We decided to go all out on the food for my 35th birthday party. I love oysters, so we thought it would be pretty awesome to put together a tiered seafood platter like the ones in French brasseries. In keeping with the seafood theme, besides the Plateau de Mer we also served a warm second course of Moules Marinieres (mussels in white wine and garlic sauce).

Mr.P did an amazing job buying, prepping and cooking all the seafood then putting the display together. It was so bountiful! I loved not having to worry about the cooking for my own birthday party!

This was the first time I tried to do a somewhat typical American Thanksgiving. From lost to the river, and I decided to go all the way about it: invite people over, cook a bird following a fancy recipe, make cranberry sauce, etc.

The result ... was a mixture of everything. Fun and good times were certainly had, but that was already assured by the good company.

I decided to cook a chicken (instead of the traditional turkey) following one of my mother's recipes. First of all the recipe calls for a boneless bird ... I did not expect that the poor creature would be totally cut through! I mean, I know you've got to cut to get the bones out, but what my mother gets in Madrid still has some meat holding the whole thing together. This mean that it was almost impossible to stuff properly and it looked nothing like a chicken when it went into the oven.

We also had most of the stuffing left over after filling the bird; so I just threw it into another container and popped it in the oven to make meat loaf. I knew this would work, because the stuffing is basically the same recipe my mother uses for her amazing meat loaf. In fact, Alex is going to eat the last piece of it tomorrow for lunch.

As I expected, it took longer to cook that it was supposed to. Well, to be honest, maybe it didn't, but I wanted to play it safe and make sure the stuffing was cooked thoroughly since it is meat based.

Luckily we had asked our friends to bring appetizers and warned them that the chicken would start cooking when they arrived so it might take some time to make it to the table. OTOH it mean that two of our friends who had found themselves double booked for Thanksgving parties had to leave before it was ready.

And the sauces and side dishes ..... yum! Caramelized onions (the best), cranberry-wine-citrus sauce (pretty good), apple sauce (I still like it better on oatmeal than as a side dish for something savoury), mashed potatoes (with sour cream, cheese, and chives), and of course gravy / chicken juices.

Still, much as I like having people over for dinner parties, I think next time I'll stick less exotic recipes.

And we've got to make that meatlof again! In fact, we could have made just that and skipped the bird and it ould have been so much easier.

For dinner last night was taco salads. I made something of a taco meat/chili hybrid. It's easy. here's the recipe
1 tbsp. oil (appx) in a large pot. Add:
1/2 c. onion, diced
4 or more minced garlic cloves. Stir for a minute or so, then add:
2.5 lb ground beef, turkey or chicken (it makes a BIG recipe, that's the only way I know how to make chili)
Cook, stirring, until the meat is medium-rare, then drain well.
Add back into the pot. Stir in some seasonings ** I "eyeball it" or use my hand as a measuring device. Adjust as you like.
2 tbsp. cumin
1/2 tbsp. cinnamon
2 tsp. ground coriander
some oregano or marjoram
Some thyme
a bunch of chili powder
1 tsp. seasoning salt (Vege-sal is great)
1 tsp. garlic powder
2-3 bay leaves (good sized)
Whatever else strikes your fancy as you root through the cabinets
Stir well then add:
1 can of mexican style tomatoes (undrained)
1 can of pinto, turtle, or kidney beans (drained and rinsed)
1 cup of frozen or leftover corn (or however much you have)
1 cube of beef bouillon or equivalent
1 cup of water
1 portion of unsweetened baking chocolate (yeah, I said it)
1/2 cup of V-8 juice (yep) or anything else you have around that would substitute
3/4 c. of red wine (optional, but why not?)
Stir and simmer (uncovered) while you get the salad ready or as long as you'd like. If the juice reduces too quickly, put a vented lid on it.

Besides romaine/redleaf/iceberg lettuces, you can add some more tasty stuff to your salad., such as, shredded Sargento Mexican style cheese, avocado cubes, cherry/grape tomatoes, green onions, chopped fresh cilantro, green sliced olives, sour cream.

Knowing me, I forgot at least 3 ingredients. But, play around with it.

These treats will not last once they are served. They are addictive!! Brew a nice pot of coffee or a glass of milk and you will be in cookie heaven :)

Here is the recipe:

INGREDIENTS
2 cups all-purpose flour
Pinch of salt
1 cup unsalted butter, at room temperature
6 tbsp. sugar
1 tsp vanilla extract
3 oz. unsweetened chocolate, chopped
1/2 cup hazelnuts, toasted and finely chopped

Powdered/confectioner's sugar for dusting
12 oz. semi-sweet chocolate, melted, for dipping

DIRECTIONS
Preheat oven to 325 degrees F. Line baking/cookie sheet with parchment paper. Sift flour and salt into a bowl. In an electric mixer, beat butter until until creamy. Add in sugar and beat until fluffy, then add in the vanilla extract. Gently add in flour mixture, then the chocolate and hazelnuts.

With floured clean hands, shape the dough. You can make it in any kinds of shape you desire, rounds, crescents, squares...be as creative as you want. Place shaped dough on the baking sheet, approx. 2 inches apart. Bake for 20-25 minutes, or until the edges are set and slightly golden. Remove cookies from the oven and cool on the baking shhet for 10 minutes, then transfer to cookies to a wire rack to cool completely.

In a double-boiler, melt the 12 oz. chocolate. This can be done after the cookies are completely cooled. Dust the cookies lightly with powdered sugar. Using a pair of tongs or your fingers (or chopsticks if you are an expert), dip half of each cookie into the melted chocolate. Place the cookies on a parchment lined baking sheet and let the chocolate set.

I mentioned in my previous post that i'll go dig my cookies recipe book out, right. After putting my kids to bed, i did some digging and found it without much problem. I have all three books by Alex Goh, of the same series. This is the Joy Of Making Cookies. The other two is for making cakes and bread.

I bought these books when i was pregnant with Gordon back in 2003. I had an urge to bake all of a sudden and went out to buy all the necessary baking items needed to satisfy that urge. And i dont even have an oven, only a microwave oven. The books are just part of the things i bought.

I havent baked anything from this Joy Of Making Cookies recipe book before. I baked some cakes and lots of bread when i was pregnant though. Time i try my hand at cookie baking this time. Who knows, i might like it and become creative at baking cookies. I'll never know till i try.

Crockpot Potato Soup and Onion Scones





Ingredients:
1 onion, chopped
2 cloves garlic, minced
1/3 cup butter
2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon pepper
1/2 teaspoon salt
1/3 cup half and half
1 egg, beaten

Preparation:
Preheat oven to 400 degrees F. In small microwave-safe bowl, combine onion, garlic, and butter. Microwave on high for 2 minutes, then stir. Microwave for another 1-2 minutes or until onion is tender. Remove from oven and let cool for 10 minutes.
Combine flour, sugar, baking powder, pepper and salt in large bowl and stir to mix. Add sauteed onions with the butter remaining in the bowl, milk, and egg. Stir just until combined. Gently press the dough together with your hands to form a ball.

On ungreased cookie sheet, press dough into an 8" circle. Cut the circle into 8 wedges, like you were cutting a pie. Separate the wedges slightly. Bake at 400 degrees for 12-15 minutes until lightly browned. Brush with more butter and serve immediately. 8 scones

Crockpot Potato Soup

Ingredients:
5 russet potatoes, peeled and cubed
2 onions, chopped
4 cloves garlic, minced
3 (14-ounce) cans ready to serve chicken or vegetable broth
1 teaspoon salt
1/4 teaspoon pepper
1 (13-ounce) can evaporated milk
3 tablespoons flour
1 cup sour cream
1 teaspoon dried oregano leaves
2 Tbsp. dried snipped chives
1/8 teaspoon celery salt
Preparation:
Combine prepared potatoes with onions, garlic, broth, salt, and pepper in 4-5 quart crockpot. Cover and cook on low heat until potatoes are tender, 6-8 hours.
When potatoes are tender, coarsely mash with large spoon or potato masher.

Meanwhile, in medium bowl combine evaporated milk and 2 Tbsp. flour and mix well. Add to crockpot, stir well, and cook on high for 20-30 minutes to thicken.

Place sour cream in small bowl and mix with 1 Tbsp. flour; add some of the hot soup liquid; stir well with wire whisk to blend. Gently stir into crockpot along with remaining ingredients and cook on high for 20 minutes longer. Serves 8-10

INGREDIENTS

Crust

1 cup crushed vanilla wafers (28 wafers)
1/2 cup finely chopped blanched almonds or macadamia nuts
1/4 cup butter or margarine, melted

Filling
1 can (14 oz) sweetened condensed milk (not evaporated)
3 tablespoons lemon juice
3 tablespoons orange-flavored liqueur or orange juice
1 package (10 oz) frozen raspberries with syrup, thawed
1 cup whipping cream, whipped
2 drops red food color
Sweetened whipped cream, if desired
Chocolate hearts, if desired (see below)

DIRECTIONS

1. Heat oven to 375°F. In small bowl, mix crust ingredients. Press firmly in bottom of ungreased 8-inch springform pan. Bake 8 to 10 minutes. Cool completely, about 30 minutes.

2. In large bowl, beat sweetened condensed milk, lemon juice and liqueur with electric mixer on medium speed until smooth. Add raspberries; beat on low speed until well blended. Fold in whipped cream and red food color. Pour over crust. Freeze at least 2 hours or until firm.

3. Just before serving, let stand at room temperature about 15 minutes. Garnish with sweetened whipped cream and chocolate hearts. Store dessert in freezer.

High Altitude (3500-6500 ft):
Heat oven to 400°F.

organized and shot for Beca, because she likes her ingredients measured precisely and the recipe closely followed. I made pulled pork the other day and 110% happy with the outcome, and yet so simple. I'm glad my brother and sister-in-law gave me a Dutch Oven, that thing is awesome.

condensed directions: preheat oven to 400F, 3lb pork butt/shoulder roast, drizzle Worcestershire sauce on meat, pack brown sugar tightly pressing it onto the meat. pour apple juice down the side without disturbing brown sugar crust. lid tightly, place in oven and immediately lower to 225F. let cook for 4.5 hours, then shred and sprinkle with 1/2 tsp of salt.

It's the first time I make this congee that's quite delicious and actually over my expectation.

. Pork rib and rice stew for about 50 minutes
. add nagaimo continue stew 20 minutes
. add wolfberry for another 5 minutes
. add salt and white pepper for flavour, and green onion for garnish

2.heat the water which including the beans and sweet potato until it was boiled.
3.then keep the boilings at least 2 hours, the more the better.
4. boil an egg in hot water in another pot for 10 min, then peel it ,put the egg into the soup.
if u want something more sweet, u can add some honey into the soup.

INGREDIENTS:

2 tablespoons butter or margarine
1/2 cup chopped onion
1 small green bell pepper, chopped (3/4 cup)
2 cloves garlic, finely chopped (1 teaspoon)
1 boneless pork loin (1 lb), cut into 1-inch cubes
1 can (14.5 oz) diced tomatoes, undrained
1 can (4.5 oz) Old El Paso® chopped green chiles
1 can (8 oz) tomato sauce
1/2 cup Progresso® chicken broth (from 32-oz carton)
1/4 teaspoon salt
1/4 teaspoon pepper
2/3 cup uncooked regular long-grain white rice
2 tablespoons finely chopped fresh cilantro

DIRECTIONS:

1. In 10-inch skillet, melt butter over medium heat. Add onion, bell pepper and garlic; cook 3 to 4 minutes, stirring occasionally, until tender.

2. Spray 3 1/2- to 4-quart slow cooker with cooking spray. In cooker, mix pepper mixture and remaining ingredients except rice and cilantro.

3. Cover; cook on Low heat setting 5 to 7 hours.

4. Stir in rice. Increase heat setting to High. Cover; cook 25 to 30 minutes longer or until rice is tender. Sprinkle with cilantro.

"Apparently I Am Psychic"

My gawd, it isn't even "Whinesday" yet. Beware....

I went to bed Sunday night in a bit of a funk. Well, and a bit of an afterglow, but still a bit of a funk. I suspected it was because I wasn't getting Monday off this week.

Woke up Monday morning and my first words to Eric were..."this isn't gonna be a good day". I could just tell.

I weigh myself on Monday mornings. I lost one pound in a week. What?

By the time I left for work, storms had moved in. I get off the bus, open my umbrella and the howling wind and driving rain literally shredded the poor thing. I only have to walk 3/4 of a block to work from the stop, but I was soaked by the time I unlocked the doors.

Surprise! The night line cook had not "closed" the kitchen. Dirty dishes, floors not swept or mopped, cutting boards not cleaned, nacho chips lying everywhere, even down the hallways. The grill not cleaned. The place was a dump.

Then I find a note from the night line cook who says "oh by the way, I can not work my two nights this week as I made other plans". ???????? So now I am likely faced with working a double shift on Wednesday and Sunday.

Due to the weather it was slow today so I figured I would leave a bit early, since I am working seven day weeks. Oops, the health department inspector shows up for my semi-annual inspection. I knew it was due, but...It did not go well. The inspection covers the whole place, not just the kitchen, and I got written up for a ton of minor violations that aren't even part of my area of responsibility. I bitch about the fact the stuff isn't done, but I get the "look". Kind of like, why are you talking to me in Sudanese?

So I leave a rejected mess, and the winds are howling and the the rain is a nasty drizzle now, and all I have is a shredded umbrella. And.....the bus is late. Of course.

I figured after I got home, things would get better, but....Eric had an equally shitty day, and then I tried a new Healthy Choice dinner that was in the bottom of the freezer I am trying to clean out, and discovered you really need to like mushrooms a LOT to enjoy it. I find I like mushrooms less and less with every passing year.

But there was a bright side...I picked up a 24 pack of beer on the way home, and.....well, my night ended rather quickly as I pounded one after another. No, not the whole 24-pack!

Tuesday is a new day, and I am going to be hell to be reckoned with at work.

Not looking for any sympathy here. If I wanted relief, I would just look for another job. Just documenting my day.

Been playing with budget sous vide the last few months. Here's our
setup:

One crockpot on "warm" setting
One instant read thermometer, immersed in the water bath to monitor
temp.

Found out pretty quick that our crockpot hovers around 140 degrees on
Warm, so in theory, we don't really need to use the thermometer
anymore. 140 is pretty ideal temp for cooking pork, as trichenosis is
killed at 137.

Our third pork tenderloin attempt had been in the water bath
unattended for about 8 hours. We'll take it out soon, sear it (sous
vide leaves meat with an unappetizing appearance - searing is crucial)
and it'll be ready to eat.

Since we don't have any control over temp (we're stuck with 140) we've
only played with pork tenderloins so far. Might try steak next, though
this temp is maybe a little high.

I ordered the marinated pork tenderloin with Brandy sauce. I was incredible. The meat was tender and full of flavor. The Brandy sauce was a perfect compliment to the flavor and texture of the pork.

Tonight we celebrated my mom's birthday at La Grolla. I can, without any hesitation, recommend eating there. Their chef definitely knew what they were doing. It was amazing food and I'm usually hypercritical because of my background.

I threw this red lentil soup together in our slow cooker (thank you, awesome brother-in-law!), and this is my first try at Jim Lahey's wheat bread. It was really delicious, I have to report. Perfect fall supper!
