So many days are just spent, and we too are spent at the end of them that I smile at a day well spent… and I yes was spent too


Yesterday was my “baby” Landren’s 4th birthday. I had worked some the night before to make sure I could spend the day with him but still needed to go into the office early to print some plans and estimates for delivery the next morning. I worked at a hectic pace (which isn’t my norm of late) got a lot done quickly and felt good about it. With work done and the older children delivered to school baby and I stopped at Sonic for Cokes. Mmmmmm. Then we watered plants, played at bubbles and “mowed” the yard with the plastic lawnmower.

Lunchtime was Landren's favorite (and mine) mexidips and a muchaco at Taco Bueno, again mmmmmm mmmm good. After lunch we went for a visit at the next door neighbors house to share some birthday joy with her and harass her psychotic little lapdog. We visited until it was time to pick up the big boyw. Then all the kiddos played in the yard while I worked on a supper of Italian grilled chicken with peppers and onions (babies choice) lightly creamed penne, corn on the cob, and green beans. To make the dinner extra special we cooked with our own oregano from the garden for the first time ever. Brenden said it was so much better than the dry kind that when he took the first bite of pasta the “flavor just exploded in his mouth.” that may have been the extra parmesan not the oregano either way the kiddos were pleased.

Finally after a day of asking "when" it was time for cake and song and presents. The celebration was anything but typical. We took the huge cake out into the yard and set it on the grass to sing happy birthday. That was normal enough but I took no plates or forks and let them grab cake by the handful and stuff their little faces. When they were full I declared the food fight and the boys had their first ever all out cake throwing food fight squealing and running in circles chasing each other all around the yard. When the cake supply was exhausted, they squealed and ran around the yard for quite another reason… they were being hosed. Finally the presents, which included a game of“hungry hungry hippos” and that filled most of the rest of the evening.

So, everyone was right--birthdays are GREAT!

When Mom got home from work, she cooked a chicken breast and shared a lot of it with me during the cooking. THEN, she brought the rest of it to my A-Gilly-Tee class, which I love, love, love, and gave it to me as treats! (She shared a little of it with this woman who had a slightly psycho Jack Russel, but I was ok with this as I got most of it!)

After playing at A-Gilly-Tee, I got my cool phezzie pressie you see in this picture. Then GG (this is what we call grandma as her first name also begins with a "G") came over and gave me another pressie--a little tennis material bar bell that was also very cool. THEN Mom took me outside and brought out a cool bumper! She would not let me take this off and chew on it--apparently we have to play a very specific game with it-- and it goes away if I don't play right, but I got to keep my other presents and do whatever I liked with them!

There was only one down-side to the night. I had a few stomach issues and Mom and Dad thought I was trying to get at the Jack Russel and didn't get that I needed to go outside and I had a little diarrhea on the training room floor. While I know that this could technically be a bad girl exploit, I found it a little embarrassing now that I am one and too old to be having accidents--it was all Mom and Dad's fault! But I think that I will be getting a boiled chicken and rice diet until my stomach settles down, so that's good.

(P.S. Mom says that this picture is not really up to her Flickr learned standards, but that I was so excited by my phezzie that she couldn't get me to pose better. I didn't think I should have to pose--it was my birthday!

GROWTH HABITS/CULTURE: Hoja santa is a herbaceous or semi-woody herb that sprouts from the ground with many shoots. It has large, velvety, heart-shaped leaves often 10 inches or more in length. It is very easy to grow in prepared soil and is perennial in an organic program. It does need moist soil.



PROBLEMS: Hail and high winds will damage the large leaves. Minor chewing insect pests is about all I’ve ever seen. It might freeze out in the northern part of the state, but it is completely perennial as far north as the Dallas/Fort Worth area.



HARVEST/STORAGE: Pick the large leaves as needed and use fresh. It can be stored dry or frozen if needed for the winter months. As with all herbs, it’s best to store in glass containers. A better plan is to have at least one plant in a container to protect and have leaves year round.



CULINARY USES: The leaves can be used to flavor dishes and to wrap various fillers of meat, fish, vegetables. Hoja santa has a distinctive root beer taste. It is a popular ingredient in Gudamalan and Mexican food, however research shows that eating large quantities of hoja santa is not healthy. So don’t eat large quantities. Here’s a good recipe: Put into a leaf, pieces of chicken, beef, or fish, some onions, garlic, and peppers, a dash of amino acids, and/or wine. Roll the leaf enchilada-style and bake for an hour at 350° in a casserole dish. This makes a delicious appetizer or main course.



MEDICINAL USES: It is said to help relieve nervous anxiety, stress and restlessness. It can be eaten or taken as a tea, however, it is very powerful and should be used on a limited basis. Long term use may cause liver problems.



LANDSCAPE USES: It is useful in large pots and the perennial garden. The texture of the large leaves is distinctive and the white flowers are interesting. Use hoja santa as a strong background planting but give it plenty of room.



INSIGHT: Piper methysticum (Kava Kava) is a closely kin herb that is used as a calming tea. Both this plant and hoja santa should not be overused. According to the American Botanical Council, extended continuous intake can cause a temporary yellow discoloration of skin, hair and nails. Just use common sense and don’t overdo this or any other herb.






In 2001 I wrote a book that includes information on this and many other wonderful plants we call herbs – Howard Garret’s Herbs for Texas.
It is often used in Mexican cuisine for tamales, the fish or meat wrapped in fragrant leaves for cooking, and as an essential ingredient in Mole Verde, the green sauce originated in the Oaxaca region of Mexico. It is also chopped to flavor soups and eggs. In Central Mexico, it is used to flavor chocolate drinks. In southeastern Mexico, a green liquor called Verdin is made from hoja santa.American cheesemaker Paula Lambert created "Hoja santa cheese", the goat's milk cheese wrapped with the hoja santa leaves and impregnated with its flavor. While typically used fresh, it is also used in dried form, although drying removes much of the flavor and makes the leaf too brittle to be used as a wrapper.

PROBLEMAS: Granizo y fuertes vientos danan las hojas grandes. Menores de plagas de insectos de mascar es todo lo que he visto nunca. Se podria congelarse en la parte norte del estado, pero es completamente perenne tan al norte como el area de Dallas / Fort Worth.



COSECHA / almacenamiento: Elige la hojas grandes como sea necesario y el uso fresco. Puede almacenarse en seco o congelado, si es necesario para los meses de invierno. Como con todas las hierbas, lo mejor es almacenar en recipientes de vidrio. Un mejor plan es tener al menos una planta en un recipiente para proteger y tienen hojas todo el ano.

Carrie and Roger invited us over for some yummy Chicken Tortilla Soup dinner. I baked up some healthy (^_^ JK!!) Passion Fruit Bars from my Hawaii Party Food cook book my mom gave me. After dinner we hung out by the fireplace and played a few board games. We taught them Sequence - a board/card/connect-4-esque game. Then we played Clue, which I've never played before in my life. (Weird... but i guess we just never had it in our house as a child.) I really felt honored every time someone shared their clues with me. I really had no *ahem* clue what i was doing. Before i could really get my game on, Carrie ended up winning by correctly guessing Mrs. White + the Revolver + the Study. Winner winner chicken dinner!

My favorite part of hosting a dinner party is setting the table. I hadn't finished yet, but wanted to get my photo in before company arrived. I am WAAAAAY too distracted when I cook and knew I would forget! Good thing too, because as it was, I got to talking, forgot to put cheese into the pizza supper pie, had to take it out of the oven to add... then realized 20 minutes into baking that I had NOT turned on the oven. Oh, my! You can SEE why my favorite part is the table!!!

Recuerdo aun ese programa de television de media hora que alguna vez se emitio en la senal educativa nacional (antigua cadena 3), en el espacio de Una Mirada a Francia. Un especial con entrevistas y videos de rock frances, que tal vez volver a ver hoy en dia seria como para volver a recordar la sorpresa juvenil de 1989. Yo estudiando en la Alianza Francesa de Bogota en la sede del centro, esperando que por estos lados llegaran sonidos de rock frances que muy pocos conocian y por los cuales tal vez habia que esperar la vida o la juventud entera. Tal vez por eso, era que oportunidades como estas, habia que aprovecharlas. Fue asi como recuerdo aquella ocasion en la cual se hablo de las Negras Verdes, como de aquel interesante combo de Paris que hacia musica en la cual se encontraban rastros de la chanson, del flamenco, el rai, el punk, la musica de cabaret, la musica gitana y otros sonidos que luego nos empacaron como World Music. Las Negras estaban haciendo bailar a los franceses, a los espanoles, los flematicos ingleses, los alemanes y hasta a los escandinavos. Eran tan viejos como nuevos. Usaban acordeones, guitarras y ropas elegantes, pero tambien usaban botas Dr. Martens.

Y no era raro entonces que se hicieran rodear y asesorar de productores que encontraron en ellos un campo de exploracion interesante para hacer remezclas. La primera epoca del grupo fue fertil en este sentido, porque no solo la banda lanzaba increibles sencillos, sino que ademas presentaba conciertos por diversos escenarios, donde indudablemente se terminaba en fiesta. La fiesta se extendio en esa primera etapa hasta enero de 1993, cuando murio su cantante Helno, por una sobredosis. El grupo se empezo a replantear el futuro musical (que menos mal siguio adelante), pero en junio de ese ano, lanzo este trabajo con el cual mostraba las mezclas que en esos anos alcanzaron a tener. Aqui se presentan no diez, sino doce temas, de sus discos Mlah (1989) y Famille Nombreuse (1991).

Mezclas que sonaron en las discotecas y radios de America y Europa y que nos hacian sentir la posibilidad de tener mas musica y vida con estas versiones. Destacable es que hayan tenido mezclas de Massive Attack, Norman Cook (Antes de ser Fatboy Slim), Kwanzaa Posse, Gang Starr, entre otros.

After the temple, we rent bicycles. Earlier in the morning, we passed a small place where to eat holden by a sweet mama :) and we immediately went there for lunch !
She made her restaurant in front of her garage with 3 tables and 2 burners and that's just it !

We ordered 1 fried noodles, 1 fried rice and 2 famous... PAPAYA SALAD ! But "mai pet" (no spicy hehe :D) The best papaya salad ever... So fresh :) A bit too spicy but so yummy !

And she was so nice :) It was one of my favorite moments !

I color matched the golden yellow-orange apron exactly when I was at Joann's fabric, and also had never noticed that Cooking Mama's pink bandana has various sized white polka dots scattered! And you have no idea how excited I was at the fabric store to find a pink fabric that matched exactly. :)

you know how it is with some photo experiments, especially abstract macro ones involving liquids....you go for something based on a prediction, you get something else. Well, this is a prime example. Sort of doing a joint project with fellow flickrite catchElysium to try capture macros of oil swirls in/around water.....

I got pebbles and rocks instead. Ho hum, it'll do for now, the swirls will have to wait.

throwing water and cooking oil into the mix plus a few small drops of dish washing detergent stirred in to break up/flatten the oil a bit. With a few drops of thick soya sauce diffusing through in some to give some brown shades.

aluminium foil was the holder for the small amounts of water, cooking oil (+soya sauce too sometimes). This helps with the lighting by reflecting back up and at times gives texture.

don't usually use fanciful titles, but I feel I have no choice here if i'm going to upload several of these wacky ones.

No adjustable focus, aperture or shutter speed capability. Macro achieved with piggyback lens described below.

File rozmrazit, posolit, okorenit, smazit na panvi podlite olejem, casem pridat porek a cesnek a nakonec zalit smetanou a vodou dle chuti a preference ;-)

Jako prilohu jsem mel brambory pecene v troube (syrove, oloupane, nakrajene na male kousky, pomazane olivovym olejem a polozene na pecici papir).

- Pangasius fish fillets 1 package
- 1 leek sliced in half-circles, about 4 garlic cloves thinly sliced
- fish spice blend by Avokado
- lemon pepper
- salt, olive oil
- cream and water for sauce
Defrost the fillets, add salt, spices, fry on a skillet with some oil, after some time add the leek and garlic and in the end, pour in some cream and water according to your own taste and prefference ;-)

As a side dish I had oven-baked potatoes (raw, peeled, sliced into small pieces, covered with a little olive oil and placed on baking paper).

Grilled Cheese Italiano Recipe





INGREDIENTS:

3 tablespoons butter, softened
8 slices whole-grain bread
8 oz fontina or Swiss cheese, shredded (2 cups)
8 thin slices prosciutto or ham
24 fresh basil leaves
8 slices (1/4 inch) ripe tomatoes (about 2 medium)
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

DIRECTIONS:

1. Heat griddle or 12-inch nonstick skillet over medium heat.

2. Spread butter on one side of each bread slice. Layer unbuttered side of 4 of the bread slices with 1/4 cup of the cheese, 2 slices of the prosciutto, 6 of the basil leaves and 2 of the tomato slices. Sprinkle with salt and pepper. Top each with 1/4 cup of the remaining cheese and remaining bread slice, buttered side up.

3. In hot skillet, heat sandwiches 3 to 5 minutes or until cheese is slightly melted and bread is browned. Turn sandwiches over; heat 3 to 5 minutes longer or until cheese is melted and sandwich is golden brown.

Blueberry Corn and Sourcream Pancakes





1 cup sifted corn flour (not cornmeal, although that might work. Corn flour is ground finer than cornmeal)
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/4 cups sour cream, approximately
1 egg, slightly beaten
frozen blueberries
butter for cooking

Mix together the corn flour, salt and soda.
Mix together the sour cream and egg.
Add the sour cream mixture to the flour mixture and stir to moisten the dry ingredients. Do not over mix or beat. Mixture will be a relatively thick pancake batter.
Heat a pan or griddle and melt some butter in the pan.
Spoon the batter into the pan.
Sprinkle or arrange frozen blueberries on top of the pancakes.
Cook pancakes on medium to low heat until the edges become firm, and the bottoms are golden brown and crispy.
Flip pancakes and continue frying until pancake is fully cooked through.

Serve with maple syrup or powdered sugar.

Cuajimoloyas is a little village in Oaxaca state, at 3180 m above sea level. Most people are Zapotecos. Every year the community nominates 3 people from the village to serve as guides on hikes in the surrouning mountains. The hikes are 3 - 7 hours long and the guides get a bit of commission on the price, with the rest of the money benefiting the community. You cannot really turn down a nomination to be a guide as this is seen as community service. Women are also asked to help, usually as cleaners and cooks for the wooden huts the community rents out to tourists.
I took an over 7 hour hike around Cuajimoloyas a week ago, enough time for my guide and myself to develop a friendly simbiosis: I would teach him some useful expressions in English (which he would duly repeat several times and write down in a block of notes) and he would pull me up the more demanding paths; we would trade biscuits (me) for tortillas with frijoles (guide); I would be offered a juicy, yellow mango washed in a little stream and my guide would be allowed to take as many pictures with my 40D as he liked (he developed a real liking for my camera and his framing turned out to be surprisingly good for someone who claimed he had never had a camera).

Today we went to the N.E.C. in Birmingham and saw the Good Food Show. We saw The Hairy Bikers in the supertheatre and then went shopping. I managed to find everything I wanted! I got two new knives for the kitchen (now I won't hurt myself on blunt knives!), a nicer dicer (as seen on TV!) and some Fudge Kitchen fudge which is seriously the most amazing fudge you will ever eat. I did plenty of free sample tasting, including yummy toffee vodka and for lunch I had a Buffalo burger with Buffalo cheese. Yum!

Thai-style Belachan Fried Rice (Khao Kluk Kapi)

Ingredients :
900g normal rice grains (cook rice – normal way, cooled, fluffed till grains are well-separated)
60g belachan (dissolved in 6 T water)
60g dried shrimps (soaked, drained, roughly pounded, fried in a oiless wok)
600g small fresh shrimps (halved)
15g garlic (pounded)
180ml groundnut flavoured cooking oil (divide into three portions)
300g French beans (diced)
4 eggs (beaten)

Seasoning :
2 T fish sauce
1 T sugar

For garnishing :
6 chilli padi (diced)
Some deep-fried shallot crisps
1 pink ginger bud / bunga kantan (sliced)

Method :
(1) Break eggs, add in 2 T of water & beat lightly. Put 60ml oil into wok. Heat oil till very hot before adding in beaten egg mixture. Stir-fry till cooked on high heat. Dish up, keep aside
(2) Heat up another 60ml oil. Saute garlic till light golden before adding in belachan mixture. Stir-fry till aromatic, remove & keep aside
(3) Heat wok with the remaining 60ml oil. Fry prawns till cooked before adding in the diced French beans. Stir-fry them well before removing
(4) Add the cooled, cooked rice into wok & on high heat, add (2). Fry-well, add in seasoning & give rice a good stir-up
(5) Add in (3) & scrambled eggs of (1). Mix well before dishing up. Garnish before serving

Black Rice with Scallions and Sweet Potatoes

INGREDIENTS:

- 3/4 cups Chinese Black Rice, @ Whole Foods
- 1.5 cups Water (I use a little less)
- 3/4 teaspoon Salt
- 2 tablespoons Vegetable oil
- 3/4 cup Scallions, ~1 bunch
- 1 tablespoon Fresh Ginger, Peeled & Minced
- 1 Sweet Potato, Large (12-14 oz) Peeled & diced


METHOD:

Rinse rice in a sieve under cold water. Bring rice, water, and 1/2 teaspoon of salt to a boil in 1.5 - 2 qt heavy sauce pan, then reduce heat to low and cook rice, covered until tender and most of the water is absorbed (about 35 minutes). Let rice stand, covered, off the heat for 10 minutes.

While rice is cooking, heat oil in a 12"; heavy nonstick skillet over moderately high heat until hot but not smoking and saute scallions, ginger, and sweet potato stirring until coated well (about 2 minutes). Reduce heat to moderate and add remaining 1/4 teaspoon salt and pepper to taste, then cook, covered, stirring occasionally, until potato is just tender, about 12 minutes. Add rice and toss gently to combine.

At Napoleon's farm at Vincennes, French chemist Mege Mouries first started experimenting with making margarine. He patented the concept in 1869 but when France went to war with Prussia, Napoleon fled and Mouries’ patent was almost forgotten until a Dutch firm called Jurgens purchased it in 1900. Stork was introduced as a branded margarine in the UK in 1920.

In the 1930s, Stork taste tests began on Radio Lyons. Advertising campaigns included "The Energy Giver" to dispel thoughts that margarine was unhealthy. The Stork Cookery Service was launched in 1939 to help housewives discover cooking with margarine when food rationing began.

Rationing ended in 1954 and the Stork name reappeared. The first edition of the Art of Home Cooking was produced and the first Stork TV ads were shown in 1955.

Stork soft tub margarine was introduced in the 1970s. It pioneered the all-in-one method of making sponge cakes. TV advertising featured Bruce Forsyth and TV taste tests were fronted by the late Leslie Crowther.

Sometime during the Second World War, a lorry carrying Stork margarine overturned into a field on the A531 near Heighley in Madeley, Staffordshire. People came from miles around to try and salvage some of the margarine – understandable given war rationing. The corner is known thereafter as Margarine Corner.

The coke is typically very unhealthy and carbonated. All of this food is unhealthy and could potentially lead to food born illness.
