Easy Fruit Cake

Easy fuit cake

Est Prep Time:
Est Cooking Time: 4.5 hours depending on size
Oven Temp: 150C for 1/2 hour then down to 100C
Serves: 1 & 1/2 x the recipe makes 2 7inch round cakes or double the recipe for 1 10 inch square or 12 inch round fcake.

Ingredients:

250g Butter/Margarine
250g dark brown sugar
3 eggs
1/2 cup milk
1/2 tsp. bicarb soda
1/2 tsp. each of vanilla, almond and lemon essence
1/2 tsp. each of cinnamon, ginger, nutmeg, and ground cloves (i use one half tablespoon of mixed spice, easier to measure one spice)
1/4 cup marmalade
375g plain flour
1 kg mixed fruit
Sherry or Brandy (approx 1/2 cup) (i use a bit over a third of a cup into the mix as i soak the fruit in a generous amount of sherry)

Instructions:

Mix fruit and spices, essences, bicarb soda and sugar in a basin.

Melt butter and milk on stove (i do this step in the microwave while i measure out all the other ingredients) and pour over fruit mixture, mix well and add eggs one at a time, beating well.

Add marmalade.

Add sifted flour.

Add sherry or brandy.

Place mixture in a tin lined with baking paper, tie several strips of folded newspaper or brown paper around the outside edge of the tin as this helps to prevent the edges cooking too much. Then place some folded paper on the top and bake in a slow oven (approx 130 - 135c) for 4 - 4 1/2 hours.

Test with a skewer, if skewer comes out clean, cake is cooked, cool in tin.

Additional Info/Comments:

Above is the recipe as it was given to me. I like to high bake my cakes so I pile this recipe into an eight inch tin. If I do one and a half this recipe I get two nice seven inch Christmas Cakes.

I soak my mixed fruit for about 3 daysin plenty of sherry, I measure it soaked.

I line the cake tin withbaking paper and wrap several layers of paper around the outside of the tin or wrap the tin in a foil strip containing several layers of damp paper towel. I also sit the tin on damped newspaper to insulate the bottom of the tin.

I cover the cake with foil for the whole of the baking time except fpr around the last ten to fifteen minutes.

Before you put it in the oven pat the top of the cake with some water on your hand, this gives a very moist surface and the cake doesn’t seem to crack as much

I bake it at 150 celcius for half an hour and then I turn the oven right down to 100. I will give the tin a turn every hour and a half. If I am cooking two cakes at once I will swap their positions in the oven as well.

With two cakes in the oven in eight inch tins cooked at the above temperature, this recipe takes about 4.5 hours in total to cook. A little less if you have one cake in the oven or more if you use the wet paper towel/foil method. I take it out of the oven and test it with....I use a steak knife (is that bad??). If I see wet crumbs on the knife to me that’s done! I paint a little sherry on the top of the cake and then I place a round glad bake on the top of the cake and wrap it in a big old sheet and leave it to cool in the tin, wrapped in the sheet, top of the cake on the bottom. When it’s cool I wrap it well in baking paper then cling wrap or foil cling wrap then foil. Never wrap your cake directly in foil as that may result in a metalic reaction. Cake can be eaten as soon as the next day but improves if let to mature for a week to 6 weeks
I have based the cooking times from experimenting with my oven and this recipe. It may take you a couple of goes to adjust the cooking times and temperature to suit your oven. When I first tried this cake I cooked it at 130 in my oven and it was dry on the outside. When I changed the cooking temperature the whole cake changed to the beautiful moist cake it should be. I double the mix for a ten inch square cake and it takes about 5 1/2 to six hours and it’s moist from corner to centre. Let me know if you have any questions or need any more help with this recipe.

Chocolate Cookies with Mint Frosting... and of course, sprinkles

Recipe:
3 oz grated bittersweet chocolate
1 cup butter
1 cup sugar
1 egg
2 cups AP flour
1/4 tsp salt
1/4 tsp vanilla
1 tsp baking powder

Put the butter and chocolate in a large microwave safe bowl. Heat on medium power for 2 minutes. Take out and stir half way through the cooking time. Remove from the microwave and stir with a whisk until the chocolate is completely melted and incorporated with the butter. Add the sugar, egg and vanilla and stir until blended. Slowly incorporate the flour, baking powder and salt. Turn out on a board or counter that's been dusted with confectioner's sugar. Knead dough until its blended and forms into a square. Wrap with waxed paper. Seal in a plastic bag and chill in the fridge for at least 2 hours.

Preheat oven to 375f. Divide dough in half and return the unused portion to the fridge. Roll dough out until its between 1/8" and 1/4". Then cut into whatever shape you'd like. Lay out on a parchment lined cookie sheet (or you can use a silicone baking mat). Bake 8 -10 minutes for softer cookies or 10-12 minutes for crispier cookies.

Decorate as you choose.....

Here's my Icing recipe:
2 TBS Softened Butter
2 Cups Confectioner's Sugar
2 tsp milk
1/4 tsp vanilla extract
1/4 tsp peppermint extract
2 to 6 tsp light corn syrup
paste or powdered food coloring

With a hand mixer, soften the butter then add in the powdered sugar. Add in the vanilla and peppermint extract and continue to mix. Slowly add in the milk. Gradually add in the corn syrup. The amount of corn syrup will vary depending on the consistency of the icing you're trying to achieve. The icing needs to be free flowing to flood the cookie surface, but not too loose or it will run off the sides. For piping and lettering it needs to be thicker but still able to flow through a #3 or 4 tip. This should make enough icing to ice 4 dozen 3" cookies.

Sesame Orange Chick'n... from a microwavable bag

This was really odd. It was tangier than it should have been, and very very orangey, but not in a great way. They also added ingredients that had absolutely no business being in there. String beans? Red peppers? Two strong flavors that really killed the taste I was hoping for. The shredded carrots weren't noticable over the extreme tanginess & salt & string beans & peppers. The Chick'n wasn't too bad, but it definitely wasn't chicken.

I first learned about the wonders of Sal-Met from Kip, AKA W4KIP ("Whiskey Four Kilo India Papa..."). Kip was a really smart guy. Maybe the smartest person I have ever known. Kip had a PhD in Electrical Engineering, but knew something about literally everything from roller coasters to atomic physics.

I used to talk to Kip on the radio on my drive to/from work. Kip's signal was always perfect. I used to think, before I actually met him, he must have tons of all the latest expensive Ham Radio gear. Piled high, kinda like NASA Control or something. When I finally went over to Kip's house I realized his "NASA Control" was just a spare bedroom with a single shelf that held a few 20+ year old radios that Kip had built form kits. Of course, Kip had heavily modified each of the radios to make them better.

Kip had modified virtually all his equipment from video cameras to his hand-held radios (HT) to incorporate his own innovative designs. Kip had an old HT to which he had added a "battery circuit". Typically rechargeable batteries of that day lasted, at most, 2-3 years, if you were lucky. Kip's HT rechargeable batteries were 13 years old and still going strong. He offered his circuit to one of the radio companies, but they dismissed it out of hand.

There a bunch of us with which Kip shared his love and knowledge of Ham Radio. Kip's passion was ATV (Amateur Television). He was a real pioneer. A small group of us used to transmit 2-way TV pictures (Amateur TV) from my house in Decatur to Kip in Smyrna, and to Dave (KD4SHH) in Woodstock, every Thursday night. It was something. I used to go to a nearby parking deck in Decatur, until I put up my own 85 foot tower. Trees are tall you know, and you have to see over them or the trees just block your signal.

We built our own specialized antennas based on Kip's original designs and made our own TV transmitters and amplifiers. Microwave stuff, 1.2 GigaHertz. Mostly using the oddest pieces and parts from old TV sets and cable TV converters. Our stuff worked great.

A lot of people thought Kip was strange. But Kip was the man. And a good friend.

Kip passed away several years ago (W4KIP, SK..). They took down Kip's tower and got rid of all his radio stuff. We don't transmit on TV too much anymore. It's just not the same.

Oh, those crazy days of slasher films, when every summer camp became a potential slaughterhouse. The Burning was one of the flood of movies that followed the success of Friday the 13th, and it's more notable today for an unexpected roster of talent than for its success as a horror movie. You will note that the opening titles feature the unusual credit of "Created and Produced by Harvey Weinstein," and sure enough, this is the first feature film bearing the name of the future Hollywood mogul. Let's acknowledge that Weinstein's instincts were shrewd, since this junky thing fit right into the kill-the-teenagers trend after Friday the 13th, and thus a safe way to get a return on investment. We're at Camp Blackstone, where a disfigured loony, still sizzling after getting burned by unhappy campers years earlier, exacts his revenge on the empty-headed current crop. Among the campers are future Seinfeld star Jason Alexander, Fisher Stevens, and (in a smaller part) Holly Hunter. There's a vintage early-'80s synthesizer score by Rick Wakeman, but the real star of the movie is effects whiz Tom Savini (Dawn of the Dead), who does his bloody best with the murders. We don't care much about the teenagers, but students of gore will savor the throat-cuttings and the finger-loppings. --Robert Horton

Filling:
2cups dried figs or fresh figs (follow dehydrating instructions)
1cup raisins
1 tbsp vanilla extract
1 tsp cinnamon
? tsp nutmeg
1tbsp Amaretto (optional)
? cup water
3 tbsp honey (optional)
Crust:
1 ? -cups whole-wheat flour
1 ? cups Rolled Oats (not the quick cooking kind)
3 tbsp brown sugar Splenda or dark brown sugar
5 tbsp unsalted butter
1-cup walnuts, coarse chopped
3 tbsp fat free half and half or whole milk

Preheat oven to 350 degrees.
Spray the sides of a 9x13 inch baking pan with non-stick cooking spray
Line the bottom with parchment paper or wax paper leave ends long enough to drape over sides for easy removal when bars are done.

Place figs, raisins in a Pyrex mixing bowl add vanilla, amaretto, cinnamon, nutmeg, water and honey cover and place in microwave oven on high for one minute, let it set covered just until the raisins start to plump. Place the

Fig/raisin mixture in a food processor and pulse a few times until mixture is like a paste but not completely smooth you will want some pieces of fruit visible set aside and prepare crust.
Place flour, rolled oats, brown sugar splenda and butter in food processor pulse until mixture resembles a coarse meal add nuts last pulse for 10 to 20 seconds just enough to combine nuts, pour into a mixing bowl add half and half or milk and stir to combine mixture should look like big crumbs, divide in half place one half or the mix in the bottom of prepared pan and gently press crumbs together until bottom is covered place in 350 degree preheated oven for 5 minutes remove and let cool slightly before spreading filling on crust and topping with remaining topping gently press topping to seal in filling, you may sprinkle additional nuts on top if you like, bake at 350 degrees for 25 minutes or longer if you like a crunchier topping. Once bars are done cooking remove and let cool completely before cutting into bars or squares. These are great in a lunch, for a quick breakfast or late night snack.

To Dehydrate:
If using fresh figs, wash and pat completely dry cut in half place cut side up on a baking sheet lined with parchment paper (or silpat if you have it) place in a 275 degree preheated oven for 1 to 2hours, this can be done the day before.

•For a moister crust add more milk to crust mixture
•Try using no sugar added fruit juice instead of honey in the filling
•If using fresh figs it will take 20 to 30 good sized figs to get 2 cups of dried figs
Check figs for freshness before using if they are too soft or wet and runny when you cut them in half discard do not use! When ripe the fruit should be firm but yield to pressure when squeezed gently the inside of a ripe fig should be a deep purple with little white seeds

I made rice krispie treats for the vegetarian potluck that Sasha was hosting on Wednesday evening. Since I had to work Wednesday, I needed something that I could bring to work with me and of course, it had to involve no meat. Therefore, the only logical thing to make were rice krispie treats. Carousel may have been one of Rodgers & Hammerstein's least popular shows at the time, but it's now considered one of the duo's most compelling offerings, and there are plenty of good recordings to choose from. Nicholas Hytner's much-praised production originated in London (with a cast album available on RCA/Victor) before successfully opening at Lincoln Center in New York. The CD's nicely illustrated booklet gives a fair idea of Bob Crowley's spectacular sets and costumes, which went a long way in helping Hytner reinvent the show (he got rid of "The Highest Judge of All," for instance). The American cast (only Michael Hayden's Billy Bigelow appeared in both cities) is as good as it gets, with special kudos going to Audra McDonald and her heavenly "Mister Snow." Craft night

It was craft night at Amber's (soon to be Jack's too!) nursery tonight. Lots of glitter, glue and paint. Both kids had a blast although after the first ten minutes or so, Amber just wanted to play with the slide in the baby room and didn't do much making at all!

Have to admit to not taking the top right photo of Jack (it's my hand in the frame!) but it was too cute to exclude. Have processed every shot differently just to see how it looked and I rather like it!

1. Jack plays with the dangly sparkly ceiling decorations
2. Amber and Jack get busy sticking pop up angels
3. Jack has a go at decorating a door hanger (and his mummy's arm!)
4. Amber gets a bauble all glittery
5. Amber gives up on the making, lays the table (after microwaving the wooden banana) and has a chat on the phone...
