well in. Generously sprinkle with sunflower seeds.
Btw, it's delicious!
