Went to the in-laws for dinner tonight and made my very first pavlova! Now let's not debate with it's an Aussie or Kiwi dish, but tonight it added some Oz flavour for the Australia v Brazil World Cup match.

The pav was alright. I used Delia Smith's recipe which is just 3 egg whites and 175g caster sugar, but I added 1/2 tsp white vinegar as it's meant to make it nice and chewy.

It ended up spreading like wildfire and was way too thin. I remember my mum's pavlova being like two or three inches tall! Ours was about half an inch high but I made up with that with about two inches of whipped cream!

So where did I go wrong? Did I open the oven door too much while it cooled overnight? Did I need more egg whites? Mum used to cook ours in the convection bit of our microwave oven and just leave there overnight, methinks with the door shut, and it was always perfect. Back to the drawing board!
