I just got back from our churchs womens retreat (which was awesome!), so Im still trying to catch supper solutions and get my life organized. This is what we plan to eat for supper this week:
Monday: scrambled eggs, leftovers, oranges
Tuesday: Aztec steak (recipe from Supper Solutions)
Wednesday: Salmon with Lemony White Beans
Thursday: leftovers
Friday: not sure yet
P.S. The salmon with lemony white beans was delicious! Next time, Im going to make it a one-dish meal by using canned salmon or tuna. That will also make it lightning fast.
