On a chilly day of early Spring 2004, we visited the Sakyamuni Pagoda at Fogong Temple in northern China, in a town called Yingxian (??, province of Shanxi). The pagoda, constructed exclusively by wooden parts and material, is the oldest standing wooden tower on Earth. It was built in AD1056, survived over ten major earthquakes, and countless numbers of battles.

Outside the temple, there is a food vendor. The setup is simple: a large plank raised to 1.5 feet above ground and 2 benches. Choice of food is few: noodle made from potato, sided with green onions and egg, with or without hot chilly source. Our taxi driver of the day, Zhao, said potato noodle is a local delicacy, and that we should try. I observed how the noodle was made, there are no cooking apparatus; noodle is served cold and prepared by bare hands.

We looked around, no signs of other restaurants or food vendors. We rush started our day early without breakfast, by then we were exhausted, cold, and hungry. So we uttered to each other: “have faith”, took a deep breath, and swallowed down a large bowl of cold potato noodle. It actually taste quite delicious, and we didn’t have any stomach problem that day.
