The last week has been more then hectic, I don't think it has ever been like this. The whole transition from breads station and waking up at 2am, to being front of the house Apple pie was insane! I honestly didn't know where my head was, I couldn't feel my own body, and...that is behind me now.
This is my last block in the Associate degree (almost getting the actual degree!) and I am in the Apple Pie cafe on the cold beverage station which gets quite busy and right now I'm the pm shift, but I honestly can't wait to be am, so I have the afternoon for myself and things I want to do. Unfortunately I don't have any exciting photos for you yet, but I will do my best to take a few this week ;)

BRIOCHE

This is how pretty my team makes things! This is an example of some work from the enriched dough station.

This one is a simple brioche filled with wild blueberries and lemon curd.

I was wondering how these donuts tasted so light, airy, not greasy at all, until I found out that they were made out of brioche dough! Oh my, I wish you could try it. No wonder it tasted like that! In case you don't know, Brioche is a highly enriched French bread that is high is eggs and butter (LOTS), and the final product has a very rich and tender crumb.

A day in ''Apple Pie''

I have one more week of bakers nightlife!! It's quite interesting really. We go to bed at like 6 - 7 (hey, I know I should've been in bed already!) and wake up at 1:30am. It is nice that both Stacey and I are on this station, makes everything easier. You should see our morning routine, hehe, every day we do same things at the same time. ANYWAYS, we have been having quite a good time in Aple Pie bakery cafe. I am in this class for 3 weeks, and the reason we are there that early is that our group produces baked goods that have to be ready when the Cafe opes which is 7:30am, but we usually get out at around 10:30 - 11. Yes, the hours are long, but it's good, I am challanged and the time just flies! Just the six of us are on this station and the rest of my class is am and pm pastry and savory.
So one more week and then we're Apple Pie front of the house where we're in the actual Cafe. I will be serving cold beverages!

This is just a quick glance at our lovely bakery and a beautiful danish Stacey made that I baked :) I sn't it pretty? This was just an experment, they don't sell these on the Cafe (yet).

Have to go to bed, but enjoy the summer for me and guess what? I graduate in 4 weeks! Madness!! :))
