Strawberry-Rhubarb Squares
INGREDIENTS:
Crust and Topping
1 cup butter or margarine, softened
1 cup packed brown sugar
1 teaspoon vanilla
2 cups Gold Medal® all-purpose flour
1 1/2 cups quick-cooking oats
2/3 cup chopped nuts
1/2 teaspoon baking soda
1/4 teaspoon salt
Strawberry-Rhubarb Filling
2 cups granulated sugar
2/3 cup Gold Medal® all-purpose flour
2 tablespoons milk
4 eggs
4 cups sliced strawberries (2 pints)
4 cups sliced rhubarb (8 stalks)
Topping
Whipped cream or ice cream, if desired
DIRECTIONS:
1. Heat oven to 375°F. In medium bowl, mix butter, brown sugar and vanilla with spoon. Stir in 2 cups flour, the oats, nuts, baking soda and salt until crumbly. Reserve 2 cups crumbly mixture. Press remaining crumbly mixture in ungreased 15x10x1-inch pan.
2. In large bowl, mix granulated sugar, 2/3 cup flour, the milk and eggs with spoon until smooth. Fold in strawberries and rhubarb. Spoon filling onto crust. Sprinkle with reserved crumbly mixture.
3. Bake 40 to 50 minutes or until topping is golden brown and filling is set. Cool slightly, about 30 minutes. For serving pieces, cut into 5 rows by 4 rows. Serve with whipped cream. Store covered in refrigerator.

No, things aren't normally lined up that neatly. *g* It was hard to get where I could shoot the inside because there's a counter right in front of it, so I had to move things so they could be seen.
Top shelf: Egg whites, fat-free Breakstone's sour cream (yum), an olive tapenade, light sour cream, and Laughing Cow cheese wedges.
Middle shelf: Santa Cruz organic lemonade and limeade (the limeade is better), Kraft light barbecue sauce, grated reduced-fat Parmesan, sliced green olives, chocolate milk, and Mayfield skim milk. (Also some baking soda way in the back.)
Bottom shelf: Remants of Wisconsin cheddar and Emmenthal Swiss cheeses, flour tortillas, flatbread, and broccoli slaw.
Drawers: Cherries on the left, sliced mushrooms on the right.

Honey Pie
Shot in front of an old freezer door in a former frozen foods warehouse, back when I was losing my hair so fast from the chemo that it didn't make any sense to bother coloring it. (It was still just slightly lavendar, though it had faded from grape.) "Hatchet Check" was my first title for this. It was shot for a themed, juried exhibition called "Ha!" I submitted this shot and another of the guy on the other side of the door with a Japanese sword at ready and a fierce expression as a diptych. The title of the diptych was "Human Antagonism." The strange light is morning sunlight through a big glass block window.

The Real Thing...
Had to go to my local hostelry to get a glass bottle of coca cola - they only do them in plastic bottles in shops.
Disappointed with the condensation on the glass. I put the bottle in the freezer for 30 minutes, hoping it would get some really nice condensed patterns. The ice was a 2kg bag from the supermarket - there is a flash head directly underneath (a large sheet of clear perspex in between) with a sheet of blue tissue paper to give the blue effect to the ice. The bottle is then top-lit to put some detail into the scene and highlight the Coca Cola logo

Pate Brisee pastry dough, before I put it in the fridge.
1 stick of butter, cut up into small cubes, put in freezer for about 5 minutes
1.5 C all purpose flour
6 Tbsp chilled orange juice
1/2 tsp salt
(and I should have added 1 tsp sugar, but I forgot)
I added the chilled butter to the flour, incorporating with a fork, working quickly, until everything was kind of crumbly. I added the chilled OJ, and worked it to form a doughy form. I formed it into a ball, wrapped it with foil, and popped it into the refrigerator for an hour. Rolled it out into 1/8 in thickness (I didn't have enough space to roll it out to fit my pan, so the edges didn't go all the way up the sides.
Pricked it with a fork, lined the inside with foil, and filled it with beans to weigh it down. Baked it at 400 F for about 30 minutes.
Rolling Out the Crust
January 23rd is National Pie Day, so I made pie crust last night, flattend the crust into two disks, wrapped them in plastic wrap and put them in the refrigerator. Today I got started by rolling out the bottom crust.

I found these crazy frozen drips under the freezer of a dorm-sized fridge (in the actual fridge space). They looked like an alien landscape... so, I added an explorer. I wish I'd found him in the fridge, too.

igloo cake
yeah so, yeah. i made an igloo cake. it was a hit. even if people didn't like it, it was TOTALLY worth it to see everyone's face when they opened the freezer and didn't know it was there.

Electricity
Gratitude (93) I am grateful for electricity, which is back on this morning . . . We lost it last night in a thunderstorm – woke up to booms, and the electric clock was blinking. What I missed most of all was LIGHT – being able to turn on a light with the flick of a switch. Was also worried about losing the food in the refrigerator, as happened last fall . . . and not having the television and computer in the morning.
They're All Looking at Me
Come to find out there is a light switch that will turn on a light in the room full of dolls that you can't enter but can only peer into. One would think this would make this scene slightly less creepy, but it doesn't. I like that there's a bear trap in the middle of the floor.

INGREDIENTS
Crust
1 box (15 oz) Pillsbury® refrigerated pie crusts, softened as directed on box
1 package (7 oz) almond paste
1/4 cup toasted sliced almonds
1/4 cup granulated sugar
Filling (first layer)
1 1/2 cups granulated sugar
6 tablespoons cornstarch
1/4 teaspoon salt
1/2 cup cold water
1/3 cup fresh lemon juice
3 eggs yolks, well beaten
2 tablespoons butter
1 1/2 cups boiling water
1 teaspoon lemon extract
1 teaspoon lemon peel
3 drops yellow food color
Filling (second layer)
1 cup powdered sugar
1 package (8 oz) cream cheese, softened
1 1/2 cups whole milk
2 boxes (4-serving size each) lemon instant pudding and pie filling mix
Garnish
1/2 cup powdered sugar
4 oz mascarpone cheese
1 cup whipping cream
DIRECTIONS
1. Heat oven to 350°F. Unroll 1 pie crust in ungreased 9-inch pie plate. Press firmly against side and bottom. In food processor, crumble almond paste; add almonds and 1/4 cup granulated sugar. Cover; process 1 minute. Spread in crust-lined pie plate. Top with second crust; press down. Crimp edges together. Prick crust several times with fork. Bake about 30 minutes or until golden brown.
2. In 2-quart saucepan, mix 1 1/2 cups granulated sugar, the cornstarch and salt with wire whisk. Beat in cold water and lemon juice. Add egg yolks; beat until smooth. Add butter; gradually stir in boiling water. Heat to boiling over medium heat, stirring constantly. Boil 2 minutes. Remove from heat; add lemon extract, lemon peel and food color. Cover surface with plastic wrap. Cool 30 minutes. Pour into pie plate. Refrigerate 30 minutes.
3. Meanwhile, in small bowl, beat 1 cup powdered sugar and the cream cheese with electric mixer on medium speed until smooth. Beat in milk until well blended. Add pudding; beat 2 minutes longer or until thickened. Pour into pie plate.
4. In medium bowl, beat garnish ingredients with electric mixer on high speed about 2 minutes or until stiff peaks form. Place mixture in decorating bag fitted with star tip. Decorate top of pie as desired. Cover and refrigerate any remaining pie.

INGREDIENTS:

6 cups sliced peeled apples
3 cups sliced peeled fresh peaches or 1 can (29 oz) sliced peaches, drained
1 tablespoon fresh lemon juice
3/4 cup granulated sugar
1/2 cup pie filling enhancer (thickener)
1 tablespoon cornstarch
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup fresh or frozen (partially thawed) blueberries
1/2 teaspoon vanilla
Crumb Topping
1 cup all-purpose flour
2/3 cup packed brown sugar
1/2 cup old-fashioned oats
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, cold
1/2 teaspoon milk
Coarse sugar
DIRECTIONS:
1. Heat oven to 400°F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch deep dish glass pie plate. In large bowl, place apples and peaches. Add lemon juice; toss to coat.
2. In medium bowl, mix 3/4 cup granulated sugar, the pie filling enhancer, cornstarch, 1/2 teaspoon salt and 1/2 teaspoon cinnamon. Sprinkle over apples and peaches; toss to mix well. Gently stir in blueberries and vanilla. Spoon into crust-lined plate.
3. In another medium bowl, place all crumb topping ingredients except milk and coarse sugar. With pastry blender, cut in butter until mixture looks like fine crumbs. Sprinkle topping on pie; press down lightly.
4. To make lattice top, cut second crust into 1/2-inch-wide strips with pastry cutter. Place half of the strips across filling in pie plate. Weave remaining strips with first strips to form lattice. Trim ends of strips even with edge of bottom crust. Fold trimmed edge of bottom crust over ends of strips, forming a high stand-up rim. Seal and flute. Brush lattice strips with milk and sprinkle with coarse sugar.
5. Cover crust with sheet of foil to prevent excessive browning; bake 30 minutes. Remove foil; reduce oven temperature to 350°F. Bake 35 to 40 minutes longer or until top is golden brown. Cool at least 2 hours before serving.
