Slow roasted pork shoulder
I took the cooking process from a jamie Oliver recipe, but the rest of it was all me.
7.something lb. pork shoulder bone in, skin on but scored, rubbed with olive oil plus a paste made of garlic cloves and Balducci's citrus salt grider (rock salt & citrusy herbs). Placed on top of 2 onions, some carrots and 2 apples (cut quartered) and cooked at 400 for about 30 minutes, then turned down to 250 and roasted for about 6 more hours, added half a bottle of wine and cooked for another hour. Let rest before carving, put reduced wine & cooked fruits and veggies in a blender to make a sauce/gravy.
The pork was not falling apart, like a BBQ, which is kind of the goal, BUT it was extremely tender and VERY tasty.
