Home
It was nice coming home for a change. The moment I stepped out of the plane, the smell of the Mediterranean breeze welcomed me to Split (Croatia).
Coming home after every six months or so, is a wonderful feeling especially this time when I know it will be another year until I am back again. I am starting my job in about 10 days so this was a great way to relax, see my family and friends and recharge with good food and plenty of Croatian speaking!
But, I cannot relax without baking. This time I decided to make marshmallows, which was the first time for me to make them. The recipe comes from a dear friend, Chef and mentor who is a pastry magician and has been a great support of mine. These turned out fantastic and something completely new for my Croatians. I made basic ones with the addition of vanilla. Lots of vanilla!
I never thought marshmallows can be that amazing, but of course, home made is the key. Alongside with ones I gave away as presents, I made some hot chocolate and drenched those bad boys in. Not to mention that my mum bought fresh, litlerally fresh milk at the market yesterday. Now you can only imagine the richness.
With a cup in my hand, I leave you with a smile on this rainy day.

The new start
Since I decided to use the opportunity that my F1 visa gives me, and that is to work for another year in the US, I gave it a shot and started trailing at different NYC restaurants since November.
I wanted to go back to Europe, but if I have a chance to do something in NYC for one year, why not explore that option? And so I did. I have seen the best kitchens and met the most amazing pastry chefs. Even though I went to some restaurants just for a day, I learned so much and the experience is unforgettable. None of that would've been possible if I didn't have the support and help from some amazing people so thank you for that.
When I was almost ready to go back to Europe for good, since no one was hiring, one spot suddenly opened at the restaurant that had my dream job.
It is funny how life can change within seconds, and that's exactly what happened to me.
As of next month, I will be joining the "Daniel" family and there are no words to describe my excitement. Yes, it is one of the hardest kitchens in NYC, but I am doing what I love and I am hungry for experience.
Lets see what this new chapter reveals. Stellar desserts for sure ;)

So far so good
Here I am! Let me tell you, this last few weeks have been crazy. As you may or may not know, I am graduating next Thursday! So you can imagine the amount of work I am covered with. But it's ok, all of that will be done soon, which on the other hand makes me sad....After three and a half years it is hard to image that the place I considered my second home will not be mine anymore.
Now it's time to move on and start playing with the big kids.
Within next two weeks I will know whether the the next chapter is in the new or the old world.
