The Quest for a Perfect Cup of Coffee
It is generally agreed that there are four basic elements critical to the perfect cup:
Water & Coffee Filters
Element 1. Water:
Coffee is 98% water. Often overlooked, the quality of the water is as important as the quality of the coffee. A good rule of thumb is that if your water doesn’t taste good from the tap, it won’t taste any better in your coffee. That’s why Cuisinart has added a water filter to the Brew Central coffeemaker. The charcoal water filter removes chlorine, bad tastes and odors, for the purest cup of coffee every time.
Element 2. Coffee:
While the bulk of the liquid is water, all of the flavor should be from the coffee. To achieve the same great quality of coffee you receive at a coffee bar, you need to use the same quality beans. Buy the beans fresh and whole, only about a two weeks’ supply at a time for maximum freshness. Once the coffee bean is broken, its flavor degrades very quickly. If it is not practical to buy small supplies, we recommend you separate larger amounts of beans into one to two week portions immediately after purchase, and freeze them in airtight containers. The best way to maximize freshness is to minimize exposure to air, light and moisture. So, once removed from the freezer, beans should be maintained in a sealed container at room temperature, since damaging condensation occurs every time the beans are removed from the freezer or refrigerator. Note that some coffee experts advise against freezing dark-roast beans, because freezing can cause the oils to coagulate. Other experts disagree. We suggest you experiment and decide yourself.
The Perfect Cup of Coffee
Element 3. Grind:
The grind of the coffee is critical for proper flavor extraction. If the grind is too fine, over extraction and bitterness will result. Too fine a grind may also clog the filter. If the grind is too coarse, the water will pass through too quickly and the desired flavors will not be extracted. A medium-fine grind is recommended.
Element 4. Proportion:
The cups on the Cuisinart coffeemaker measure 5 ounces. Add the amount of ground coffee that corresponds to the number of cups being brewed. Many coffee bars and the Specialty Coffee Association of America recommend adding 2 rounded tablespoons of coffee per 6 ounces of water. Some coffee manufactures recommend using 1 tablespoon per cup. Cuisinart recommends using 1 tablespoon of ground coffee per cup, but use more or less to suit your taste. Note: the maximum capacity for ground coffee is 15 tablespoons for the 12-cup coffeemaker. Exceeding this amount may cause overflow if the coffee is too finely ground.

Water Reservoir: When filling the coffeemaker with water, refer to the carafe height markings and fill to the desired number of cups. Be sure to add a small amount of extra water to account for the amount of water lost in wetting the grounds and lost as steam during the brewing process.
Showerhead: Distributes water evenly over coffee, reducing temperature loss as water passes through grounds.
Water Filter: Charcoal water filter eliminates chlorine, calcium and bad tastes or odors from tap water. Cuisinart recommends changing the water filter every 60 days or 60 uses ? or more often if you have hard water.
Filter Basket: Holds a #4 paper filter or a permanent filter.
LCD Digital Clock: Displays the time of day and set time for automatic functions.
Function Knob and Flip Switch: Used to initiate programming of automatic functions.
The Auto On feature is used to program the start time of the brew cycle. The Auto On can be set for any time, day or night. The PM indicator is displayed on the LCD for nighttime program times. The Auto Off feature is used to shut off the coffeemaker at a preset time, anywhere from 0 to 4 hours. Note: To program the coffeemaker to shut off automatically, read the instructions included in the Instruction Manual under 'To program the Variable Auto Off'
Heater Plate Control Knob: For controlling the temperature of the coffee after brewing. There are three temperature settings high, medium and low.
1-4 Cup Setting: The 1-4 cup setting button is used when you make small amounts of coffee. Normal coffeemakers will produce a colder batch of coffee when smaller amounts are made, because the heater doesn’t have enough time to properly ‘warm up’ to heat a small amount. The 1-4 setting basically ‘double heats’ the water, making your smaller amounts as piping hot as a full pot would be. To use simply press the 1-4 button on the control panel after turning on the unit.
Retro-style flip switch is used to turn your coffeemaker on and off and works in tandem with the function knob.
Clean Setting: Tells you when it’s time to clean your coffeemaker. Remove built-up calcification from the water reservoir, to help extend the life of your coffeemaker.
Brew Pause: Stops flow of coffee from basket when carafe is removed (30 seconds max) from the heater plate, so a cup can be poured in mid-brew. Since the flavor extraction rate varies during the brew cycle, we recommend allowing the brewing cycle to finish before pouring the coffee. The coffee brewed at the beginning of the cycle has a flavor profile which is very different from the flavor at the end of the cycle. Once the coffee has finished brewing, stir it before serving to blend the flavors. The coffee at the bottom of the carafe will be somewhat stronger than the coffee at the top.
Carafe: The easy pour, no drip glass carafe has an ergonomic handle and brewed coffee markings for two to twelve cups.
Heating Plate: Scratch resistant with black, nonstick coating.
Ready Tone: Signals the end of the brew cycle with five beeps (coffee will continue to stream from the filter for a few seconds after the tone).

You left behind a microwave, a beanbag chair with a rip in the side, and me. I needed the microwave, but the beanbag chair with a rip in the side… well… I brought it all the way down 4 flights of stairs, but I just couldn’t drag it across the yard and out to the dumpster in the alley. So I left it sitting there - partly on the cobblestone patio we put in last year – but mostly off. I pretend it’s intentional – it’s funky lawn furniture – in reality, though – it’s just funky. All winter long it sat there – the rip growing larger – I’m guessing it’s the work of possum – or stray cats – or rats – or June bugs (although it’s only May)…
Yeah… it’s full of funk. It’s killing the lawn – but it keeps me connected while I feel utterly disconnected – shuffled around and misconnected. I grew into you while you grew out of me. (how can you tell which is the side of a bean-bag chair?) Sometimes – when I remember us together – I think I only remember me.

Double-Bean Burritos
COOKING LIGHT
1 (3 1/2-ounce) bag boil-in-bag brown rice
1 cup chunky bottled salsa
1 (15-ounce) can black beans, rinsed and drained
6 (10-inch) flour tortillas
6 tablespoons bean dip (such as Frito Lay)
3/4 cup (3 ounces) shredded Monterey Jack cheese with jalapeno peppers
1 peeled avocado, cut into 6 slices
12 cilantro sprigs
6 lime wedges (optional)
Cook rice according to package directions, omitting salt and fat.
While rice cooks, combine salsa and black beans in a small saucepan; cook over medium heat 5 minutes or until thoroughly heated. Stack tortillas; wrap stack in damp paper towels. Microwave at high 25 seconds or until warm.
Spread 1 tablespoon bean dip over each tortilla; top each tortilla with 1/4 cup rice, 1/3 cup black bean mixture, 2 tablespoons cheese, 1 avocado slice, and 2 cilantro sprigs; roll up. Serve with lime wedges, if desired.
Yield: 6 servings (serving size: 1 burrito)

The felt pads on the front inside faces of the shelf brackets were only part of the story. They would push the shelf forward a bit, but not enough to get the shelf to sit level, and stably on the front wall of the piano hutch's trough-shelf. For that, I turned to UHMWPE, or ultra-high molecular weight polyethylene. I happened to have some sitting around in rod form, but only this one piece. I actually have 2 bins of the stuff, but only in 2"-3" diameter chunks. The two ends of this thin rod were mangled, and beveled, so I ran out to the garage to trim them each on the miter saw. This is the result.

Close up of the shelf bracket with clothes rod installed. Note the color, I hated this color so we changed to the same color as the walls, much better I think. The brackets are made of some very old white pine I salvaged from some shelves in an old building I once worked at many many years ago. See, never through away anything it will be used one day is my motto.

Shelf
I love plants. Plants just seem to follow me home and then grow like a tiny jungle in my apartment. And I love them for it.
I've rearranged the built-in bookcase in our living room/dining room area and outfitted it with some little can lights from IKRAPPA and I think the makeover has been alovely and reasonably inexpensive success.
Truth be told, these plants in particular had been living on the one end of my dining room table, which, when there are only two of us eating at a large rectangular table, is no big deal, but I've been entertaining more and having ot move and replace the plants on my table. And they were jsut looking cluttered. But at least they were getting light from the three full windows leading out to the balcony. And so when I decided to use the shelving I already had to make them a new home, I couoldn't bear the idea of moving them away from the small amount of light that they currently get and stick them in little cubbies to fade away without any sunshine at all. So ta-da! Electric lighting! Which isn't as great, but I've had plants grow toward s lightbulbs before and it's way better than nothing. Or being frozen out on the balcony.
And besides, it's really interesting to look at, and lets me display a few of my interesting things. (But only a few! I suffer from "must cram a ton of stuff onto every available shelf" syndrome.)
Kitchen Plans
Here's the basic layout.
The plan:
- Build a bar area to the left of the oven. It would have 2 open shelves -- one for the microwave and one for books or bowls. Behind the bar would be room for 2 or 3 barstools.
- Build a pantry with doors to replace the wire shelves.
- Re-set some of the cabinets. The house is old, the floor is not even, and the cabinets aren't level.
- Tile the countertop with travertine tile.
- Install a window sill in the window behind the sink.
- Install a new stainless steel dishwasher.
- Finish the ceiling (right now there's bare wood around the stove hood and raw wallboard).

We made a nice loop hike up the Hugh Norris trail, down the Esperanza Trail,and back around via Dobe Wash and Bajada Wash.
That arctic weather that's covering the eastern and central US now? It was chilling New Mexico while we were in Arizona. We were glad to be there!
Sharp-Lobed Hepatica
Sharp-Lobed Hepatica (Hepatica acutiloba) has pointed basal leaves that are three-lobed. The 6 to 10 petals, which appear at the end of the stalk, can be white, pink, lavender, or blue. There are three bracts below each flower. It grows in rich, moist woods.
