“SCHI” RICH WITH the MUSHROOMS is the first dish of Russian cuisine. The recipe is for 6
portions. Time of preparation - 60 minutes.
12 piece of dried white mushrooms (or birch mushrooms); 500-600 g of sauerkraut; 2 carrots of
average size; 2 roots of parsley; 2 onions; 2 spoon of tomato mashed potatoes; 0,3 glasses of vegetable
oil; a bunch of greens - a parsley and fennel; 1 root of parsnip ; 7 potatoes; 3 bay leaves; 15-20 peas of
black pepper; salt; 1 spoon of a flour.
Add mushrooms to 3 liters of cold water and put on fire. While the broth cooks, clean and cut
vegetables, lay out them in a frying pan (except for a potato with which it is necessary to fill with cold
water) fill with oil and stew 10-15 minutes. Then add in vegetables tomato mashed potatoes and a flour
and stew 5 more minutes. In a mushroom broth put a bay leaf, pepper and removed from juice ( rinsed )
sauerkraut. In 15 minutes in the boiling broth add stewed vegetables and a potato. Now “SCHI” should
boil until the potato will be cooked. Salt “SCHI” it is necessary only after readiness. When ready
“SCHI” add 2-3 pieces of garlic, grounded with a small amount of salt (if it is necessary). Finely cut
fennel and parsley are put directly in a plate.
