Here are more of the dairy cattle at the Ferme des Patis. In France, they do not pasteurize milk as we do here. To rid their milk of any possible bacteria, they used ultra-high temperature processing. They keep their milk in sealed containers on the counter, with no refrigeration. This took quite a bit of getting used to!
