Asian Shrimp Salad
Recipe:
Pre cut coleslaw (I used the one with white cabbage, red cabbage and carrots)
Handful of chopped basil
Handful of chopped cilantro
thinly sliced red pepper
thinly sliced cucumber
shrimp or shredded chicken or sliced steak
Dressing:
1/4 cup vegetable oil (not olive oil or any other oil that will impart flavor)
2 tablespoons fish sauce
1 tablespoon rice wine vinegar
juice from one lime
1/2 teaspoon sugar
1/2 teaspoon seasme oil
1/4 teaspoon mild soy sauce
1/2 teaspoon red pepper flakes (more or less depending on how spicy you want it)
Wisk it all together, taste and adjust seasonings, pour over salad, toss well.
Super easy and super fast. Especially if you buy your protein already cooked.
Eated!
As a meal this feeds two people nicely. As an appetizer it could feed 4-6 depending on what else you were serving.
More Pickles, plus dinner
I finally found lotus root, so to use it up I made a variety of lotus pickles. And, since I had my deep fryer out already, I made a potato side dish as well. These are all from my "Easy Japanese Pickling" book. The lemongrass shrimp, however, is from Nancie McDermott's "Quick and Easy Vietnamese."
I just realized, I flipped the marinades for the Nambanzuke and the "Fried Style". The scallions are supposed to go with the "mentsuyu" style base ( with the chile), while the quartered sections should go with the bonito sauce. I guess I actually prefer the flavoring of the "Fried style," but I also really liked the onions with it. Oh well, I guess mistakes are bound to happen when you try to make a whole bunch of similar items at the same time.
