Chicken Salad with thyme, celery and almonds
Serve 1.
Ingredients:
- 1 pc chicken breast
- 1 stalk celery, thinly sliced.
- 1 cup corn
- Handful of lettuce.
- Silvered almonds, lightly toasted.
- 2 tablespoon extra virgin olive oil
- 1.5 teaspoon thyme
- 1 tablespoon red wine vinegar
- Salt and pepper.
- Salad dressing, according to own preference.
Method:
- Whisk olive oil, thyme, red wine vinegar, salt and pepper in small bowl. Marinate chicken breast in mixture. Stand for 15 mins.
- Cook corn in microwave.
- Heat frypan with medium-high heat. Cook chicken breast, about 5 mins each side. Remove from heat, slices into bite-size chunks.
- Mix all remaining ingredients. Garnish with toasted almond, pepper and salt. Dress with salad dressing.

A beautiful, fresh green salad. Ingredients from our garden and the grocery store.
We grew:
green bell pepper (cut into thin strips),
Black Beauty zucchini (quartered longwise and sliced),
fresh basil (cut into wide ribbons),
and Lemon Boy yellow tomato (cut into bite-sized cubes).
We purchased:
romaine lettuce (torn into pieces),
white button mushrooms (sliced),
large white sweet onion (sliced into thin, short strips),
calamata olive (pitted and sliced),
tomato and basil feta cheese (crumbled),
topped with a drizzle of extra virgin olive oil and a splash of sweet balsamic vinegar.
