Chestnut Sweet Bread
I just want to use the rest of my chestnut flour, so I made this sweet bread with some chestnut flour. This is a bread that has fillings, the fillings consists of dry milk, powdered sugar, cream cheese and butter, tasts really good.
Dough
6 cups flour (one of the 6 cups is chestnut flour)
3 cups of luck warm water (I usually use a really wet dough for all of my bread, I just use chopstiks to blend my dough, I don't have to knead it, or I just need lightly knead. It is wet enough that you don't need to knead. So add less or more water depend on your style)
1 tbsp Yeast
1/4 sugar
1tsp salt
2 tbsp backing powder
2 tbsp vegetable oil
Mix the warm water and the other ingredients except flour, let it stand for 20 minutes until a thick bubble forms on the surface of water. Then pour the mixture into the flour and mix or lightly knead. You can sprinkle raisins in there, but I used out all my raisins, so I did not.
Let the dough rise until triples in volume
Separate the dough into 9 sticks about 1 in. in diameter
Fillings
Powdered Sugar 1/2 cup
Dry Milk 1/2 cup
Butter 5tbsp
Cream Cheese 5tbsp
Melt the butter and mix all the ingredients well until they stick together (add more dry milk or more butter if it is too wet or too dry)
Steps
Take 3 dough sticks, flatten the sticks a little, lay some fillings on top lengthwise and wrap the fillings, make sure no leaks.
Repeat this for each of the 3 dough sticks and then put the 3 sticks together like a braid, then connect two ends to form a circle shape.
Since the dough is pretty wet, you need to bake at a high temperature.
I baked at 475F for about 8 minutes or until golden.

Notes: Out of the meat courses, this was the most well executed. The sweet bread was soft and moist on the inside. The cornmeal crust, I liked - crispy and added a nice textural conrast and seasoning to the organ meat. The tomato sauce tasted just like canned Campbell tomato soup infused with rosemary.
The grits were a little mushy. The most compelling part of these grits was the blue cheese that laced the porridge. The least compelling - in fact mysterious - part of the grits were little unnaturally neon blue flecks dispersed throughout.
