Serves: 16
Preparation time: 10 minutes
Baking time: 18 to 22 minutes
Assembly time: 10 minutes

Crust:
Vegetable oil spray for misting the pans
Parchment or waxed paper for the pans
Flour for dusting the parchment or waxed paper
1 package plain yellow cake mix
1/4 cup water
1/4 cup packed light brown sugar
4 tablespoons (1/2 stick) butter, melted
2 large eggs

Topping:
1 container (16 ounces) frozen whipped topping, thawed (I use fat-free)
2 cups fresh strawberries, sliced
2 cups thinly sliced bananas
1 cup sliced kiwis
1 cups seedless grapes, halved

Glaze: (I always skip this step)
1/2 cup apricot preserves
2 tablespoons water

1. Place one rack in the top of the oven and another in the center and preheat oven to 350 degrees. lightly mist two 12- to 14-inch pizza pans with vegetable oil spray. (I always use just one pizza pan - maybe that makes for a thicker crust but I like it better that way). Line the pans with parchment or waxed paper. Lightly mist the paper with vegetable oil spray, then dust with flour. (I never dust with flour either. I think the spray is enough.) Shake off excess flour. Set aside.

2. For the crust, place the cake mix, water, brown sugar, butter and eggs in a large mixing bowl. Blend with an electric mixer on low speed until well blended, 1 to 2 minutes. The dough will be stiff and sticky. With a rubber spatula, spread the dough onto the prepared pans. Place one pizza pan on the top rack in the oven and place the second pan on the center rack.

3. Bake the pizza crust until it is light brown and feels firm in the center when lightly pressed with your finger, 18 to 22 minutes. Remove the pans from the oven and place them on wire racks to cool completely, 1 hour.

4. For the topping, spread the cooled pizza crusts with the whipped topping and then arrange the fruit over the top in concentric circles. Place the apricot preserves and water in a small saucepan over low heat, and stir until mixture warms. Remove the pan from the heat and strain, removing the apricot solids. Brush the strained apricot glaze over the fruit. Place the pizza in the refrigerator and chill, uncovered, until serving time, at least 1 hour.
