An imaginary 30th year Anniversary

Here it is! My team's final cake is finished. It was for an imaginary 30th year Anniversary, complemented with 5 different mignardises : Phyllo triangles filled with sauteed pears, pistachio truffles, spiced sugar coins from Baking and Books, flourless clementine cakes, and lemon butter cookies from Flagrante Delicia, which are my favorite!

I think we adressed our assigned topic very well and I really enjoyed playing with the Hellebores flowers!
This was the last Advanced Pastry class, but no worries, I will be going to the bakeshops in the future :)

Flower power

I am back!!
As you can see, there has been a lot of snow in NY lately, quite a bit actually. I woke up this morning I this is what it looked like. Stacey and I went out, took a few shots, and got splashed by a car that drove past. It was like one of those movie scenes, you know?

Since I'm done with all my tests for this semester, I focused on making flowers for the Advanced Pastry class. We all got an imaginary scenario and my team has to make a cake for the 30th year Anniversary + 5 types of mignardises (tiny, bite-sized desserts).

Since we didn't have time to finish the flowers, I made them this weekend, which was very relaxing and fun to do. Gumpaste flowers are really one of my favorite things and it's crazy how real they look when they're done. Once you get the basic technique, you can do any flower you think of. I have this fantastic book by Alan Dunn, which gives you step by step instructions for these wonderful creations.

Finals!!

I am sorry for the lack of posts, but this is my last week of this semester and it's insane. I don't know where my head is!!
This weekend I have an interesting task to do, which is for my advanced pastry project, so I will be sharing that with you ;)

A touch of home

I am back in NY! Sorry for not posting any cookie recipe, I was so busy, like you wouldn't believe it. Coming home for 2 weeks is nothing; there is so much to do, so many people to see...
I didn't want to leave Split, but there's nothing for me to do there at the moment. I have one more year here at the CIA and that's it! This time next year....!!!

I just wanted to show you this beautiful piece of work from my area, which is the region of Dalmatia. All the things typical for the Mediterranean climate: dried figs, walnuts, almonds, carob, oranges, lemons, bay leaf, rosemary, lavender and many more, which were all included in these wonderful baked goods.
Uljara Vukšić or the olive oil refinery ''Vukšić''. They do Diocletian's crowns with other little pastries from all the ingredients I mentioned and pure olive oil. Isn't that great?!
You can buy it during special events only or by request, because they don't have a large production.
With this you can truly transfer the taste of Dalmatia exactly the way it is.
