In Spain and Portugal the sausages are usually encased in intestines, in a traditional method that has been used since Roman times. In Latin America they are usually encased in artificial casings, have a smooth commercial appearance, and artificial colorings are often used.

Chorizo can be eaten as is (sliced or in a sandwich), barbecued, fried, or simmered in apple cider or other strong alcoholic beverage such as aguardiente. It also can be used as a partial replacement for ground beef or pork.

Spanish style tapas bars that serve traditional style chorizo have gained in popularity in recent years and now appear in many large cities throughout North America.

Portuguese chourico is made with pork, fat, wine, paprika and salt. It is then stuffed into natural or artificial casings and slowly dried over smoke. There are many different varieties, changing in color, shape, seasoning and taste. Many dishes of Portuguese cuisine and Brazilian cuisine make use of chourico - cozido a portuguesa and feijoada are just two of them.
A popular way to prepare chourico is partially sliced and flame cooked over alcohol at the table. Special glazed earthenware dishes with a lattice top are used for this purpose.

Ingredients
1 Medium or large chicken breast
Breadcrumbs
Grated cheese
1 beaten egg

Bechamel Sauce
40g butter
40g flour
400ml milk
1/2 teaspoon salt
ground black pepper

Method

Remove fat from chicken breast fillet. Flatten the fillet with a meat hammer until about ? inch thick. Place the fillet in a large bowl and cover with the beaten egg then coat thoroughly with breadcrumbs. Cook the fillet in oil on a medium heat in a shallow pan or deep fat fryer for about 5-6 minutes until the breadcrumbs are golden brown and the chicken is cooked through. Place on paper towels to drain oil before transferring to a baking tray covered with foil.

To make the bechamel sauce melt the butter in a non stick saucepan. Sift in the flower and mix until you have a thick paste. Add the milk a little at a time then add the salt and black pepper before gentling boiling until the sauce thickens. Allow to cool. Coat the cooked chicken breast fillet with the bechamel sauce before topping with a generous amount of grated cheese. Mature cheddar and parmesan works best. Place under a grill on a medium heat until the cheese browns. Cut into small squares before serving, traditionally with chips and salad or cream cabbage.

Recipe:
Prawn Paste Chicken Fillets

Ingredients:
500 g chicken fillet

Seasonings:
1 egg white
50 g shrimp paste powder [a pre-mix from Singlong]
1 tsp roasted blachan powder
? a piece of fermented bean curd [fu yi in Cantonese]
Pinch of salt, pepper and a little dark soya sauce

Method:
1. Marinate the chicken fillets with all the seasonings for an hour.
2. Fry in oil till golden brown or cooked.

Note: Shrimp paste powder is a commercially produced pre-mix from Singlong, a Singapore company. The ingredients listed on the package are wheat flour, prawn paste, salt, pepper and garlic. So, you may try using the same ingredients if you cannot purchase a similar product in where you live.

We attended a cooking class on Wednesday. The second from the right is the cook. She invited us over to her house and we crowded into her small kitchen to watch her make rabbit marsala, mozzarella balls, viti alla pomorola, and fruit salad. It was all delicious.

Daniel and I attended a great little cooking class in Florence, Italy. Daniel is stuffing hollowed out tomatoes with a bread crumb, herb, parmasen and anchovy mix. Not my personal favourite!

To be a good diplomat, it is essential to be a good human being, but not vice versa. So feels Dnyaneshwar M. Mulay, multilingual poet and author. Well known for his novels, poetry and non-fiction works in Marathi, English and Hindi, he is currently Joint Secretary in the Ministry of External Affairs, and has been around the world on Foreign Service postings. Coveted as the Services are, not every administrator views them as opportunities to “get into the heart of people”. But Mulay is obviously different. Not everyone can mould more than one language into poetry either, but Mulay, whose mother tongue is Marathi, is different there too. His latest collection of Hindi poems, “Subah Hai ki Hoti Nahin”, published by Alok Parv Prakashan, releases this Thursday evening at Mavlankar Hall, 5.15 p.m. Its Urdu version will also become available this month. Besides, fluent in Japanese, he has in the past tried his hand at writing poetry in that language too.

Becoming a multilingual writer has been a process “partly deliberate and partly spontaneous,” says the affable writer. “In my house we don’t speak anything but rural Marathi. I joined the Service in 1983, and all my friends kept asking me, you write in Marathi — what use is it for us,” he explains, and adds — modestly for one fluent in English, Hindi and Japanese and with basic Arabic and Russian — “I do seem to have a flair for languages. Wherever I’ve gone I’ve picked up a smattering of the local language.”

With his writings translated into Japanese, Russian and Kannada and two taken in school textbooks, he notes, “I do think this helps me to be more Indian and helps me to shed my regional identity. I am not seeing the world as a Marathi boy — I am seeing it in its entire complexity. That is the reason I thing I’ve been shifting between languages.” It gives him, he says, a wider perspective as well as a wider reach.

Insight on West Asia

Learning a language means learning about an entire culture. “The moment you master the language you become an insider,” agrees Mulay. “It’s like a key to the heart of the people. You feel the pulse from inside. It allows you to cross all the borders.”

As for this latest collection of poetry, it too stems from his ability to get into his assignments in more ways than the official. “It is my own insight into the Middle East,” he explains, saying he knows the region well — “though I can’t claim to know it in its entire complexity”.

The poems on a variety of topics dealing with terrorism, war, politics that breaks hearts, borders that negate life, form “a kaleidoscope using the Middle East as a microcosm.” Gandhi Jayanti was deliberately chosen for the day of the launch, he says. The collection “makes a strong pitch for peace, for freedom and for humanity,” says the poet, adding, “The objective is to bring these ideas before my people. That’s also true ambassadorship. Just as you take your country’s wisdom to other countries, you also bring it back. That is also my job as a diplomat.”

This alphabet book is meant to introduce the Marathi/Devanagari script to children in U.S. and other countries who are more comfortable with the English language. This book is divided into four sections. In the first section, the basic vowels of Devanagari are introduced. In the second section, the consonants of Devanagari are introduced. In the first two sections, each letter is introduced by means of a picture of a Marathi word beginning with the letter. A good approximation to pronouncing the letter and the word in English is given. The English translation of the word is also provided. In the third section, the form of different consonants when they are conjugated with the vowels are shown. For one consonant, the changes in pronunciation when conjugated with the vowels is provided. This section provides the common variations of the letters in Marathi. In the fourth section, the basic Marathi numbers are introduced.

A Taste of the Past: The Daily Life and Cooking of a Nineteenth-Century Hungarian-Jewish Homemaker






A Taste of the Past is an entertaining reconstruction of the daily life and household of Therese (Riza) Baruch (1851-1938), the great-grandmother of the author, Andras Koerner. Based on an unusually complete cache of letters, recipes, personal artifacts, and eyewitness testimony, Koerner describes in loving detail the domestic life of a nineteenth-century Hungarian Jewish woman, with special emphasis on the meals she served her family.

Based on Riza's letters, part one offers an imaginative sketch of growing up in a religious middle-class family in the 1860s and 70s in an industrial town in western Hungary. Part one also describes Riza's reactions to the dilemmas posed by the early signs of Jewish assimilation. In part two, the heart of the book, Riza has married, moved to a smaller town near the Austrian border, and become the central figure of a large household. Koerner recreates a typical day in the life of Riza and her family, peppering his narrative with recipes of the food she served for breakfast, mid-morning snack, lunch, afternoon coffee-and-cake, and the much more modest evening meal.

Riza's family was religious, and Koerner also describes the special foods (pike in sour aspic, cholent, apple-matzo kugel, and much more) she served to celebrate the Sabbath and the six major Jewish holidays. Short introductions to the recipes describe the evolution of the dishes through the centuries, their role in Jewish culture, and how cultural influences and religious traditions shaped Riza's cooking.

More than 125 evocative pen-and-ink illustrations bring Riza's story and her food to life. A Taste of the Past offers an enchanting look at Jewish daily life in western Hungary in the late nineteenth and early twentieth century, a time when middle-class Jews were increasingly assimilated into mainstream Hungarian life and culture. Such small-town Jewish life had completely disappeared due to the Holocaust. Koerner's book revives this lost world and invites the reader to be a guest in Riza's house to watch her caring for her family, shopping, cooking, and preparing for the holidays. By offering easy-to-follow updated versions of her recipes, the book also allows readers to savor Riza's dishes and desserts in their own kitchens, thus completing this experience of a visit to the past.

The species Cucurbita pepo is a cultivated plant of the genus Cucurbita.The zucchini (or courgette) is a popularly cultivated summer squash which often grows to nearly a meter in length, but which is usually harvested at half that size or less. Zucchini can be dark or light green, and generally have a similar shape to a ridged cucumber, although some round varieties are also available. Botanically, however, the zucchini is an immature fruit, being the swollen ovary of the female zucchini flower.

While on my two week break, actully the day after. My friends and girlfriend. Daniyale, Sarah, Samy and Lora sat down to a yummy "End of Quarter Dinner" . Its was amanzing. We all cooked things and or brought things. It was like a large potluck. We had fondu, strabaries, fruit salad and caesar salad. dips, chips, Almun logs, Yam tempura, yummy drinks, and alcohol for the ladies, it was a delectable treat for all. at the end of the day or getting to night, we watched, "Curse of the golden flower" "The Ring" "The Grudge" It was a blast.

This weekend is the IRBs Wellington Sevens competition. Its a long weekend, starting with a parade today, and then a fashion competition and games tomorrow (look out for those photos) and the rest of the games on Saturday.
The girls up in the air are the cheerleaders for the Cook Islands team.
It was really HOT out today, and I cheated by staying on Auto for all my photos, because I just couldnt be bothered over and under exposing when you only have one chance to get the shot!

We have power back today at work! Yea! We still don't have power at home, but at least I can use Flickr at work. We had a terrible wind storm that left over 1 million people without power for two or more days. Things are starting to get back to normal now.

My wife had plenty of time to finish my new "Star Wars" hat. Oh yeah! It's reversible as well. The other side is grey and says "Star Wars". I had to wear it at night to keep my head warm as the house was down into the upper 40's at night. We have power back at work, but still not at home. One good thing resulted in the power loss: we had a lot of time to spend with the neighbors and with the kids. We played games, sang songs, cooked on the gas stove and ate some good food. So, all in all, it was more of an adventure than a disaster for us. I know some people were more severly affected and my heart goes out to them.

I was actually supposed to see Funkadesi with Angela and her husband in the evening. I wasn't feeling very well at work (it had nothing to do with the food) so I ended up just taking a nap and watching a movie instead.

While I didn't see the Indian band, I did do something south Asian on Thurday night, I ate a frozen Indian vegetarian dinner.

It tasted a lot better than it looks in this photo.

Indian Cooking pot made of Buffalo stomach. The hot rocks are taken frm the fire and added to the pot filled with water and the ingredients and the food cooks fast like a Microwave oven without damaging the stomach pot. Ths is not put over the fire to prevent damage.
