Refining Cooking Oil

Unexpected Salad
"Chopped Salad, Refined" from Cook's Illustrated July & August 2009. Why "Unexpected?" Because that is how The Husband described the salad when I asked him what he thought of it -- it was something he might think of ordering in a restaurant, but not something he expected to eat at home. I am both amused and offended :)
Ingredients: Organic garbanzo beans (chickpeas), romaine lettuce, grape tomatoes, and cucumber. Conventional olive oil, red wine vinegar, red onion, feta cheese, parsley.
