Domovina - to je sve

Poslije rata djeda Jurko i unuk Grega ostali su sami. Dok je djeda popravljao kucu, Grega je napasao kravu i od ilovace pravio kuce.
Tada je jedne nedjelje dosao Grega djedi i rekao:
- E sad mozes doci i pogledati. Ja sam sa svojim gotov.
- Divno - odvratio je djeda iznenaden - Ko bi to pomislio da ces sve tako brzo zavrsiti! Ja tek pilim, a gdje je jos sve ostalo!
Odmah je posao sa Gregom da gleda novi dom koji je tako brzo niknuo ni iz cega.
Isli su stazom navise prema sumi. Na livadi je pasla krava.
Djeda i unuk stali su najzad tik uz rub sume; pred njima je bilo veliko naselje od ilovace. Grega je drzao ruke na ledima i sav bio ozaren od ponosa, dok je djeda sa strane gledao to ljepo naselje sto se kupalo na suncu, lezeci na ivici smrekove sume, u kojoj je tako lijepo sumjelo.
- To je nas dom - rekao je Grega i pokazao materiju od crvene ilovace. - Zvat ce se "Na brijegu" jer stoji na uzvisici. Samo pogledaj, djedice, kako se lijepo vidi odavde. Pogledaj u gore, pa u dolinu. Kako se vide voda, drum i sela. To je sada nase. Stanovat cemo u ovoj prvoj kuci - rekao je i pokazao na prvu naslagu ilovace, lijepo izrezanu na uglove, pokrivenu palicama, s urezanim prozorima i vratima; bila je visoka do koljena.
Sve je to gledao djeda Jurko i bio vrlo zadovoljan. Pruzio je ruku i pogladio kovrdzavu kosu svoga unuka.
- Vidim da si sasvim lijepo to smislio. Zaista ce nesto postati od tebe. Jos si mlad, a vec umijes da gradis tako velike stvari; sta ce tek biti kad odrastes!
Gregi su zasjale oci od takve pohvale. Zatim se zamislio, te najzad progovori:
- Sad sam podigao kucu, a sta cu graditi kad porastem?
- Kad porastes? - razmisljao je djeda, zatvorivsi upola oci i zagledavsi se u daljinu. Vidjeo je daleko pred sobom ogromne planine koje su se kupale u proljecnom suncu. S druge strane pruzala se dolina s rijekom, drumovima i selima, cudesno ljijepa. Iza tih planina bile su druge, a izmedu njih doline, sela i gradovi, prostrana i ljepa zemlja, i uz to - nasa. Da, nasa zemlja. Tad djeda progovori:
- Kad porastes, gradit ces domovinu.
- Domovinu? - ponovi Grega.
Zamislio se. Gledao je zamisljeno nekud daleko unaprijed, kao da pokusava da odgonetne neku tajnu koja se skriva iza ove rijeci, koju je sad prvi put cuo! Najzad pogleda djedu, uhvati ga za ruku i upita:
- Sta je to domovina i kakva je?
- Domovina? - odgovori djeda. - To je nesto stotinu puta ljepse i hiljadu puta vece nego dom. Domovina - to je sve. Pogledaj unaokolo, i sve sto vidis: ove lijepe planine i doline, veliki gradovi, gdje zivi mnogo ljudi, drumovi i zeljeznice kojima se vozimo, ljudi - oni sto pjevaju i oni sto pate, oni sto se vesele i sto se muce - sve je to domovina, i jos mnogo stosta drugo. Tu domovinu ces graditi kad odrastes....
Obojici su sijale oci dok su tako sanjali o domovini.
- A zar nece - zabrinuo se nenadano Grega - dotad vec drugi izgraditi tu domovinu? Onda nece nista ostati za mene... - skoro je zbog tog postao nekako zalostan.
- Ne - odvratio je djeda. - Domovinu - nju treba vjecno graditi. Nikad nije tako potpuna, a da ne bi trebalo jos stogod dodati, jos stogod dograditi. Ako je danas vec potpuna, sutra joj treba opet nesto novo, nesto jos ljepse, jos potpunije....
Srecan sto ce za njega jos stogod ostati, Grega je zadovoljno klimao glavom, sav ispijen tim novim mislima o tome sta ga jos sve ceka.

I Berija ju je kusao: Boršč



Ingredients

3/1/2c. canned tomatoes
5or6 med.size potatoes cut in halves
1 large carrot cut fine
1 small peeled beet
salt to taste
1 small onion chopped
butter
4c. shredded cabbage
3/4c. sweet cream
1/2c. fresh green pepper chopped
2tbs. fresh or dried dill
1 celery chopped fine
2/1/2 qts. water
1/1/2c. diced potatoes
black pepper


Method

Put water to boil in large kettle.Add 1/2 c. canned tomatoes. When water is boiling drop in 5 or 6 med. size
potatoes,chopped carrot and the beet. While this is cooking add 3 tbs butter in frying pan. When melted add chopped
onion,cook tender but do not brown. Add 3c. canned tomatoes and let simmer with onion and butter until a thick sauce. Set to
back of stove.
Into a separate frying pan put 2-3 tbs. butter to melt. Add 2c. shredded cabbage and fry.Cook tender but do not brown.Shred
another 2c. to add later to the borstch.
When potatoes are tender remove them to a bowl.Add 2tbs. butter, mash well,then add 3/4c. sweet cream and mix well and set
aside.
Add 1/1/2c. diced potatoes to the stock and the remainder of the shredded cabbage. When diced potatoes are tender, add the
onion-tomato- sauce, then add the cooked cabbage,and the potato-cream mixture. Add 3 tbs. butter to the borstch. Stir well.
Add fresh chopped fine green pepper. Add 3tbs fresh or dried dill. The more fresh dill the better the flavor..Remove beet,
one hour later after borstch is ready.
Borstch is ready to serve.Serve hot.
Serve with chopped garlic in your soup bowl and a fresh piece of bread and butter... Yummy, enjoy...

“SCHI” RICH WITH the MUSHROOMS is the first dish of Russian cuisine. The recipe is for 6
portions. Time of preparation - 60 minutes.

12 piece of dried white mushrooms (or birch mushrooms); 500-600 g of sauerkraut; 2 carrots of
average size; 2 roots of parsley; 2 onions; 2 spoon of tomato mashed potatoes; 0,3 glasses of vegetable
oil; a bunch of greens - a parsley and fennel; 1 root of parsnip ; 7 potatoes; 3 bay leaves; 15-20 peas of
black pepper; salt; 1 spoon of a flour.

Add mushrooms to 3 liters of cold water and put on fire. While the broth cooks, clean and cut
vegetables, lay out them in a frying pan (except for a potato with which it is necessary to fill with cold
water) fill with oil and stew 10-15 minutes. Then add in vegetables tomato mashed potatoes and a flour
and stew 5 more minutes. In a mushroom broth put a bay leaf, pepper and removed from juice ( rinsed )
sauerkraut. In 15 minutes in the boiling broth add stewed vegetables and a potato. Now “SCHI” should
boil until the potato will be cooked. Salt “SCHI” it is necessary only after readiness. When ready
“SCHI” add 2-3 pieces of garlic, grounded with a small amount of salt (if it is necessary). Finely cut
fennel and parsley are put directly in a plate.

Jela heroja sovjetske revolucije: Soljanka



Ingredients
3 tablespoons unsalted butter, in all
11/2 pounds Brined Cabbage
2 small bay leaves, 4 black peppercorns, and 4 all- spice berries, tied in a cheesecloth bag
1 teaspoon sugar
1/4 pound cooked beef
1/4 pound cooked tongue
6 ounces frankfurters
6 ounces lean ham
2 Brined Cucumbers
6 marinated plums
1 teaspoon capers
12 black Greek olives, halved and pitted
1 medium onion, finely chopped and sauteed for 7-8 minutes in 1 table- spoon unsalted butter
1 tablespoon bread crumbs
6 tablespoons grated Par- mesan cheese
3 tablespoons finely chopped scallions
6 slices lemon


Method
Melt 1 tablespoon of butter in a heavy 3- to 4-quart saucepan, add the sauerkraut, spice bag, and sugar, and saute for 15 minutes, or until tender, stirring occasionally to keep the sauerkraut from sticking to the pan. Meanwhile, cut the cooked beef, tongue, frankfurters, ham, and pickles into 1/2-inch dice. Combine this mixture with the capers and olives and set aside. When the sauerkraut is cooked, discard the spice bag and mix the onions into the sauerkraut. Preheat the oven to 375°F. Grease a 3- to 4-quart rectangular casserole with 1 tablespoon of butter and spread half the sauerkraut over the bottom. Cover with all the diced meats and pickles, then top with remaining sauerkraut. Smooth the top, sprinkle with the bread crumbs and grated cheese, dot with the remaining butter, and bake for 15-20 minutes. Cut into 6-8 squares and transfer to individual heated serving plates. Smooth the sides and decorate with the chopped scallions, lemon slices, and marinated plums. Serve at once. Variation Fish Casserole Instead of the beef, tongue, frankfurters, and ham, substitute up to 1 pound of assorted fish fillets, sauteed in unsalted butter or oil and cut into 1-inch pieces.
