Cooking Lecture: Japanese - ''Suppon'' Soft-shell Turtle, Cut and Quartered for Cooking
Japanese turtle cuisine was the theme in today's lecture. Our instructor actually butchered and cooked up a live soft-shell snapping turtle. Poor thing.
This is the whole turtle after being butchered and cut for cooking. Almost the entire turtle is edible, with exception to the lungs, gall bladder, skeleton, skull and nails. The head still bites even after being beheaded for 20 minutes (the guy was opening and closing its mouth on my desk). These puppies have a really strong will to live, which is why they are thought of as being a very potent and healthy cuisine.
kabocha squash cooks
- Taken at 8:32 PM on January 11, 2007 - kabocha squash cooks for 20-30mins in a half can of coconut milk + weak chicken broth, whole cilantro bunch, and since i didn't have the red curry i wanted, i used a bit of thai green curry and a wee smidgen of medium hot japanese curry (golden curry brand).
