Tinkyada Brown Rice Pasta
Tinkyada spaghetti style brown rice pasta. The package says it's 'not mushy' but even cooking it al dente and rinsing the pasta it's still pasty and mushy. It doesn't taste bad but the texture is definitely not spaghetti like, more along the line of chow mein noodles. I added capers, sun dried tomatoes, butter, chicken stock and pepper.
Veggie Korma & Brown Basmati Rice
I love Trader Joe's korma simmer sauce. This was so easy - slice up a few carrots, add some chopped broccoli, dice a potato, cut up half a block of tofu and add the bottle of sauce. Slowly simmer for ~40 min as 3/4 cup (dry) of brown rice cooks - 3 easy meals. Dinner & lunch for the next 2 days!
