Slow cooked beef stew with greek style yogurt
Slow cooked short ribs and ox tail all day in tomatoes, carrots, mushrooms and mushroom broth. Added a bit of wine, bay leaf, salt and pepper, and a dash of worcestershire sauce. Cooked for about 10 hours total.
Used broth and rib meat to make a stew with cauliflower, kidney beans, cannellini beans, carrots and red peppers. Served over brown rice with a dollop of greek yogurt (sour cream would work too) and a side of fresh baked bread.
