Thai cooking takes a lot of preparation because of the number of ingredients involved. But once they are ready, it's just a matter of tossing them into the wok one by one and it's done!

Phat Thai (Pad Thai)

handful of dried thin flat rice noodles
1 tbsp palm sugar
1 tbsp white sugar
1 tbsp tamarind water
2 tbsp fish sauce
1 small bunch Chinese chives
1 tsp oil
2 red shallots coarsely chopped
1 egg
50 gms firm bean curd, cut into 1 cm cubes and fried until just golden
1tbsp dried shrimp, rinsed and dried
1tbsp preserved radish
pinch chili powder
handful of mung bean sprouts
1 tbsp crushed roasted peanuts
1 lime wedge
extra tbsp chili powder

1. Soak noodles in boiling water until soft. Drain.
2. Simmer palm sugar, white sugar, tamarind water and fish sauce 1-2 mins until dissolved.
3. Chop most of the Chinese chives into 2 cm length, reserving a few, chopped into 5 cm length for garnish.
4. Heat oil in wok over medium heat and fry shallots until fragrant and beginning to color.
5. Crack in egg, turn down the heat and stir.
6. Mix in bean curd, dried shrimp and radish. Add noodles.
7. Turn up the heat and stir fry for about a minute, allowing the noodles to color a little.
8. Add the prepared sauce and the pinch of chili powder, the simmer for another minute, adding more oil if necessary.
9. Add most of the bean sprouts and Chinese chives, and cook for another 30 seconds until wilted.
10. Check seasonings - the noodles should taste sweet, sour and salty.
11. Pile on a plate and top with the reserved bean sprouts and Chinese chives.
12. Serve with crushed roasted peanuts, a lime wedge and chili powder on the side of the plate.

You gotta try this!!!!!

INGREDIENTS (SERVES 4 GENEROUSLY):
- 8 oz. rice noodles
- 1 tablespoon of soy oil (canola, peanut or any other oil works too!)
- 1 red pepper
- 1 green pepper
- 1 zucchini
- 2 tomatoes, diced
- Bean curd sheets (I used 2 sheets about the size of an 8.5”x11” paper), cut into strips
- 2 tablespoons of Soy sauce (more to taste)
- 2 tablespoons of Chili bean paste (more to taste)
- 3 or 4 green onions, cut diagonally

DIRECTIONS:
1. Boil a pot of water and cook the rice noodles for about 4 minutes, drain and set aside
2. Stir fry the bean curd strips over some oil for 10 minutes on high heat until they are browned on both sides, set aside
3. In a deep skillet or wok, stir fry the zucchini and peppers for about 3 minutes
4. Stir in tomatoes, soy sauce and chili bean paste. Stir fry until vegetables are tender, around 4 minutes. Add more soy sauce and/or chili bean paste to taste if you want it saltier or spicier
5. Add bean curd strips and green onions, bring dish down to a simmer, stir frequently for 3 minutes
6. Stir in cooked noodles until mixed well.
7. And as always, DEVOUR!

* Bean curd can be frozen or dried (depending on where you buy it). More info on bean curd on wiki. It’s a great substitute for scrambled eggs. Once you cook it, you’ll see what I mean!

Dear Diary,
*Sigh*, Nothing fun in school so I decided to pull out my magazines and look at some fashions. I then took out my papers and pencils and started doodling some clothes and after class, I showed them to my friends and all of them loved it. Except Cleo thought that they needed some gold and rejected them. I stayed up all night designing them and feel asleep the next day. it was hard work but it did pay off :P

EEEEEEEK, We're going to a fancy restaurant and before we left, Roxxi snucked a rat in Cleo's room and when we left the corner, Me, Roxxi, and Joelle heard a loud screech and Cleo immediately blamed it on Deuce. Of course he was really confused and we never even told her. When we were finished, Cleo wore this GIGANTIC dress and it was impossible for her to get in the car. So I pulled out my scissors out of my purse and started cutting it to something gorgeous for the night. Cleo yelled at me for cutting the dress and told that she hated it but when we arrived at the restaurant, She began twirling around in her dress. We got inside and we began to order. We began eating but Cleo kept yelling she wanted her money back since she disliked the food, It was embarrassing and when she went to sleep when we arrived home after 10, All 9 of us promise we would just drop her off to a mall when we go to a special event

It was Sunday morning, Me and Draculaura woke up and decided to go online. We were listening to music til everyone woke up. Deuce cooked us some eggs, bacon, and pancakes and they were delicious! Oh and we have this thing called "Go Sees" when I'm in a crisis and here's how it works, When we arrive to the mall, All 10 of us have to bring a sketch pad and we have about 2 hours to find a design and sketch it out, When 2 hours pass, We meet with each other and show the designs, But when one of us are late, We also congratulate them but Cleo thinks they should be punished XP

I love my friends but there's one thing that I'm a little jealous, and it's Deuce. He sometimes like to take Draculaura away. We were about to go out for a G.N.O. but he didn't tell me that him and Draculaura had plans and I had to take Kumi out with me. One day, I had enough, We were about to go window-shopping but Deuce told me that him and her were going to a restaurant and I immediataly blew up and told him that me and Draculaura were going out and it got into an argument, Draculaura heard everything and told us to what was wrong. We told her about it and she had an idea and she told us that maybe we can do a pattern like this, One day, I hang out with Draculaura and then next week, Deuce hangs with her. We were totally fine with it. But i still am a little jealous of Deuce though.

Dear Diary,
Eeeeeek, All of us went to a party club and this techno music came on and It was soooooooooooooooooo FUN!!!!!! Deuce and Draculaura were dancing the night out. Joelle, Phoebe, Carrie, Kumi, Roxxi, and I began dancing to the beat and we had a dancing battle. Me, Phoebe, and Carrie V.S. Joelle, Roxxi, and Kumi. We danced to the battle and in the end. Me, Phoebe, and Carrie won the battle. Cleo and Leora was flirting with alot of boys but we didn't bother to care. We never wanted to leave and the dance was electrified and crazy.

Deuce wanted to apologize about what happened with out fight and even bought me about 50% off coupon for me and Draculaura to go shopping and I accepted his apology and we became friends again. He promised that he would give me some time with Draculaura! OMG he is the coolest guy ever. But I'm still jealous about him. But I don't want to tell him out he'll stone me to death LOL

Dear Diary,
We had a barbecue last night and It was sooooo awesome! We did it at Roxxi and Phoebe's house and we stayed up all night. Deuce made some delicious burgers and they were like large size and It was good. Draculaura made some veggie burgers for us and she made them really good. Even Cleo enjoyed it! We had dessert. Roxxi and Phoebe's mother made a yummy Cookie and Cream cake and we wolfed it down. When we were done, We watched the stars and they were beautiful. It was like I was flying around the night in a long gorgeous dress. At 3.00 a.m. We all went home and I couldn't sleep. I decided to call Draculaura and we talked about the barbecue. I could never forget that night ^_^

Savory Butternut Squash Turnovers with Cinnamon-Harissa Creme Fraiche Recipe

Makes 24

Ingredients:
Filling:
4 cups butternut squash, peeled and cut into 1/2-inch cubes (about 1 small squash)
1 Tablespoon vegetable oil
1 small yellow onion, cut into small dice (about 1 cup)
1 1/2 teaspoons cumin, toasted and ground in coffee grinder
2 teaspoons coriander, toasted and ground in coffee grinder
1/4 teaspoon ground ginger
1/4 teaspoon cinnamon
3 Tablespoons honey
1/2 teaspoon lemon zest
2 Tablespoons lemon juice
1 Tablespoon red wine vinegar
1/4 cup almonds, toasted and roughly chopped
1 Tablespoon salt-packed capers, rinsed and coarsely chopped
2 Tablespoons currants
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Pastry:
1 pound frozen puff pastry, at room temperature
1 egg yolk, lightly beaten

Dipping Sauce:
1/4 cup creme fraiche
1/8 teaspoon cinnamon
1/2 teaspoon mild harissa paste
1/4 teaspoon kosher salt

Methods/Steps:
Preheat the oven to 400°F.

Make Filling: Place squash on a parchment-lined sheet pan and cook in the oven for 10 minutes. Set aside. Heat the oil in a saute pan over medium heat and saute onions until softened, about 5 minutes. Add the cumin, coriander, ginger, cinnamon, honey and roasted squash. Stir to combine. Add the lemon zest and juice, vinegar, almonds, capers and currants. Season the filling with the salt and pepper. Transfer to a bowl and let cool to room temperature.

Prepare Pastry: Roll out the pastry dough on a lightly floured surface until it is 1/8-inch thick. Cut the dough into twenty-four 3-inch rounds. Discard scrap dough (re-rolled puff pastry dough will become too tough). Place a heaping Tablespoon of filling on top of each round. Moisten half of the edge of the round with water, and then fold the dough over into half-moon shapes. Press around the edges with a fork to seal the pastry. Crack an egg yolk into a bowl and combine with 1 Tablespoon water. Mix well and brush the top of each pastry with the egg yolk mixture. Place the pastries on a parchment-lined sheet pan and bake until puffed and lightly golden brown, about 15 minutes.

Make Dipping Sauce: Mix together the creme fraiche, cinnamon, harissa paste and salt.

Serve: Serve warm turnovers with the creme fraiche dipping sauce.

Fresh and Crispy Chicken Wraps





Light and filling, this chicken wrap always leaves me satisfied without feeling bogged down. It is so worth it to roast your own chicken.

Serves 3

For the roasted chicken:
1 chicken breast, bone in, skin on
Oilve oil
Salt
Black Pepper

For the wraps:
3-8 inch flour tortillas
Ranch dressing
1 tomato, diced and seasoned with salt and pepper
1 green onion, sliced into thin rounds
1 red chile pepper, finely diced
3/4 cup monterey jack cheese, shredded
2 tablespoons butter or margarine

Roast the chicken:
Preheat the oven to 350 degrees.

Rinse the chicken breast in cold water and pat dry with paper towels. Place the chicken breast on a sheet pan and rub with olive oil. Sprinkle gernerously with salt and pepper. Roast for 35 to 40 minutes, until cooked through. When cool enough to handle, remove the meat from the bones, discard the skin. and shred the chicken meat.

Make the wraps:
Place 1/3 of the shredded chicken in a line down the center of each tortilla. Drizzle ranch dressing over chicken. Top with 1/3 of the tomatoes and then with 1/4-cup shredded cheese. Sprinkle 1/3 green onion and diced red chile pepper evenly over cheese. To soften the tortillas, microwave each wrap on high for 10 seconds. Roll up the tortillas.

Heat a large frying pan over medium heat. Spread butter or margarine on rolled wraps. Place wraps, seam side down in frying pan. Fry until golden brown, about 4 minutes per side.

Tips:
I usually roast the chicken breast several hours before, or even the day before I make this meal. That way the chicken has plenty of time to rest before I shred it.

The Third Annual "Classic Motorcycles at the Simeone Museum" opened on August 13th, featuring Italian great Ducati. Since the 1920s, Ducati has been known for performance, and 35 examples of some of the company's greatest models are on display, plus other fine italian machines.

The show runs through Thursday, September 8th. The bikes then move out to the Radnor Hunt Concours d'Elegance on Sunday, Sept. 11th.

The show opened with a “Kick Start” Party with special guest of honor Cook Neilson, legendary Ducati racer and journalist. Over 125 guests had the opportunity to hear Cook tell of his racing career, especially his Cinderella win at Daytona in 1977 on "Old Blue," his 750SS Ducati.

Perfect as a starter, with nice crusty bread; or served as part of a lunch or brunch with grilled meats or fish, or with griddled halloumi cheese (see my previous image).

Note ¦ In case you are wondering about the culinary term "brunoise" :: it means any vegetable cut in very tiny dice of 3 mm or less (ie: 1/8" inch or less) using a very sharp knife (ie: not a food processor!). It differs from the term "mirepoix", which refers to a more specific kind of brunoise (typically onion, carrot & celery) usually gently cooked in butter (although oil may be used), and used to flavour a wide variety of dishes including sauces, soups, and stews :-)

2 c Pearl Barley (prepared in water)
1/4c Chopped Mushrooms
1/4c Chopped Spinach
1/4 onion chopped
1 roma tomato
1.4 chopped broccoli
8 Medium Shrimp
1 T (or less) Olive Oil

prepare barley in slow cooker on Lo for 2-3 hours in 1:3 ratio (barley to water) - can also use chicken stock

in sauce pan heat olive oil over Medium heat, add onions, mushrooms until tender, add broccoli, spinach, tomato and shrimp, cover and let simmer until shrimp is cooked (pink)

add two cups of prepared barley to veggies and let simmer for 7-10minutes.

Serve as a main dish or hearty side.

Japanese turtle cuisine was the theme in today's lecture. Our instructor actually butchered and cooked up a live soft-shell snapping turtle. Poor thing.

This is the whole turtle after being butchered and cut for cooking. Almost the entire turtle is edible, with exception to the lungs, gall bladder, skeleton, skull and nails. The head still bites even after being beheaded for 20 minutes (the guy was opening and closing its mouth on my desk). These puppies have a really strong will to live, which is why they are thought of as being a very potent and healthy cuisine.

Gary and I were in the store over the weekend. As soon as I saw this I eed, "Oh, that will be perfect for my coconut oil!" I buy a gallon at a time and then transfer it to jars or reusable candle jars. But this...it is perfect! I learned about how good coconut oil is for us when I the THE MAKER"S DIET. I am so glad I found out it was good for us. I like to use it as my "butter" on pancakes and bread. I like my popcorn made with it. I like to cook with it! I like to use it on my skin right after a bath. It is wonderful stuff!

Two fresh turkeys, equal in weight and dignity. (Approx. 13.5 lbs each) I always get fresh, minimally processed birds. First of all, you don't have to wait over 9000 years for them to defrost. Second, they don't inject brines and other crap in them. And third, because they're never frozen, the meat is much more tender.

Some people call Tom Turkey the star of Thanksgiving, but he's only there to provide a few things: drumsticks (both Thanksgiving day and leftover), breast meat for sandwiches, and, most imprtantly, giblets, wing tips and pan drippings for gravy.

I can't see spending a fortune on a turkey poult, so the 79 cent a pound Butterball is perfect for me. And I'll cook it so it's nice and juicy.

CORNBREAD RECIPE

Dry Ingredients:
*1 & 1/2 cups yellow cornmeal
*1/2 cup whole wheat flour
*1/2 cup unbleached white flour
*4 tsp. sodium-free, aluminum-free baking powder
*1/4 tsp. baking soda
*1 Tbs. nutritional yeast
*3/4 tsp. iodized sea salt (or to taste)
*1/2 tsp. potassium salt (or to taste)
*1Tbs. sugar

Wet Ingredients:
*Approx. 3/4 cup of unsweetened applesauce
*Enough water to make 1.56 cups of total liquid ingredients when mixed with the applesauce

Directions:
Mix the dry ingredients and wet ingredients separately and them mix the wet and dry ingredients together. Bake at about 325 degrees for about 35 minutes, or until it tests done, in an 8x8 pan lined with parchment paper.

SUCCOTASH RECIPE
(A slow cooker recipe that takes about 5 hours, or a little longer, on the high setting.)

The ingredients in order added…..

Place in a 6-qt, slow cooker and turn it on high…..
*1 (29 ounce) can of concentrated crushed tomatoes -- salt-free
*1 (14.5 ounce) can of diced tomatoes -- either salt-free or not salt-free
*3 cups frozen corn kernels (thawed)
*3 cups frozen green lima beans (thawed)
*2 cups water

After the above gets almost to the boiling point, stir in…..
*2 bay leaves
*1 & 1/2 Tbs. fresh thyme leaves
*1/2 Tbs. garlic powder
*1/2 tsp. liquid smoke
*1/2 tsp. hot sauce or a pinch of cayenne pepper
*2 cups diced onions -- micro-waved until almost totally cooked and still hot
*1 cup diced celery -- micro-waved until almost totally cooked and still hot
*1 small sweet red bell pepper (raw) -- diced -- (about a 1/3 cup -- but you can use much more than this amount, if you want)
*2 cups chopped fresh collard greens (raw)

After the succotash comes to a boil, stir it and then let it simmer until it is almost done. When it is almost done, stir in and then let simmer until done…..
*1/2 tsp. iodized sea salt (or more to taste)
*1/2 tsp. potassium salt (or more to taste)

The succotash is served in a baked pumpkin bowl.

Capri Lemon Pasta with Peas, Lima Beans and Asparagus. Adapted from recipe in The Modern Vegetarian: Food Adventures for the Contemporary Palate by Maria Elia. For four servings the recipe called for the juice and zest of two lemons.

Don't you just hate when it says that? Large lemons, small lemons? I want to know how many ounces of lemon juice, how many teaspoons of zest.

All of us agreed the lemon flavor was too strong. But otherwise it was great. I couldn't find the fava beans, fresh or frozen, at Whole Foods or the Fresh Market, so I used lima beans.

Served with spinach-avocado salad with carmelized pecans, currants and dried cranberries.

To carmelize the pecans:
Melt a tablespoon of butter in a small skillet. Add half a cup of pecan halves and a tablespoon of brown sugar. Stir and cook two or three minutes till the pecans are carmelized. I found this recipe on the internet. We liked the results, but a lot of the brown sugar and butter were not incorporated. I think maybe the heat was too low. I will try this again.

Blenheim ginger ale is a local favorite, produced in Marlboro County, South Carolina. Really good!

This is my sister. She is the shining beacon in my life. She hates this image, but it makes me smile. She's the kitchen D-I-V-A. Here, she's mucking about in the my kitchen while visiting me in NYC. When she was a baby, I remember thinking she was a lot of fun to play with, like my own personal, real-life doll. Little did we know she would remain so.

Just look at this daft pose! But, I got her to do it & better yet, I captured it for the world to see. For, there's a little kid inside all of us. After all, who doesn't love to play & to laugh? As we grow older & more complicated, we often forget to take time to enjoy the life we're so busy living.

Come to think about it, not much has changed, because, growing up, we shared a lot of kitchen shennenagins. And the first one I remember, happened in NY, so this image is special to me.

It was in Syracuse, NY & our Mum had this hanging baby swing attached to the door frame in our kitchen. She utilized it as a hands-free apparatus, whilst cooking by putting my six - month - old sister inside. This way, my sister would be in the kitchen, but the swing enabled our Mum to actually cook, unimpeded. In turn, I was left to my own devices.

My goodness, did my sister love that swing! It had heavy adjustable elastic strands, allowing the child sitting within to bounce up-and-down, whilst simultaneously building leg strength. Oh how it made her giggle and smile, in turn me (and anyone within earshot). Her smile & laugh were infectious & remain so, today.

I was three & only now realize quite a mischievous toddler, because whenever our Mum would exit stage left, I siezed the opportunity to snap that swing (with baby inside) as far back as a three-year-old could, and let loose. In it, she was like a human sling-shot. Now, any parent out there - including ours - is most likely gasping in horror, at this thought.

But not Kelly. Even as an infant she was fearless. Or, perhaps she just instinctively knew her big sister was there as her personal protector & would never hurt her? For whatever reason, rather than scream and cry, she would just laugh harder - ecstatic & elated by the motion and attention.

This was the first time I consciously remember realizing one's actions had direct causal reactions on & could elicit a response, in others. It was profound.

This little infant sister was the first person in my life that I recall, to teach me about pure joy. In this particular instance - fortunately - my actions caused no harm. I've since found out from a mate whose just had her second child, these swings have gone out of production, due to their being considered "dangerous". Suppose I can see why, but she sure loved the thing. I think I might try & design a new version - one considered more "safe", for this overprotective society in which we now live.

For, we can delay experiences, but sooner or later, they're going to happen. The good, the bad and the ugly. Sometimes, our actions cause joy. Sometimes, they cause pain, sadness, hurt, or anger. I am so grateful for sharing all of these firsts, with my sister. For, they were lessons which helped to prepared me for life's journey.

Without her, I would be lost. Without her, the ups, the downs, the sadness and the joys we experienced together would never have been. I am truly blessed, for I am a better person because of and for, her. I love you little sister - happy new year!

My train was delayed between NYC and Kingston RI, which meant Andy picked me up late - which meant that we were terribly late for the start of the Newport Chowder Cook-Off... The event was scheduled to start at 11 am, but we arrived in town about 11:20. Andy's sharp eye spotted someone pulling out of a parking space, about 1 block from the event's entrance. I think this is the EXACT same spot we parked in 2 years ago.

And look at that parallel parking job! He could NOT be any closer to the curb. He should really give lessons in parking, he's got mad skills.

A special sectional wooden mould was traditionally used for cooking this rich festive dish. Don’t get upset if you have no such a mold – just use whatever mold you can get or an ordinary colander. Paskha must be made of curds of the highest quality; home-made curd is best of all. It is rather an expensive and time-taking dish, yet in the face of the great holiday of Pascha a housewife would cope with any difficulties. Modern cooks might as well use a mixer to whisk curd thoroughly to make it airy and delicate in a simpler way.

Unboiled Paskha

Ingredients: 2,5 kg curd, 200g butter, 200-300 g granulated sugar, 250 g sour cream, salt to taste, candied fruit, raisins and nuts (optional).

Instructions: Thoroughly rub curd through a sieve twice. Mash butter with sugar till the mass is white; add sour cream to it and go on mashing it till the granules of sugar completely disappear. Mix the creamy stuff with curd, add salt, candied fruit, nuts and raisins if you have decided to use them. Fill a mould with the paste, put it under a small press and leave in a fridge for 12 hours.

The tradition of making calzone at Easter time was handed down by my paternal grandmother and my mother, my sister and I keep it going every year. A calzone resembles a stuffed pizza or a big pie but it tastes so much better!

  • There have been a number of designs for barbecues that use solar power as a means of cooking food. The device usually involves the use of a curved mirror acting as a parabolic reflector, which focuses the rays of the sun on to a point where the food is to be heated.

  • A solar oven or solar cooker is a device which uses sunlight as its energy source. Because they use no fuel and they cost nothing to run, humanitarian organizations are promoting their use worldwide to help slow deforestation and desertification, caused by using wood as fuel for cooking.

I saw many solar dishes in Nepal, mostly in remote areas, outside the reach of electricity which is generally unreliable. The only time I looked inside the cooking-pot, the water was boiling at high intensity.
-- These solar cookers help reduce the use of wood fuel, which helps save forests, reduces air pollution that can lead to respiratory problems and reduces carbon emissions that ultimately harm the planet we live on.

This is a simple Solar Cookit that I made for midday cooking. I used double thickness cardboard and reinforced the seams edges and junctures with reflective duct tape.

Although it does not fold down, it can be folded in half or thirds for portability. We take this to the beach and parks regularly as part of our solar cooking ensamble.

This thin, spiral sausage in the middle is the kind my grandmother always used to serve us when she was alive. People often assume that having one Italian grandmother and one Jewish one, I must have been around great cooks and food my whole life. I always joke that my Italian grandma only knew how to make about four things (though she made them well!), and my Jewish grandmother mostly makes things that come from a box. ;)
Be that as it may, Nonie would cook this wonderful sausage for us on Christmas and Easter, and probably any other Sunday dinner, along with ziti in tomato sauce (known as gravy to Italian-Americans...not sure why other than maybe because it was cooked with meat in it) and her delicious homemade meatballs. We'd also have a salad, somewhat for appearance's sake, since it generally contained iceberg lettuce and carrots peeled to within an inch of their lives (basically, all the sweet, good part was peeled away, with the core part left). So she wasn't a vegetable person- the rest made up for it. :) We'd also have local semolina bread (which would be my breakfast if I stayed over with her, along with a little bit of salted butter). I think she usually had some Italian hors d'oeuvres out for my parents, like roasted peppers, though I didn't eat that stuff at the time. Such wonderful memories...we still talk about the fact that my dad was the first person she ever met who would actually EAT the onion she used to cook in the gravy for flavor...she may have also made bracciole in there... Once, Dad reached to begin eating before everything was ready, and Nonie smacked him on the hand (quite possibly with a wooden spoon)! In wounded pride, he looked to my mom for sympathy- must have been a tough call for her. We laugh about it now.



My battery was dying, which means that the display was involuntarily off, and I didn't get to see any of these pics til after I had taken them! The exposure seems a little strange too, but not sure.

New year's day was spent at Chad's townhouse, where we basically had an all day hang out & eat fest.

Much of the "eat" portion was handled by Micki, who just kept making food all day. Salad, some thing with cheese and tomatoes, cake. She was like an old Jewish mother. Or an Italian mother.

She was like some ethnic mother. Only young. And not a mother. And far more attractive.

Next she'll be trying to set me up with a nice Jewish girl.

An eastern european classic that's good for a cold day. Here's my recipe:

Stuffed Cabbage

1 head cabbage
1 lb ground beef
? cup white rice (not quick-cook) uncooked
? large onion or 1 small onion
3 cloves garlic, minced fine
5 tBSP olive oil
Two 26.5 containers strained tomatoes OR equivalent amnt tomato sauce
1 TBSP salt plus more to taste
1 tsp white pepper
1 tsp black pepper
3 TBSP garlic powder plus more to taste
3 TBSP tsp onion power plus more to taste
2 TBSP Worchestershire sauce
? cup red wine vinegar
3/8 cup sugar
Splash white wine (2-3 Tbsp)


Blanch cabbage for 7 minutes in boiling water, remove to cool and drain.

Make sauce: pour strained tomatoes or tomato sauce in saucepan. Add white pepper, 1.5 TBSP garlic powder, 1.5 TBSP garlic powder, vinegar and sugar. Bring to boil. Taste: add more of spices, sugar or vinegar to taste: You want a sweet/sour tangyness to the sauce. Simmer 10 minutes and then reserve.

Prepare filling: chop onion. In a dutch oven or large pan with lid, saute onion in 2 TBSP of olive oil until soft (5 min). Add garlic, saute 1 minute. Add wine and deglaze pan – scrape up bits stuck to bottom. Remove ? of onion, garlic and wine mixture to mixing bowl, leave rest in pan. Add ground beef to mixing bowl, add salt, black pepper, remaining 1.5 TBSP of garlic powder and onion powder, and worchestershire sauce. Add uncooked rice, ? cup of the reserved sauce, and mix thoroughly with hands.

Unpeel cabbage, cut the “vein” or hard part in the middle of each leaf out. Add approx 1/8 to ? cup filling to leaf and roll up, aiming to completely cover filling and roll up like a burrito. You can be messy – just make sure they are rolled up fairly tight. You will want to cover the bottom of your dutch oven with the rolls – so freeze any extra filling. Avoid middle leaves which are small and not pliable.

Add 3 tbsp olive oil to dutch oven (on top of the ground beef/onion mix you've left in the dutch over), then carefully pack in the rolled cabbage into the dutch oven. Pour enough sauce over the rolls to cover and then a little more. Cover and bring to boil, then simmer for approximately 45 minutes, remove cover and simmer 5 minutes more. Do not stir during this process. Remove from heat, let rest 5 minutes, and serve with plenty of sauce. Good with mashed potatoes.

Grilled Swordfish
Grilled swordfish poached in olive oil and drizzled with balsamic vinegar. Accompanied with roasted tomatoes and grilled red onions. ($25)

This was a special for the evening. It is not on the menu.

Notes: I was a little confused on the cooking technique for this fish. Our server had described it to us as "braised." I think he meant poached in olive oil - as that is how this fish tasted. Normally, I don't like swordfish because it's too meaty and dense (and I didn't order this one either). However, this cut tasted like it was poached in olive oil - it was tender, and silky. But, the grill marks are a mystery to me... perhaps they poached it first and then quickly seared it on the grille for the marks... not sure.

The first bite was a tad fish - but the rest of the cut, save the part near the skin was very good. The swordfish tasted very fresh, which may explain the pricetag.
