Stove Things we've done to the room since move-in (Note: Everything was self-installed, no professionals had a hand in any of our house projects.): - Painted it twice (the first color, a bright yellow, was a bit too much) - New windows - Wooden blinds - Removed a large wooden valance to replace it with a sheer scarf on a wrought iron rod - Sanded down and painted the cabinets and drawer faces - Added hardware to the cabinets and drawers - New faucet - Installed an over-the-stove microwave, which entailed slicing the cabinets above the stove in half to shrink them so that the microwave would fit - New fridge - New countertops - Installed and painted crown moulding - Installed and painted new, thicker baseboards - Installed new floors - Installed new light fixure - Installed new ceiling fan - Installed a dimmer switch Remodel 100 - 05-09-06 On the east wall of the kitchen, Contractor Larry installed the vent for the microwave hood inside the wall. This means that there won't be any holes cut into our new over-stove/microwave cabinet and a huge metal vent pipe running up through it. Sweet! Strawberry Mochi It's Memorial Day! No work today. I wanted to test out my "fruit" themed recipe for my food club, today - Strawberry Mochi! I've never made it before, but have tasted it once before from a friend back in high school in Hawaii. It's not the easiest thing to make. Most of the people who tasted the one i made today didn't like the textures very much, so I decided not to be making this for my food club. Glad I did a test run! Though it wasn't well liked i thought it came out pretty and it was fun getting my hands all powdery and playing with the mochi dough. I couldn't find the tsubushian from the asian store so had to buy ogura-an which is the whole bean in sauce rather than the paste... so that presented its own challenge. I had to blend it up and then add all kinds of mochi flour to it to make it the right consistency. If i can find tsubushian i might try to make it again, though it is kind of a waste since only I would be eating it and it's way too much sugar for my diet! In any case, here is the recipe for basic microwave mochi, which you can make any sort of variation on: ______________________ MICROWAVE MOCHI 1-1/2 cups mochiko (rice flour) 1-1/2 cups water 1/2 cup sugar Pinch salt Katakuriko (potato starch) or kinako (roasted soybean flour), for dusting 1 cup tsubushi an (mashed bean paste) or koshi an (smooth bean paste) Mix mochiko, water, sugar and salt in a bowl. Lightly coat a microwavable tube cake pan with cooking spray. Pour mixture into pan and cover with plastic wrap or a microwave cover. Microwave 3 minutes on low, then 3 minutes on medium and 3 minutes on high, for a total of 9 minutes. Cool in microwave 5 to 10 minutes, then turn onto a Teflon-coated baking pan sprinkled with katakuriko or kinako. Cut into 16 pieces. Dust hands with katakuriko or kinako and flatten each piece. Place 1 tablespoon an in center of each piece. Bring edges together and pinch to seal. Shape as desired. Note: This recipe is based on microwave wattage of 1,000. Depending on your microwave wattage, cooking time may need to be adjusted. (17) Warm chorizo & cauliflower salad Here is what I threw together for dinner last night for what I had in the fridge. Sundays tend to be "whatever is left" type days so nothing goes to waste and my husband requested a low-carb option as he'd just done 80kms of bike riding. This creation turned out to be speedy to make and very tasty (as the veggies soak up the chorizo flavour), even better being eaten outside watching the sun go down. 2 x chorizo, halved and sliced 1/4 cauliflower, par-cooked 1 bunch asparagus 1/4 red capsicum, cut in large chunks 6 x mushrooms, quartered chunk of haloumi cheese, cut into small cubes 2 x eggs, hard boiled, cut into 8ths 1 x tin 4 bean mix Par-cook the cauliflower pieces (I gave mine a zap in the microwave). Put the eggs on to boil. Cook the chorizo until starting to get crispy and swimming in fat. Remove the cooked chorizo but retain the fat in the pan. Add the cauliflower, asparagus, mushroom and red capsicum to the oil and stir until veggies are cooked through. Remove veggies into salad bowl. Return chorizo and add haloumi - cook until haloumi is crispy. Remove and add to salad bowl. Peel and chop eggs. Add to the salad and toss. Orange Almond Muffin in a Minute This literally takes 30 seconds of prep and 1 min to cook. 4 tablespoons flax meal 1 tsp cinnamon 1/2 tsp baking powder 1 packet sweetner 1 egg 1 tsp butter a few drops orange extract 2-3 tblsp slivered almonds In a coffee mug, mix dry ingredients. Add wet ingredients and mix very well. Microwave for about 1 minute. (Mine took 1:15). Go around rim of muffin with a knife to loosen from mug. Serve with butter and whatever else you like on your muffins. 1.5 net carbs for 1 muffin This is so fast, easy, and tasty. Lots of fibre, calcium, iron, and a lot of other good stuff. This little muffin keeps you going until lunch. Its very versitile; i've made it with blueberries which is yummy. Next I;m gonna try a 1/2 flax 1/2 almond flour mix. mmmmm.... (I cut my muffin in 1/2 in picture shown above. We had an organic cotton matterss made and it is going to be here tomorrow :) :) :) I have been putting a safe coat application on our bed frame. I was having real bad reactions to the wood. The pine slats makes me jittery, chest pain & breathing pain, swollen throat, just ill all over and most other woods I can't handel either with not as bad of reactions. So I'm hopping this safe coat takes care of the problem. It's suppose to seal particle board and plywood from being able to out gas toxin fumes. I hope it takes care of the wood sensitivities I'm having with the bed! If not, there are other Safe Coat products that might work better for this purpose. I'm excited to say the least. There are so many MCS people with the worst of sleeping arrangments, I know, I was one of them! I feel very fortunate to get the chance to have a "real" & "safe" bed for me with no fire retardents, no pesticides, no non-natural materials (ALL ORGANIC).
