Benefits Of Cooking With Coconut Oil
- Coconut oil is extracted from the kernel or meat of matured coconut harvested from the coconut palm (Cocos nucifera). Throughout the tropical world it has provided the primary source of fat in the diets of millions of people for generations.

Gardenburger
This was another one of Art's delightful creations. A homemade high protein vegan patty (made with lentils, brown rice and a few other nice grains I forget now), served over a tomato, carrot & onion reduction and topped with sauteed onions & cilantro. The genius here is that his reduction reduced a bit more than planned so instead of floating the patty on the reduction, he got creative, hence the star burst, a very attractive look for good food!
2007-02-17 Coconut Oil
We went shopping at Whole Foods, aka Whole Paycheck because their prices are pretty steep. The store has a gourmet focus. Have you seen coconut oil sold in jars before? It's solid, a lot like shortening. In fact, I bet it would work fine as a shortening. Shortening is so named because it shortens the length of gluten chains in flour making pastries crumbly, not bread-like.
