Homemade Microwave Lemon-Orange Curd

I found lemon curd a while ago, and fell in love with the stuff!

Microwave Lemon Curd (via AllRecipes.com)

200g white sugar
3 whole eggs + 2 yolks
235ml fresh lemon juice
3 lemons (zested)
115g unsalted butter (melted)

In a microwave-safe bowl, whisk together the sugar and eggs until smooth. Stir in lemon juice, lemon zest and butter. Cook in the microwave at one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon. Remove from the microwave, and put through a fine strainer. Pour into small sterile jars. Store for up to three weeks in the refrigerator.

I scaled this batch up (it made six small jars rather than the normal 2 larger) and made it with lemon and orange zest/juice - it's very yum!!











I need some help




I need some help





okey.. we have a very serious storage-issue. The issue being we don't have enough of it.
So yesterday we put up this shelf next to the refrigirator. In time we want to replace the white shelf with a wooden one matching the higher shelves.
The coffee machiene is going to "live" on the shelf but my dilemma is what else to put on there. I was thinking to put a small tray with coffe accesoires like spoons, the coffee and sugar next to the coffeemaker but what else??

I don't want to make it too clutterd but like this it is to empty. I've seen such nice interiors here on flickr so I'm asking you: do you have any suggestions??
