Whole wheat tortilla baked with olive oil and Mrs. Dash Chipotle seasoning. (~5 minutes)
Topped with shredded chicken breast, crumbled cheese, roma tomatoes, green peppers - baked flat for additional 15 minutes.
Topped with mixed greens and folded like a taco.

So here I sit in my computer room, by myself watching the ball drop and having a glass of champagne. i don't drink much but I thought one glass would be ok for the occasion. So Here I sit, thinking about the last year and the year to come. Before I uploaded this I brought up my resolution picture from last year. It is sad but I don't think I accomplished anything from the list last year. That is ok though. I do this list as a kinda declaration to what needs to change. I hope that things do for the better but as long as I am aware of what I want, I may fix it. So here we go, what do I want to resolve.
1. I said it last year and I am going to say it again, I would like to get back into shape. Loose weight in other words. I really need some more activity in my life. I have watched the P90x infomertial so many times that I have been really thinking about it.
2.Keep my job. Normally I say I would like to find a new job, but my priorities have changed. Right now I want to keep my job, not make any dissmisal type mistakes, or piss anybody off. I want to cover my ass and do whatever it takes to keep my job, because it is difficult out there.
3. set an altimatem. This is a very personal statement but I know what it means.
4. continue to grow as a photographer. This past year I did more than anybody really knows, I want to continue to do this and perfect my craft.
5. Find another hobby. Seriously. I love photography, it is my hobby, but I believe art (in this case photography) imitates life, and if you life is boring and boxed into one thing your art will suffer. I would like to get into something else, I am just not sure what.
6. Be part of something bigger than just me. I don't know what but I want to become part of something that makes a difference.
7.Try not to be so negative. This one is really not likely to happen but I would like to change this. For some reason I always see the negative in everything, and usually it will become a self fullfilling profacy. In other words, things are negative because that is all I see them as being.
8. become more stable money wise. that is all I have to say about that.
9. Stop torturing myself. Not too long ago, I punished myself by taking away something I loved, because I was afraid I wasn't good at it and because I was punishing myself for something someone else did. I beat myself up all the time for no reason and I always feel like an ass for it.
10. I said it last year I will say it again, be happy. I can't stress that one enough.
11. Finally, to just hang in there. 2009 has the potential to be a great year, but I am not sure where the year will take me. Undoubtedly it will be a difficult year, but I need to just hang in there and work through whatever comes my way. at least try anyway.
That just about does it for this year. All I can say is, I hope everybody is safe and had a good time tonight, and I wish everybody the best of luck in 09

Even though chilis may be thought of as a vegetable, their culinary usage is, generally, a spice, the part of the plant that is usually harvested is the fruit, and botany considers the plant a berry shrub.
When chilli is eaten, the brain release endorphins, a natural painkiller present in the body. The endorphins lower blood pressure and help fight against cancer.
Chillies have been used to repel garden pests, to stop barnacles on boats, as an aphrodisiac and as a cure for sore throats and varicose ulcers.
Chilli is mildly antibacterial and is an excellent gargle for sore throats and laryngitis. In Victorian England, chilli peppers were prized for their warming properties in treating arthritis, chills, rheumatism, sprains and depression.
Chillies are loaded with vitamin A, a potent antioxidant and boost to the immune system. As the pods mature and darken, high quantities of vitamin C are gradually replaced with beta carotene and the capsaicin levels are at their highest. Due to these capsaicin levels, some believe that eating chillies may have an extra thermic affect, temporarily speeding up the metabolic rate, hence burning off calories at a faster rate. The alkaloids from the capsaicin stimulate the action of stomach and intestine improving the whole digestion process!

Jaki and I went for a TEN MILE RUN today. It took almost two hours, we went pretty slow. But we saw some snakes and made lots of good conversation. And burned some calories or whatever. Afterwards we drove to my grandma's house, where we were fed ice cream and bananas. (My grandma is totally awesome, btw.)
Then Lexi and I went to Grandma and Grandpa's to pick veggies, and stopped at a garage sale on the way and saw Mr. Carlson from my high school government class. Uncle Shawn, Zoe and Ava were over picking veggies too, they're adorable. Spent about two hours there before heading home to shower before babysitting.
Babysitting at 7:30 was not really babysitting so much as cooking. I just brought over a box and cooked chicken lo mein, it was pretty decent. Megan and I made chocolate chip cookies from scratch, and those were delicious (of course). A long day full of food and running.

It's the first time out for my new sakura box. There isn't as much food here as I'd planned - both because the beans I'd intended to add were moldy, and because the silicone cups I use for desserts only fit in the top tier, which is larger. I was pretty hungry by the time I got home.

Beer Cake
* 3/4 cup (1 1/2 sticks) butter, softened
* 3/4 cup superfine sugar
* 1 teaspoon vanilla extract
* 3 eggs
* 1 tablespoon milk
* 7 ounces ( 3/4 cup plus 2 tablespoons) dark beer, such as stout
* 1 teaspoon finely grated lemon zest
* 1/2 cup honey
* 2 2/3 cups cake flour
* 1 heaping teaspoon baking powder
* 1 teaspoon baking soda
* 1 teaspoon ground cinnamon
* Pinch grated nutmeg
* 1/2 cup chopped walnuts (optional)
1. Heat the oven to 350 degrees. Butter and flour a 9 1/2 -inch springform or cake pan.
2. Beat the butter, sugar and vanilla until creamy. Add the eggs one at a time, beating well after each, until fully incorporated. Beat in the milk, beer and lemon zest, then whisk in the honey. The batter will look separated at this point, but will come together when the dry ingredients are added.
3. Sift together the flour, baking powder, soda, cinnamon and nutmeg, then whisk into the wet ingredients.
4. Gently fold in the nuts and lightly spoon the batter into the pan. Bake 35 to 40 minutes if using a regular cake pan, or 45 to 50 minutes if using a springform, until dark golden and a skewer poked into the middle comes out clean. Leave in the pan to cool for 10 minutes before turning out.
Each serving: 363 calories; 5 grams protein; 50 grams carbohydrates; 1 gram fiber; 16 grams fat; 8 grams saturated fat; 83 mg. cholesterol; 167 mg. sodium.
If out of cake flour, substituting one cup all purpose flour minus 2 tablespoons flour plus 2 tablespoons cornstarch works well.
Vegan Lemon Tart Filling
Lemon Pie Filling (Fat Free)
Makes 8 servings in 9in pan I used an 8inch pan and had left over filling that I chose to freeze...hoping it can be used another time.

Here’s my favorite lemon pie recipe, adapted from The New Farm Vegetarian Cookbook. To make it truly fatfree, use one of the fatfree pie crusts in the archives. You can reduce the calorie content a lot by using stevia or an artificial sweetener for part (but not all) of the sugar.
1 1/2 cups sugar
1/2 cup + 1 Tbsp. cornstarch
1/4 tsp salt
1 1/4 cup water
1 cup fatfree soymilk
3/4 cup lemon juice
grated rind of 2 lemons (about 2 Tbsp.)
Combine sugar, cornstarch, and salt in saucepan. Stir in water and soymilk and bring to a boil over medium heat. Cook 3-4 minutes, stirring constantly. Remove from heat and slowly add the lemon juice and grated rind. Pour into a fatfree pie crust (or a graham cracker crust if you don’t need it to be completely fatfree). Chill.
8 servings: 195 calories per serving (without crust), 0 fat
(the tart is vegan - the cream isn't so much)
Graham Cracker Crumb Crust (not Fat Free...lol)
1.75 cups Honey Maid Graham Cracker Crumbs
1.4 cup sugar
5 Tbs butter/margarine
press into pie pan and chill or if you want it "crisper" as I like - bake at 350F for ~8min

Worth Way crossroads
Roughly where the level crossing used to be (the line was to the right of this building), Rowfant old station house, an unusually 'thin' building. This is a sort of halfway marker between Crawley and East Grinstead.
There's a very slight grade, which means it's much nicer coming from East Grinstead, but you do work up an appetite, and cycling to East Grinstead enables you to partake of some very fine restaurants and cafes. Good calorie burner.
I still think a rail connection between East Grinstead and Crawley would have been pretty useful, but despite this one being privately financed, this railroad was deleted in Beeching's national railways amalgamation project.

The kind owners of the Auberge let us use their bicycles for free. So we took half a day off to cycle around. It was a very peaceful and tranquil way to exercise off the calories we had been building up throughout the trip.

Eat Peaches, Be Healthy
Its Friday--for most people its the beginning of the weekend. All week the light, hopeful Friday flirts brazenly with Monday, taunting him to catch up. And on Friday Monday, at last, grasps Friday head on, and they go, arm-in-arm, to their flats, pubs, libraries (use your own imaginiation) in sheer bliss.
For me, though, Friday is just a newly feathered Tuesday.
I work on Thursday. On Friday. On Saturday. On Sunday. On Monday.
My week, my life spins in reverse from everyone elses. I have my weekend before my week begins. It's a lonely time, which should be spent with my head bearly peaking above a towering stack of GRE books. Usually, though, I pass it slowly, in a kind of fog, the only one out of work in a world overflowing with 9 to 5, Monday through Friday workers.
Photos seem a kind of release from the fog, from the dull thump of backward, isolated living. Photography mysteriously connects me with everyone else.

Lead Me Not Into Temptation... [163/365] - Eating healthy, Day 12 is a success, although it was far from easy. This morning the lady from the agency that recruited me for my job came into my office with a box of donuts. Suddenly, my carrots didn't look as yummy as I'd convinced myself that they were. I stared at the donuts... I even put my nose close enough to smell them, but I did NOT eat even one bite. Trust me, it wasn't easy getting through the work day knowing that box of deliciousness was in the office.
After work, it was off to Ryan's house for his graduation party, where I found myself faced with even more challenges. Cupcakes, ice cream cake, chips, soft drinks... oh the madness! With Ryan's encouragement I filled my plate with healthy snacks, and life went on. Only 9 more days of this crazy challenge!

A typical autumn and winter specialty in Italy, sold at street corners where chestnuts are roasted on an open fire in a metal pan and kept warm in a woollen blanket. Then eaten hot right away. Delicious!
During war-time in Italy, often lacking flour and bread, chestnuts cooked in different ways were an important staple food.

023/365 Gourmet French Toast
My scrumptious lunch. That’s right, not my breakfast. Although I *did* have it for breakfast as well, just not with the apple, and my camera was charging. So, yes, I did have a total of six pieces of French Toast today, which is probable not good for anyone, but it tasted fantastic and it filled me up. I cooked it differently today than I usually do. Most of the time I just add bucket of oil to the pan, but today decided to try it with a slab of melted butter. It worked brilliantly, tasted heaps nicer, was probably more fattening, and made the whole house smell like popcorn!

Fire Pano
Saw this grass fire, which I assume was deliberately lit as part of a burn-off, whilst driving home from my golf game early this afternoon.
It was quite a large fire, which can be seen when you compare the houses on the Left hand side of the shot(s).
Thought that it made for a nice shot given the nice sky above it. Two shot pano with original RAW files converted to TIFF's in Nikon Capture NX2 (to preserve the original colour, which ACR does not seem to be able to do with NEF[Nikon] files), then the TIFF's stitched together in Photoshop CS5, then localized tweaks to levels and sharpness carried out back in NX2.

Burn Off!
Went to the River City Rod Run in Post Falls over the weekend ~ watched the burn offs - saw this old rusted out clunker roll up to the line and thought.. no way! I have several other photos where the smoke is 10 times this much, but the jalopy was engulfed in all the smoke.
Out of the 200+ shots I took, this was my favorite..

The West Indian manatee or sea cow (Trichechus manatus) is commonly found in shallow coastal areas, but can also be found in shallow rivers, estuaries, and canals. Habitat
West Indian manatees are capable of withstanding large changes in salinity and move freely between freshwater and marine habitats. They can be found in shallow rivers, canals, saltwater bays, estuaries and coastal areas. Because of their extremely low metabolic rate and absence of a thick layer of insulating body fat, they are restricted to tropical and subtropical waters.
This species may inhabit clear or muddy waters. Because of their large size, manatees prefer water reaching at least 1 to 2 meters in depth. These animals are most commonly found travelling in waters 3 to 5 meters deep and waters over 6 meters are generally avoided.
If the water is deep enough and the currents are not too strong (under 5 kilometers per hour), manatees are capable of travelling large distances upstream on inland rivers. In St. John's river, manatees live up to 200 km away from the ocean. Manatees found in the Gulf of Mexico are rarely more than a kilometer from the mouth of a river.

The average body length of an adult West Indians manatee is approximately 3 meters but some individuals can reach a length of 4.5 meters including the tail. The average weight of these manatees ranges between 200 and 600 kg, however the largest individuals can weigh up to 1,500 kg. These upper figures are unusual in manatees and females generally reach greater lengths and weights than the males of the species. Newborns measure between 1.2 and 1.4 meters and weigh approximately 30 kg. The adults are grey or brown whereas newborns are darker, a coloration they lose at about one month.
Manatees are somewhat seal-shaped with forelimbs (flippers) adapted for a completely aquatic life and no hind limbs. Lungs extend the length of the animal's body, which is important in controlling position in the water column. Hair is distributed sparsely over the body and the surface layer of skin is continually sloughing off. This is believed to reduce the build-up of algae on their skin.

Reproduction
Although individuals of this species are largely solitary, mating herds form when a female is in estrus. These groups are made up of bulls pursuing the sexually receptive female. Courting bulls establish a dominance hierarchy for mating rights while the female attempts to avoid these males during most of her estrus cycle.
Females may attract up to 20 males, which pursue her for one week to one month.
Males reach full reproductive maturity between the ages of 9 and 10, but they are capable of mating as early as 2. Females are capable of reproduction at 4 to 5 years of age. Young females lack the skills necessary to raise calves and are less successful breeders. Most females breed successfully between the ages of 7 and 9. Gestation periods for West Indian manatees range from 12 to 14 months and calves are dependent on their mothers for about 2 years. One calf is produced at a time, however twins have been occasionally recorded. The inter-birth interval is 3 to 5 years, but this period may be shortened in the event of the early death of a calf. Calves nurse underwater from teats near the forelimbs. Calves are born with both molars and premolars and can begin consuming plants soon after birth, usually within the first 3 weeks.
The mother-young pair is the only stable, long-term association within the species. It has been suggested that the mother and her young can recognize each other after weaning and the association continues, to a certain extent, through the subadult years of the young. This long period of parental care might aid in the transfer of information about migration routes and other learned information.
