Refrigerator Roll Dough

Pate Brisee pastry dough, before I put it in the fridge.
1 stick of butter, cut up into small cubes, put in freezer for about 5 minutes
1.5 C all purpose flour
6 Tbsp chilled orange juice
1/2 tsp salt
(and I should have added 1 tsp sugar, but I forgot)
I added the chilled butter to the flour, incorporating with a fork, working quickly, until everything was kind of crumbly. I added the chilled OJ, and worked it to form a doughy form. I formed it into a ball, wrapped it with foil, and popped it into the refrigerator for an hour. Rolled it out into 1/8 in thickness (I didn't have enough space to roll it out to fit my pan, so the edges didn't go all the way up the sides.
Pricked it with a fork, lined the inside with foil, and filled it with beans to weigh it down. Baked it at 400 F for about 30 minutes.
Rolling Out the Crust
January 23rd is National Pie Day, so I made pie crust last night, flattend the crust into two disks, wrapped them in plastic wrap and put them in the refrigerator. Today I got started by rolling out the bottom crust.
