Until last Monday the only corned beef dinner I'd ever eaten was my dad's. His cabbage is sauteed in butter and brown sugar, the large chunks of boiled potato are slathered in a "sauce" of thinned mashed potatoes and the corned beef is tender and sliced thin. On Monday a friend ordered the corned beef platter at a local bar. It was good, actually quite good, but it reminded me of how damn lucky I am to eat my dad's food every day :) Happy St. Patties Day!

Ingredients:


1-1/2 cups fresh whole wheat bread crumbs (from 2 to 3 slices firm bread)
1/2 cup milk
1 large egg
3 cloves garlic, finely minced
1 cup grated parmesan cheese
1/4 cup minced fresh basil
1/4 cup minced fresh flat-leaf parsley
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper, or more to taste
1 pound ground dark meat turkey
Olive oil
4 cups marinara sauce, homemade or store-bought
6 hoagie rolls, split in half

Make It:

Place the bread crumbs in a medium-size bowl and add the milk,
stirring to combine. Let the mixture sit at room temperature for 10 minutes.
Add the egg, garlic, parmesan, basil, parsley, salt, and pepper, and stir to blend.
Add the ground turkey and use your hands to combine the mixture; don’t overmix.

Position a rack in the middle of the oven and preheat to 350 degrees F.
Generously oil the bottom of a heavy oven-proof skillet, such as cast iron, or a baking pan;
set aside.

To make the meatballs, fill either a 1/4-cup or a 1/3-cup dry measuring
cup level with the brim. (You’ll get 10 meatballs with a 1/4 cup, 8 with a 1/3 cup.)
Arrange the meatballs so that they don’t touch each other in the prepared skillet.

Bake the meatballs for 35 minutes. Pour the marinara sauce into the skillet,
using a spoon to cover each of the meatballs with some of the sauce
(to keep them from drying out). Continue baking for 45 minutes.
Remove the pan from the oven and let the meatballs cool for 5 to 10 minutes.

Place 2 to 3 meatballs on half of a hoagie bun and top with a dollop of sauce.
Cover with the top of the roll. Repeat with the remaining subs.

So, I made a weekend breakfast for my wife and my mother-in-law. My wife is delighted that I’m cooking; my mother-in-law has been caught in her dementia loop and is rereading the same page of the paper for the umpteenth time. It’s O.K., it’s just short term issues that are indeed issues; she can recall other events with great accuracy and speed. And, she appreciates my cooking, at least in the here and now.

I chose waffles. Weekends are different from our normal, be sensible, “but-yogurt-is-so good-for- you-eat-light-run-out-the-door-workday-breakfasts.” “Save the calories for the weekend”, we say, doing the unofficial weight watchers thing, counting points, saving them for a weekend splurge, saving them for now.

I use a 1940’s era waffle iron, handed down through the family, at one time belonging to my mother-in-laws sister. It’s heavy and makes perfect waffles, and not just ordinary waffles; I am, after all, an artist. Using the old iron for me was a touch of poetic synchronicity for my mother-in-law, combining the indelible memories of her past with the cloudy present. She glanced over as I plugged it in and said with a grin, “Isn’t that Bessie’s old waffle iron?” I nodded and she said “That’s great! Do you like to cook?”

I made them from scratch, with organic rolled oats, a healthy dose of molasses, and a couple of handfuls of pecans. Pretty, different textures, tasty and lots of fiber for our baby boom generation dietary sensibilities.

“Something to cut the sweet”, I thought to myself, something to go along with waffles that my mother-in-law would remember and appreciate. I take inventory in the fridge seeking the perfect accompaniment. The answer of course was right in front of me, that hiding in plain sight thing. As I moved the eggs to check out what was hidden in back, I automatically set the eggs on the counter and smiled at the obvious… 3-minute eggs, a throw back to earlier times, a glimpse of familiarity, and a novelty to cap off the celebration of the weekend.

I had no egg cups, we used to serve our soft-boiled eggs in a small bowl with butter and salt and pepper. But I wanted it done like it was when my mother-in-law was cooking. Improvisation seemed to be the order of the day, and shot glasses were just the right size. No egg cups, but I have lots of shot glasses. A man needs priorities.

Breakfast is served. My mother-in-law smiled and asked if I like to cook. My wife smiles, cracks the top off her egg with a single tap of her knife, appreciating the message of the simpler time when things were different. “After we eat, I’m going to go downstairs and see if Sky King or Fury is on the T.V.” she says. I smiled and reached for the syrup, as my mother-in-law worked on her egg with the dexterity of a surgeon. “How’s your breakfast, Nonnie?” I asked. “This is good!” she said. I smiled and dug in. “Do you like to cook? “she said. “I do” I said holding her gaze, “I really do.”

Eggs are beaten and ready

RECIPE

10 eggs
1 pound ricotta cheese
1 pound mozerella
1/2 pound mild provolone
1/2 pound swiss cheese
1/2 pound boiled ham
1/2 pound Genoa salami
1/2 pound pepperoni

Heat the oven to 390 degrees.

Get a HUGE bowl. Chop up the cheese & meat.

mix eggs and ricotta in a separate bowl.

Add egg/ricotta mixture to the chopped ingrediants in the HUGE bowl.

Mix well.

Pour into 4 8 inch pie plates.

Bake until done. Could be anywhere form 1 hour to 90 minutes.

Tatses best cold!

You may substitute Egg Beaters for real eggs. Feel free to use low fat or fat free cheese and low salt stuff. It always tatses good, no matter what. Hard to screw this one up. It isn't low calorie, so we only make it once a year on Easter.

I think it's interesting that despite the number of feral animals around (from coyotes to cats to pigeons to gulls to raccoons) that will eat anything, the processed pepperoni stick was untouched for weeks.

My recipe for turkey, favorite! Here at home everyone loves!
Soaking the turkey in a saltwater brine produces tender, juicy meat. In this recipe our brine mixture also includes buttermilk, which adds flavor to the turkey and helps keep the meat moist.
Ingredients:

* 1 1/2 cups turkey brine
* 1 quart water
* 4 quarts buttermilk
* 1 fresh turkey, 16 to 18 lb., neck, heart and gizzard removed (reserved,
if desired)
* 4 Tbs. (1/2 stick) unsalted butter, at room temperature

Directions:
In a small saucepan over high heat, combine the turkey brine and water and bring to a boil. Reduce the heat to medium-low and simmer, stirring often, until the brine dissolves, 5 to 10 minutes. Let the brine mixture cool to room temperature. In a large pot, stir together the brine mixture and buttermilk.

Rinse the turkey inside and out with cold water and place in a large brining bag. Carefully pour the buttermilk brine mixture into the bag. Seal the bag, pressing out the air, and place in a large stockpot or other container large enough to hold the turkey. Refrigerate for 24 to 36 hours, turning occasionally.

Remove the turkey from the brine; discard the brine. Rinse the turkey inside and out with cold water and pat dry with paper towels. Trim off and discard the excess fat. Place the turkey, breast side up, on a rack in a large roasting pan. Rub the skin evenly with the butter. Truss the turkey as desired using kitchen twine. Let the turkey stand at room temperature for 1 hour.

Position a rack in the lower third of an oven and preheat to 400°F.

Roast the turkey for 30 minutes. Reduce the oven temperature to 325?F and continue roasting, basting every 30 minutes with the pan juices. If the breast begins to cook too quickly, tent it loosely with aluminum foil. After about 2 hours of total roasting time, begin testing for doneness by inserting an instant-read thermometer into the thickest part of the breast and thigh, away from the bone. The breast should register 165°F and the thigh, 175°F. Total roasting time should be 3 to 4 hours.

Transfer the turkey to a carving board, cover loosely with foil and let rest for 20 to 30 minutes before carving. Serves 12 to 14.

All of this is cheaper than going to McD's for whatever I'd get there, and gets me more to eat.
Seriously:
10 ounces of ground turkey (precooked weight): About 99? (it's $1.57 a pound).
3 slices of bread: 18? (Loaf was $1.19, and I think there were 20 slices).
A whole bag of onion rings, 10-12 ounces: $1.49 (that's the whole bag, minus the six on the sandwich and the four I've eaten before the picture)
Soda, 2 liter bottle: 79?
Cheese, 1 slice: 11? (I think there was 16 slices in the pack, and I think I paid $1.79 for it)

Not factoring in Mayo, BBQ Sauce, salt, pepper, parsley, etc., because those were purchased for $1 to $2 each months ago, so their amounts are negligible. :3
Not calculating the cost of the electricity consumed, because I don't have a kill-a-watt to calc the Foreman, and couldn't calc the oven/stove if I wanted to.

1 T. unsalted butter:
1/2 c. walnuts, chopped
salt to taste
1 c. heavy cream
1/2 c. dry white wine
1/2 c. chicken broth
4 oz. creamy Gorgonzola
pinch of ground nutmeg
1 lb. fresh arugula or spinach
1 lb. refrigerated cheese tortellini

Bring a large pot of salted water to a boil for the greens and tortellini.

Toast walnuts in butter in a skillet over medium heat until golden, about 4 minutes, stirring constantly. Season with salt, then transfer to a plate to cool; set aside.

Simmer cream, wine and broth in a saucepan over medium heat until reduced by half, 8-10 minutes. Whisk in Gorgonzola and nutmeg until cheese melt and sauce is smooth; keep warm over low heat, stirring occasionally.

Cook greens in boiling pasta water just until wilted, about 30 seconds, then drain well. Bring water back to a boil; add the tortellini, and cook according to package directions; drain. Stir tortellini into the sauce and simmer 2 minutes to reheat.

To serve, divide greens and tortellini among 6 plates. Garnish with walnuts.

Per 1 1/2 cups: 555 calories, 57% cal from fat, 35g total fat, 42g carb, 567mg sodium, 3 g fiber, 19g protein.

I've tweaked this recipe too to try and bring down some of the calories/fat in it. It ends up being (per 1 cup serving, without the chicken): 300 calories, 6 g fat (3 g sat), 46 g carb, 2 g fiber, 14 g protein.

The recipe didn't include chicken, I added it in because I'm a protein freak. :)

Ingredients:
8 oz uncooked fettucine
1 1/4 cup low-sodium chicken broth
4 tsp flour
1/3 cup light cream cheese
2 tbsp grated parmesan cheese
1/4 tsp ground nutmeg
1/8 tsp pepper

Top with:
1 tbsp parmesan cheese
2 tbsp chopped fresh parsley

Cook pasta according to directions on package.
Meanwhile, combine borth and flour in medium saucepan.
Stir in cream cheese spread, 2 tbsp parmesan cheese, the nutmeg and pepper.
Cook 2 mins, stirring constantly with wire whisk until mixture boils and thickens.
Drain pasta and toss with sauce.
Sprinkle 1 tbsp parmesan cheese and parsley.

My health partner and I are on a quest to build our health -- one day at a time -- together. I'm trying to do things in 10-15 minute increments - several times per day; not like a machine, pushing myself to my limits non-stop as I did in my youth.

Based on the "10 Keys To Healthy Aging", we are trying to change our futures through small successes . . . I've slipped -- these weights would have been EIGHT pounds, but I got off track and have to start small again.

This is a hard one for me and linked to secret #9. I became obsessed with my weight and losing my baby fat, as a result I started exercising everyday (aquafit, boxing and aerobics) along with dieting.
I loved the results and started cutting down more and more on what I was eating. It ended up where all I was eating a day was a packet of these noodles, I was so pleased with the results I didn't even think anything of it. All that concerned me was the dial on the scales (even though my family had expressed their worries) The dial then started to go up even though I was getting smaller, it didn't even cross my mind that it would be muscle. I started to go swimming between classes and the result was I became ill. It started with tonsillitus(sp) which would clear up and return and it took this for me to realise how serious it had become.
I look back on pictures and can't believe how thin I was and luckily I became ill before it got to bad.
I do still diet and worry about my size (I am the biggest now I have ever been) but don't think I will let things get that bad again.
