Cupcakes for a hen's night. They were a hit.

Cappuccino cupcake recipe:
In a saucepan heat 250g of butter, 1 tbsp of instant coffee and 1 1/2c of milk gently until the butter is melted.

Allow to cool.

In a large bowl whisk 6 eggs until thick and creamy. Add 2c of sugar gradually and then stir in half the butter mixture and 3c of self-raising flour until smooth.

Pour into cupcake pattys and bake until firm to the touch.

I topped them with butter cream icing (just mix up icing sugar and butter) then sprinkled on chocolate hail. The white chocolate penises were also made by me, just using white chocolate melts, poured into penis shaped ice cube trays and then cooled.

My uncle, who lives in the house above mine, has always owned hens. Since I was a little kid, I used to love them. They give us eggs, at Christmas the oldest is killed and cooked (poor thing!), but they also eat almost all of our organic waste. They're also funny, especially when the cock (at the moment we don't have one, by the way) sings in the middle of the night when is summer and you have all your windows open because it's too hot, really funny!
I know it isn't really in my home, but I hadn't any idea (and no time to think about it!)

Oookay, I got tagged twice, so here I go with 20 facts about me:

1.99,9 % of these facts will be likely about something of/about/in Scandinavia. I am pretty sure it will, because I love the Northern countries of Europe.

2.Especially Finland and Norway.

3.Helsinki is the most beautiful capital in my opinion.

4.I want Finnish and Norwegian classes at my school. This would be great! But unfortunately it’s quite improbably I’ve to admit.

5.Instead of Finnish and Norwegian I’ve to learn French at school, that’s horrible. I simply don’t like that language.

6.I want to visit the North Cape and the archipelago Lofoten in Norway. Have you ever been there?

7.My summer break is in three days over and I am totally depressed of this fact.

8.I did nothing very special in summer, but it was nevertheless an amazing one.

9.But actually I like winter more, because I love snow so much.

10.I am a bit afraid of failing my A-levels, so I should focus only on school, this last year. I am soooo looking forward to finishing school.

11.Sometimes I am cooking something scandinavian and my family always pretend they absolutely love those meals, but sometimes they are lieing I guess.

Wine reduction for the sauce to be made later on:

1 small carrot peeled and chopped fine (about 2 tablespoons)
1 small shallot , minced (about 2 tablespoons )
2 medium white mushroom chopped fine (about 3 tablespoons)
1 bay leaf
1.5 cup red wine

Heat carrot, shallot, mushrooms, bay leaf, parsley, and wine in 12-inch skillet over low heat; cook, without simmering (liquid should be steaming but not bubbling) until entire mixture reduces to 1 cup, 15 to 20 minutes. Strain through fine-mesh strainer and return liquid (about ? cup) to clean skillet. Continue to cook over low heat, without simmering, until liquid is reduced to 2 tablespoons. Transfer reduction to bowl for using in the pan sauce later on.

Delicious dinner tonight! The greens are a staple in our house. This is my favorite way to prepare them.

Southern Style Greens Recipe
Ingredients for 4 people:
(with the portion size shown - we eat a LOT of vegetables!)
2 bunches of greens (kale, chard, collards, they're all good)
2-4 strips of bacon (depending on thickness)
1 onion (chopped)
3-4 garlic cloves
1/2 cup chicken stock (optional)
salt and pepper

In your biggest pan, cook up the bacon nice and crispy and drain some of the fat. Add onions and garlic, cooking them until soft. Add greens and chicken stock (it adds a nice flavor, but it will taste good without it too) and cook for another 10-15 minutes over medium heat. Season with salt and pepper.

So good!

Because I use very little oil, I 'steamfry' firm stem veggies like asparagus with a drop of Fiji Water and put the lid on. Keeps veggies still crunchy and bright. I love sharing tips on stir fry techniques using my lightweight, cast iron wok. Fun and energetic students in my Wok Star cooking class last night at SHIN, midtown Miami.

Moroccan chicken stew with preserved lemons





1 kg chicken (I used breast, but other parts can be used as well)

Olive oil

1-2 large bulbs of fennel


2 onions, peeled and roughly chopped


A small bunch of fresh coriander


4 cloves of garlic, peeled
and sliced


2-3 small preserved lemons, deseeded and chopped


80g black and green olives, stoned

A good pinch of saffron


500ml hot organic chicken stock



For the spice rub

1 heaped teaspoon coriander seeds, bashed up

1 level teaspoon ground cumin


1 heaped teaspoon ground ginger

2 tablespoons olive oil


Sea salt and freshly ground black pepper


Mix all the spice rub ingredients together in a small bowl. Put your chicken pieces into a large bowl, massage them with the spice rub, then cover with clingfilm, and put into the fridge to marinate for a couple of hours or, even better, overnight. When you’re ready to cook, heat a generous lug of olive oil in a tagine or casserole-type
pan, and fry the chicken pieces over a medium to high heat,
skin side down first, for about
5 to 10 minutes until golden brown.

While your chicken fries, chop each fennel bulb into 8 wedges, and add these to the pan along with the onions, coriander stalks
and garlic. Stir well and fry for a couple more minutes, then mix in the preserved lemons, olives and saffron. Pour in the hot stock, give everything a good stir, then cover with a lid or foil, and simmer on a low heat for 1? hours, or until the meat starts to fall away from the bone. Halfway through, have a check and give it a good stir. Keep an eye on it and add a splash of water if it looks dry. When the time’s up and your chicken looks perfect, stir gently. If it’s still a bit liquidy, leave it to blip away with the lid off until thickened slightly.

Have a taste, season with a pinch of salt and pepper if you think it needs it, then sprinkle with the coriander leaves. Serve with a large bowl of lightly seasoned
steaming couscous.

Preparation Time: 33 minutes minutes
Yield: 4 servings (serving size: 1 1/2 cups)

1 (16-ounce) package vacuum-packed gnocchi (such as Vigo)
2 teaspoons olive oil, divided
6 ounces basil, pine nut, and chicken sausage (such as Gerhard's), casing removed and sliced
1 cup thinly sliced fennel
1 cup thinly sliced red bell pepper
1 cup thinly sliced onion
1/2 cup (2 ounces) freshly grated Asiago cheese
1/8 teaspoon freshly ground black pepper
2 tablespoons chopped fresh flat-leaf parsley

1. Cook the gnocchi according to package directions, omitting salt and fat. Drain the gnocchi in a colander over a bowl, reserving 1/4 cup cooking liquid. Keep gnocchi warm.

2. Heat 1 teaspoon olive oil in large nonstick skillet over medium-high heat. Add sausage to pan; saute 3 minutes or until lightly browned, stirring frequently. Remove sausage from skillet using a slotted spoon.

3. Heat remaining 1 teaspoon oil in pan. Add fennel, bell pepper, and onion to pan; cook 13 minutes or until tender, stirring occasionally. Add sausage, gnocchi, cheese, black pepper, and reserved cooking liquid to pan; cook 1 minute or until cheese melts, stirring constantly. Remove from heat; stir in parsley.

Private Colin Taylor from River Herbert, Nova Scotia, prepares pizza to feed to the Canadian troops in Kabul, Afghanistan.
Thought to be the longest and largest pizza delivery in Canadian history, Boston Pizza has delivered the ingredients for 2200 pizzas to approximately 1930 Canadian troops serving in Afghanistan. The 12-inch pizzas are prepared by camp cooks according to Boston Pizza's recipes and will be served on Remembrance Day.
Op ATHENA is Canada's contribution to the International Security Assistance Force (ISAF), the United Nations-authorized mission in Kabul, Afghanistan. Operation ATHENA began in August 2003 and is currently scheduled to end late summer 2004. The mission of ISAF is to maintain security in Kabul and its surrounding areas so the Afghan Transitional Authority and UN agencies can begin rebuilding the country. At this time, ISAF comprises 5,500 troops from 31 different nations.

Il pourrait bien s’agir de la plus importante livraison de pizzas dans l’histoire du Canada. En effet, Boston Pizza a fourni les ingredients necessaires a la preparation de 2 200 pizzas, qui seront offertes aux quelques 1 930 militaires canadiens en Afghanistan. Les cuisiniers du camp preparent des pizzas de 12 pouces en suivant les recettes de Boston Pizza et ils les serviront aux soldats a l’occasion du jour du Souvenir.
L'operation Athena est la participation canadienne a la Force internationale d'assistance a la securite (FIAS), mission autorisee de l'ONU a Kaboul, en Afghanistan. Cette operation a debute en aout 2003 et, selon les previsions actuelles, devrait se terminer a la fin de l’ete 2004. Tarte aux courgettes sans pate Weight Watchers
Pour 4 personnes / Preparation : 10 mn / Cuisson : 30 mn
2,5 points par personne

Ce qu'il vous faut :
2 courgettes
1/2 cc de muscade
20 g de semoule tres fine
2 petits ?ufs
1 petit pot de creme fraiche epaisse a 4% (10 cl)
30 g de parmesan rape
Sel, Poivre

Prechauffer le four a 200 °C (th.6.).
Couper les courgettes en petits des. Mettre 25 centilitres d'eau a bouillir avec du sel, du poivre et la muscade. Verser les courgettes dans la casserole et laisser bouillir 2 minutes. Verser ensuite la semoule en pluie. Cuire une minute en remuant. Retirer du feu

Dans un bol, battre les ?ufs, la creme et le parmesan. Saler, poivrer. Verser sur la preparation courgettes et semoule. Bien melanger le tout. Verser dans un moule a quiche antiadhesif et cuire au four 30 minutes.

Cette tarte se deguste chaude ou froide.

Reciepe for 4 people / Time of preparation : 10 mn / Time of cooking : 30 mn
2,5 points per serving

What you need :
2 zucchinis
1/2 ts of nutmeg
20 g of finely semolina (0.7 oz)
2 small eggs
10 cl of 4% fat cream (0.42 cup)
30 g of grated Parmesan (1.05 oz)
Salt and pepper

Preheat the oven at 200°C (392°F).
Slice the zucchinis in small dices. Put 25 cl of water (1.06 cup) in a pan and make it boil with salt, pepper and the nutmeg. Pour the zucchinis in the pan and let it boil for 2 minutes. Then pour the semonlina. Cook and stir during one minute. Take the pan away from the fire.

In a bowl, mix the eggs, the cream and the parmesan together. Add salt and pepper. Pour the mix on the zucchinis and semolina. Mix everything well. Pour the result in a non-stick pie dish. Put it in the oven and let it bake for 30 minutes.

You can eat this pie hot or cold.

My friend Eddie and I conjured up a meal for our friend Fan for his 23rd birthday that held no reservations. Listed below is the menu (cook in parentheses):

Appetizer:
- Olive baguette with aged direct-from-the-farm Wisconsin white cheddar (Eddie and myself)
- Beer pairing: Red Hook brewery Late Harvest Autumn ale, a 5.9% ABV American Red/ Amber ale with fall foliage and apricot aromas and a smoky, nutty, buttery taste.

Main course (pictured):
- Aged Kobe-style New York strip steak, cooked rare with olive oil, cracked peppercorns and herbs (Eddie)
- Asparagus risotto with white wine, shiitake mushrooms and parmesan cheese (myself)
- Mixed greens with cranberries, walnuts, and red onions in a balsamic vinaigrette (myself)
- Sunflower-seeded bun (Eddie)
- Beer pairing: DeuS (Brut des Flandres), an 11.5% ABV Biere de Champagne that's rare to find and expensive to acquire. The aroma bequeaths sweet notes of pears, coriander, cinnamon, and saffron, and the taste is somewhat phenolic with a Ya pear juiciness and hints of cardamom, lilac/lavender, and peppercorns.

Dessert:
- Buttered sourdough English muffin with cinnamon, topped with Courvoisier-soaked blackberries, apples, and white peaches, and whipped cream. (Eddie)

Needless to say, it was delicious.

Recipe for bento / lunch egg cup

Fry onions, peppers, courgette and peas together with olive oil and salt over a gentle heat until softened.
Add mixture to beaten eggs, then pour into a silicone cup, which has been greased with olive oil. Sprinkle with dried thyme and bake on a baking sheet for 10 mins at 180c. Check the cup has cooked by squeezing it - if it's firm, it's cooked. Allow to cool at room temperature, which will help the egg to set.

Vegan Black Beans with Onions and Green Peppers on Rice, Fried Plantains, and Salad.

INGREDIENTS:
-4 CUPS of rice.
-1 SMALL BAG of dried black beans.
-1 LARGE onion.
-1 LARGE green pepper.
-2 MEDIUM/LARGE green plantains.
-2 WHOLE garlic clove.
-Olive Oil
-Salt, garlic powder, onion powder.
-Lettuce, tomato, avocado, green olives, whatever salad stuff. (Optional.)

STEPS: Beans
1. Pour the bag of dried beans into an empty pan and pick out any rocks or foreign matter.
2. Black beans, like all dried beans, need to be soaked before being cooked. (The hydration helps to reduce the cooking time.) Since they're small, 2 - 4 hours soaking in cold water should do the trick. Drain and move to step 4 OR if you have less time, skip step 2 and go to step 3.
3. If you don't have a lot of time, boil the beans in water for 1 - 3 minutes, turn off heat, cover the pot, and let them sit for one hour. Drain and follow the rest of the recipe. (The only problem with boiling them instead of soaking them is that they loose a considerable amount of nutrients.)
4. While cooking, add 1 whole diced onion, 1 whole diced green pepper, a few pieces of crushed garlic, and salt to taste along with a bit of garlic powder and onion powder.
5. To cook the beans, drain the soaking water and add cold water, 1 part beans to 2 or 3 parts cold water. Bring to a boil, then reduce heat to a very slow simmer. Simmer for 2 hours.
STEPS: Rice
1. When your beans are about half an hour away from being done, start cooking your rice as the directions say. (Substitute butter for olive oil if rice package calls for butter.)
STEPS: Fried Green Plantains (Tostones)
1. Cut the ends of each plantain off. Cut through the peel horizontally, the entire length of the plantain. Loosen the peel along the cut and remove by hand.
2. Cut the peeled plantain into slices, about 2" to 2 1/2" wide.
3. Fill a large skillet a third of the way full with olive oil and heat over medium-high heat to about 300 degrees F. Once the oil is hot, fry the plantain slices for about 3 to 5 minutes, turning once, just long enough to make them soft.
4. Remove the plantains and drain on paper towels. Use a plantain press (or a brown paper bag folded over) to smash the plantains to about half their thickness, like smashing them into patties.
5. Bring the oil back to a higher temperature (about 375 degrees F.) Fry again, turning occasionally, until golden brown on both sides.
6. Remove from pan. Use paper towels to absorb excess oil.
7. Crush some fresh garlic and mix into a small bowl of a little olive oil. Baste into plantains. Add salt to taste.
STEPS: Salad (Optional)
1. Mix lettuce, tomatoes, cut avocado, green olives, or whatever you want in your salad.
2. Drizzle olive oil and vinegar over salad.

One of my many spontaneous, random, healthy dishes.

Get a pot. Pour an half-inch of olive oil at the bottom. Cold pressed, virgin oil. Thrown into that chooped red-oignon and some shredded garlic, as well as some slices of squash. Warm that up. Nice and slow. When they start getting softy, add mushrooms. Some sesam seed. Let the garlic take over the mix by covering the pot. Must cook slowly under relative low fire (never get the olive oil to "fry"). At the end, put some fig puree (at least 1 fig per person). The taste won't kick in while tasting the dish, but it would give an hardly known, still detectable, hint of sweeteness and sugar-taste. Try not to fry or stick the puree on the sides of the pot. Try to make it melt and propagate.

Meanwhile, get some turkey. Chop it in bands, say like a thumb. A woman's thumb.
A light, smooth, round marinade: BBQ. Garlic. Honey. Whatever.

Grill, roast, or fry that on high temperature. Has to get burned a bit to awake the flavour, as turkey is kinda tasteless.

Try to synchronize your vegetables and your meat. When the meat is almost done, pour the vegetables in the pan or on the grillpan with the meat. Turn the fire down, let that warm up alltogether. With the speed of a NINJA and a Katana, chop a bell pepper. And a tomato, to get the whole stuff JUICY. Pour it with the rest, mix a bit. Get the whole stuff into a bowl, a cup or something that aint flat. You don't wont to drink olive oil, do you? Start eating at once, the oil is already down the bowl, and it can get cold quickly.

Ginger beer was a great sidekick for this meal, though a bit strong in taste.

Here Freddy preps for a quick match, en route to Challway (elev 2920m) following the summit charge and an unbelievably miserably cold and wet lunch up at Huayracmachay, which on our day was so freaky, foggy and wet that it reminded me of some desolate hillside in Wales, or an Irish bog. At one point I was literally walking down an entire mountainside of running water, inch or two deep. Yay for waterproof hi-tecs. More on Huayracmachay to come, including photos of a sort of after-dinner ritual I like to call "blind the hell out of the donkeys and horses so we can strap all these cooking supplies on them." Fun game.

Following the summit and lunch, we began descending 1700meters straight down through tropical high jungle. Tons of bamboo and running water. The sun came out and we were dry in no time. And then hot. Coffee plantations and potato farms choked both sides of the jungle path. Occasionally we'd see some guy up in a tree, chopping fruit. I was loving life, nice and dry. I began to get...comfortable, when I suddenly felt the call of something pressing. Something important. There is a path that I know of which I will never, ever lead you down. ?Como se dice, "dropped a deuce in the jungle" en espanol? Como se dice, "growler" !? Don't answer.

The above futbol match was a very fun, lengthy and necessary stop during a nine-hour day. The game was eventually called due to rain (and pigs). Still trying to figure out what sort of fruit we got ourselves into here, but I know that I've never seen it in the states and it apparently is not actively imported. Don't miss the two cerditos to the right of the panel!

I hope you enjoyed your Sunday afternoon. I have seriously developed addiction issues with NFL. I have the NFL ticket so I get to sit on my butt all Sunday afternoon and just flip from game to game. I even cooked a quick dinner just to eat it in bed while watching my poor team the Seahawks lose today. Now I get to sit here for another few hours as I watch the premiers of Dexter and Californication. So maybe I will have to hit the gym tomorrow ya think!! This is my sweet sweet puppy Deacon in "his" chair.
