Hard-boiled Eggs

Hard-boiled Eggs

I always make deviled eggs for our annual holiday party. When I put this batch in the colander to drain, I was struck by how white they were--maybe because I added some salt to the water to hasten boiling. Black soapstone counter top provided the perfect background.

At the junction of the Leeds – Liverpool Canal with the Tarleton Canal at Rufford Top Lock on the other. The old Inn, once a row of cottages, has lots of character and a history going back to the days of working canals. Then it was sometimes known locally as ‘The Blood Tub’, the polite version of the tale being that a tub of pigs’ blood, presented by the bargees, brought free drinks in exchange and Black Puddings from the Inn’s cook in due course.

We paid a vet $15. to vacinate him against rabies and heal his wounds. The vet said we caught him in time before death was a sure thing. The vet told me that this dog would recover.

They keep them in a yard enclosure and feed and water them and tend to wounds and when they are recovered, turn them back onto the street. Sometimes they get fixed because they tend to get a kind of sexually transmitted cancer and tumors and other terrible stuff like rabies. Rabies kills 200 people a year in Nepal - it's rediculous. We should not allow it.

The rat I rescued in 2007 survived, and as I understand lived a very long life on the blessed food garbage behind Tharlam Monastery and the neighboring monasteries.

We fed this young dog more food (fried buffalo meat) than I have ever seen a dog eat at once. He drank a huge amount of water. This dog was emotionally upset that I was taking his photo as if he knew how sad he was, so I only took a couple of shots. He was very upset and that doesn't show in the pictures.

People in the streets threw stuff at this dog and kicked him - including children. Some religious upbringing hun? some Buddhism hun?

I am checking into Andrea's streetdogcare mission in Boudha Kathmandu and plan to go and visit her and help her to save, care for street animals, and see what I can do to help.

Of course like everyone I have some work to do to get there. Get a job, pay off bills, and then go.

"Some of this shit might have actually happened.

Various hounds from the southern isle descended upon Saipan for the running of the Saipan H3. Rumors had floated down to us on the growing military base of Guam that Saipan's failing everything had chased off the pack. Tonsile Tickler mentioned he had only had about six to eight people at his shoe down-down run at the beginning of July...and he would never exagerrate. We started immediately looking at schedules and arranging a viable attack date for a re-invasion of the north; perhaps they could use the inflated income from our presence to buy more advertising on local cable stations (at $10.00 a pop - we were worth at least one hundred toward to cause...).

Frantic calls to tyrant for life Haj Fucking Kramden Sir never made it through that fine communication system their mismanagement has attained after some 25 years together so Ciega was clueless to our presence until the last minute. Fear not - JoeTen was open on Saturday afternoon. A message was left for Dogleg during the week as he was on Rota and the kind Filipina that answered the phone at his domicile was hard for me to understand while bomb explosions went off in the museum; she must have thought I was called from Kandahar or something...When he did return the call on Saturday, he was hanging out with his youngest hasher and holding down the fort while his wife went to a funeral. Bummer not getting a chance to hash with DogLeg but he did relay the message to Ciega that invaders had reached the hotels and were moving in via rental car.

Numbers swelled at the Bank of Guam and the hares were identified as Blowjob and Buster Brown. Haj PeeWee was in attendance as were Maxcheesmo, Gulag Queen, Mr. Happy Pockets, Spiderwoman, the aforementioned Ciega and Kramden, Semen Bisquit, and other stalwarts... Trail was announced at the Japanese Wireless Station; park in the cemetery. All of this sounded rather foreboding although the hounds responded in typical Saipan fashion..."Not again", "This always ends at ...insert place name here...", "I hope its better than his last shitty trail", etc.

The box was on the roof of a bombed out Japanese wireless structure from World War Two. The stairwell to the roof of said structure was steep, concrete, and covered in vegetation - add in rusting hand rails, bomb damage, and algae. When we reached the roof Haj's PeeWee and Fucking Kramden Sir pointed out that were large holes hidden somewhere under the foliage and that we should spread out the assembled pack of now some thirty hounds which included Haj Fucking Tampon (Little Rat Pellets absconded his rental car to head to the spa), Backwash, Silent But Deadly, Dugong and his wife, Just Josh (who Cockcaller had called "Gay Flower" all night the night before on the pub crawl), and Overdue Goo. After the interminable ten minute wait to chase chariot riding hares, we broke box as slowly as we could down the stairs so nobody would die...

Trail led directly into a marijuana field hidden in the tangantangan and across of former dump before emerging from the bush onto a coral road. The check broke rather obviously left as the tire tracks headed that way and the speed at which the on-on's had been dropped gained pace according to the streaks of flour now reaching nearly two feet. We hit another check and ran across a finely mowed yard (oh what will they do when they have to pay American minimum wages...I doubt some people in Saipan have done their own laundry in ten years). Trail broke into the jungle and immediately was slowed by the wild hibiscus, rattan, and grooved out soil and rock. A small ditch suddenly evolved into a trench and then into a full on dried out river ravine that had cut the surface down to bare limestone falls. Water was replaced by slimy rocks that made butt sliding the only option in some sections. Backwash ran with Haj Fucking Tampon and myself for quite some time as trees broke off in our grasp and vines would strangle each hound in order as you passed through them. Contortions of world class bank robbers were required to navigate through the uncut brush. Backwash slowly fell back as we pushed the pace down the river valley. Haj PeeWee could be heard descending the valley where he joined us at the bottom of the hill near Chalan pale Arnold Road. An easy check (another one) led us past a "Juan Babauta" campaign placard complete with a beer swilling Juan Babauta who said something that sounded like "Blah, blah, blah, yada, yada, yada" as we passed by (I could be mistaken in that - after all he was running for office and I rarely hear them correctly or so it seems four years later).

A trio of trunk beer drinking guys by the warehouses in the industrial section of Saipan's northern Garapan and port area offered us Budweisers as Haj Pee Wee ran passed us in a creative shortcut through the buildings....athlete! Trail ended at some beach nea

My account was hacked long ago, but now my little sister has one. I play games for her to earn her points.

Lets just say her points have more than tripled since I started playing for her....

Tortellini Soup

Tortellini Soup

There's a soup swap in Irvington on Wednesday. I created a simple soup to bring. The rule was you had to use at least one local ingredient. I used dried herbs and powders because during the Indiana winter, I find the fresh stuff to not be very "green" in the sense that they're generally trucked in for hundreds or thousands of miles. You could add more veggies (tomatoes, carrots, etc.) but this is what I had on-hand.

Ingredient list:
refrigerated tortellini-1 package
cannellini beans-1 can
Italian sausage (my local item)-1 raw link
fresh spinach-a handful or 2
tomato paste (Red Gold...also "local")-1 can
parmesan cheese-to taste
Italian herbs, seasonings-to taste

Note there is no added salt, and that most of the protein comes from from the beans NOT the sausage...which is more for flavor. Only 4-5 oz. of sausage were used to make about 3 quarts of soup. The cheese adds the salty flavor boost. The entire process takes less than 30 minutes.

1-boil water (maybe 6 cups?) in a large pot and add the tomato paste to it...stir to blend
2-cook the sausage in a skillet (if it's in a link, remove the casing), break it up into small pieces
3-drain the fat off the sausage, and add the cooked sausage to the tomato broth
4-add the (drained) cannellini beans and the package of tortellini, continue to gently boil
5-season the soup generously with onion powder, garlic powder, fresh cracked pepper, Italian herb seasoning, red pepper flakes (if desired), distressed/ground celery seed
6-add 1-2 handfuls of fresh baby spinach leaves alongside the seasonings, stir, and simmer for 2-3 more minutes
7-ladle into a bowl and sprinkle with freshly grated (or the green canister type) parmesan cheese

French Onion Soup (recipe)

French Onion Soup (recipe)

French Onion Soup

2 white or yellow onions, sliced thin
3 tbsp butter
2 tbsp white wine approx.
? tsp sugar
1 tbsp flour
4 cups beef broth or water with 1 bullion cube
Sea salt
Fresh ground pepper
1 cup mozz cheese
? cup parmesan
? cup asiago cheese
Stale sourdough bread, cubed

Cook the onions with the butter on medium low heat for 10-20 minutes (should carmelize and turn a golden color). Add the white wine, sugar, and cook a few more minutes.

Whisk the flour in with the broth so it doesn't clump and pour the broth mixture in, salt and pepper to taste. Bring to a boil. Reduce heat and simmer covered for 10-15 minutes (more if you feel like it, but I was hungry).

Pour the soup into small oven safe dishes and put the bread on top of the soup, cover with the cheeses and either bake at 400* until the cheese browns, or broil it.

Anticipation

Anticipation

Why must April's homemade Bolognese sauce take SO long to cook! It's making me really nuts. And I'm usually a very patient mental patient...er...man.

BTW, this isn't a family recipe or anything. It came from some internet site a while ago. Don't recall which one, but here it is for those who asked. My apologies to the author, since I can't recall its origin. I have April leave out the celery because I really loathe celery.

Bolognese Sauce - Ragu alla bolognese

Total time: 1 hour 15 minutes

Preparation time: 10-15 minutes
Cooking time: At least 2-3 hours
Cost: Reasonable
Difficulty: Easy

Chef's Note
This traditional recipe originated in Emilia-Romagna, Italy's richest gastronomic region.

There's no better place to savour traditional Bolognese sauce with delicious pasta than in Bologna, a city with a wealth of Roman and medieval ruins. (And while you're here you might also sample the famous ham from the neighbouring town of Parma.) There exist as many versions of the sauce as there are cooks in Bologna. The recipe can vary in proportions or in the addition of certain ingredients, but the basic recipe remains the same - one to which cooks add their own personal touches!

Pasta with Bolognese sauce is served as a first course or as a side dish with breaded veal scaloppini. But whatever the menu, don't forget to pour a glass of Lambrusco, a wine from the region.

Tips
We've suggested a simmering time of two to three hours, but if you have the time, let the sauce simmer over low heat for four to six hours. The principle is simple: the longer the sauce simmers, the richer the flavour and consistency become. Be sure to stir it regularly so that it doesn't stick., always using a wooden spoon. Metal can oxidize in contact with tomato and leave an unpleasant metallic taste.

Uses
Even though this sauce is usually paired with spaghetti, it is also good with tagliatelle or lasagne.

Ingredients

* 125 g (4 oz.) lean ground pork
* 375 g (13 oz.) ground beef
* 125 g (5 oz.) smoked ham
* 125 g (5 oz.) chicken livers (optional)
* 2 onions, chopped
* 4 tbsp. chopped carrot
* 125 ml (1/2 cup) chopped celery
* 4 tbsp. butter
* 2 tbsp. olive oil
* 125 ml (1/2 cup) red or white wine
* 500 ml (2 cups) beef stock
* 800 g (1 3/4 lb.) peeled tomatoes + 2 tbsp. tomato paste
* 3 tbsp. cream (optional)
* Salt, pepper
* Bay leaves, basil (optional)

Method

1. Make a "battuto" - in other words, chop all the vegetables (don't forget to remove the "strings" from the celery before chopping);
2. Saute the onion, carrot and celery over low heat in oil (or oil and butter); sweat the vegetables until they colour slightly;
3. add the garlic, stirring well with a wooden spoon;
4. add the ground meat and cook over low heat, breaking the meat up with a fork. Season with salt and pepper;
5. deglaze with the white or red wine; increase the heat and cook until the wine has evaporated. Add the quartered tomatoes and the tomato paste, thinned with a little tomato juice, water or broth.
6. Season with the bay leaves and basil, if using, and combine well.
7. Increase the heat to medium so that the sauce boils gently; cover the pot and let simmer for two to three hours, adding more broth as necessary.
8. If you are using cream, add it an hour before the end of the cooking time; remove the bay leaves before serving. The cream will tend to cut some of the tomato's acidity.

Buon appetito!

ham and egg cups

ham and egg cups

Preheat oven to 400 degrees. Spray muffin tin with butter spray, or lightly oil with vegetable oil. Place slice of ham in cup, fold in any excess (you don't want the edges flopping out and laying over each other). Put about a tablespoon of caramelized sweet Vidalia onion and grated smoked Gouda cheese* in each cup. Top with an egg. Bake for about 20 minutes or until eggs are set.

*You can of course use literally any toppings you wish. The first time I made these I used goat cheese and Pesto alla Genovese. Use regular deli ham, not paper thin but thin enough to easily go into the cups. The edges look burned, but that's just because I used Black Forest ham, which has that black glaze. The eggs are going to be solid; you can't bake eggs and wind up with a runny yolk. Texture-wise they're like a poached or medium-boiled egg. Sometimes you will get an egg that bubbles as it cooks (see lower right corner); it looks weird but is a normal process of cooking and tastes fine.

Time-saving tip: Caramelize the onions the night before and store in the fridge in an airtight container.

egg patties.

egg patties.

Since I've gotten some questions about how I make my breakfast sandwiches on Twitter, I thought I'd post a "recipe".

Basically, I have four Norpro silicone egg rounds, and I use 6 eggs (1.5 eggs per round), which I whisk together with some shredded cheese (here, a "Mexican" mix). I cook them at 200 on our "Liddle Griddle". Once they're set, I remove the rings and flip them to finish cooking the tops. Then I stack them in a ziplock container and keep them in the fridge.

In the mornings, I toast up an english muffin, and then reheat the egg patty for 30-40 seconds in the microwave to stick inside. Totally delicious and filling.

THE HMAS ADELAIDE PROJECT with Graeme Andrews. Petty Officers of the ship, Circa 1940 - Photo GKAC.

3844. In the first year of the war, HMAS ADELAIDE'S work was mainly involved in the escort of convoys between Australia's East Coast to Fremantle in the West, and some way beyond. Her charges and those of other RAN ships, included the great troop convoys leaving New Zealand and Australia for the Middle East.

During this time eventually all of Australia's frontline cruisers and destroyers, even the small sloops and AMCs were deployed across the world, to the Mediterranean, the Indian Ocean, the Arabian Gulf, the Red Sea and the Atlantic, but ADELAIDE's keel continued to plough a dreary furrow back and forth across The Great Australian Bight, between the country's East and West Coasts.

Then, as the first anniversary of the war approached, Charles de Gaulle's new Free French government in exile approached the British Government, and asked that a warship be sent to Noumea to prevent France's Pacific colony of New Caledonia from falling into the hands of the Vichy side.

The request passed to Australia, which had a vital interest in the matter, as New Caledonia straddled its sea lanes and lines of communication East towards the United States.

Already at least one quite powerful Vichy French colonial sloop, the DUMONT D'URVILLE, with three 5.5 inch guns and a spotter aircraft, was known to be at Noumea, with another thought to be on the way.

Australia looked around, and found that - with deployments abroad and refits - it had only one warship of any significant size available to send.

HMAS ADELAIDE was about to have her most intriguing war adventure, in the face of great danger. If the second French Sloop turned up, the Navy Office in Melbourne believed the old cruiser would probably be overwhelmed.

As it was, ADELAIDE would achieve her most significant success of the war, a very close run thing, but pulled off without a shot being fired.

NEXT; INTRIGUE AND THE GAME OF BLUFF IN NOUMEA.

Day 291 - The Bright Side of Solitude

Day 291 - The Bright Side of Solitude

They say that there are a lot of positives about traveling alone, and one that frequently comes up is the ability to do anything, any time, on your terms. And while that's true, it's not really all that big a positive for me given how Joanne and I tend to agree on most things when we travel.

However, it became apparent to me today as I took the tram back and got into the Caesars Forum in Vegas after all my classes were done for the day. With at least 5 hours left before I could even consider going to the airport to check in, I walked around the Forum Shops and looked for a new duffel bag to reduce my backpack + messenger bag to just one carry around. I remember a fellow passenger had a nice Louis Vuitton one from my previous trip to Vegas, so I figured why not? I looked in Burberry, Louis Vuitton, Gucci, Armani, and all manner of fancy stores. Eventually I settled on a Gucci "Guccisama" leather duffel that just looked great and felt deliciously soft. But, I figured I'd think it over during lunch before heading to the Tom Ford store located in the Crystal Shops in the new City Center.

Lunch consisted of Katana rolls and this teriyaki beef lunch. Now when I say Teriyaki beef, it's already got a terrible connotation of Edo or Tokyo Express lunch boxes that are essentially sliced beef drenched in teriyaki sauce - nothing amazing. Here at Sushi Roku however (and actually at the Ichiban restaurant in the Bally's as well), the beef is actually steak cooked medium rare in a tangy and actually complex teriyaki sauce. I was quite blown away!

What's more interesting is that when I first walked into the Forum Shops I knew I wanted to leave Las Vegas on a high note, and that normally would mean Hibachi Steak from the Cheesecake Factory which I had on my second day here. But given the Shock and Awe night I had on Sunday, I knew that in truth, if I wanted to leave on a high note, I couldn't go back to the Cheesecake Factory...not when there's Sushi Roku just two more floors up. And hence, why you see this photo.

Fact is, even if Joanne were here, we'd still have gone to Sushi Roku because we both love sushi. I'm not going to lie, if you'd prefer traveling alone than with your significant other because it offers more freedom, perhaps you need to re-evaluate why you're traveling through life with them in the first place.

Corn was ground manually on the small tool you see in the middle, with a bowl on it, then cooked with some vegetables in earthenware on low fire inside a hole in the ground. Other pots were for keeping the grains or the water.
The littke dog was only sleeping. He was not to be prepared as part of the food.

She coordinated a braai, a South African BBQ, one night. That's a huge pot of pap on the stove, which she served with a yummy tomato gravy.

Shepherds Pie or what to do when you have left over mashed potatoes

Shepherds Pie or what to do when you have left over mashed potatoes

I combined a few recipes I found and added some things because i had them.

Saute 1/2 an onion chopped,
2 carrots chopped,
1 sliced zucchini,
1 clove garlic,
salt, pepper, basil and thyme
in olive oil until cooked but crunchy. Remove from pan.
Brown about 1/2 lb ground beef, and drain the grease. (drain it - it's gross, it's NOT gravy)
Add about 1/2 cup each peas and corn, frozen is ok don't stress it.

Now make a "gravy" in a small sauce pan:
melt 2 tbsp butter and when bubbly whisk in
2 tbsp flour (I use pancake mix because it is better, and no this is NOT "good for you") That thickens up quick so be ready to add about 1/2 cup broth (i use a cube in water) some wine (I've tried red or white both have been good) and about 2 tsp Worcestershire sauce. This gets thick over low heat in a minute keep whisking it. Then stir into the meat mix, add the veggie mix and smell it with your eyes closed. Make that expression like you are quietly remembering that time in 3rd grade that boy said he liked your dress and shared his fruit roll up with you. Stop don't eat it all, yet.
Spread it in a pan. Grate some cheese on top, I used Gruyere and it was good.
Now spread the mashed potatoes on top. Ours already had some sour cream and butter and love and cream cheese in them from the night before, but the potatoes you have will be fine.
Now more cheese. And paprika (which I dare anyone to say they can actually taste).
Cook it in an oven, eh...lets say 350 degrees and about 15 minutes.
It helps presentation a lot to broil at the last minute and make the top crispy.

Lentil Salad with Green Beans

Lentil Salad with Green Beans

Cooked chilled lentils, diced raw cucumbers, squash, tomatoes, carrots, yellow sweet peppers, balsamic vinegar, olive oil, onion and garlic powder. Green beans were simmered with granulated garlic and onion powder until tender.

Sorry this his didn't photograph so well in the wonky light. I need to get my good lights back out and work on more food photos again one of these days.

If you like lentils this is a nice way to enjoy them during the warm months of summer. I didn't follow any specific recipe because I don't think you can really go wrong when making most salads, but if you are interested here's basically what I did;

Boil/simmer lentils in water (according to package directions works well) for at least 30 minutes with desired seasoning (I used sea salt, pepper, garlic and onion powders and some tomato sauce) When lentils are tender, remove from heat and allow to cool then chill until ready to make salad. Dice desired veggies; I used raw zucchini, cucumber, carrots and yellow sweet peppers. I also added some fresh mild pico de gallo salsa I had already made for a little extra flavor which meant more tomatoes, peppers, lemon, garlic, onion. Combine diced veggies with cooked chilled lentils, add balsamic vinegar and olive oil as well as any other dry spices you might like. I think I also added some lemon pepper. Mix thoroughly and enjoy or chill for later.

adobo

adobo

Adobo is the name of a popular dish and cooking process in Philippine cuisine that involves meat or seafood marinated in a sauce of vinegar and garlic, browned in oil, and simmered in the marinade.

Pork adobo, with vinegar, soy sauce, garlic, onions, black pepper, and pineapples.
Although it has a name taken from the Spanish, the cooking method is indigenous to the Philippines. When the Spanish conquered the Philippines in the late 16th century and early 17th century, they encountered an indigenous cooking process which involved stewing with vinegar, which they then referred to as adobo, which is the Spanish word for seasoning or marinade. Dishes prepared in this manner eventually came to be known by this name, with the original term for the dish now lost to history.
While the adobo dish and cooking process in Filipino cuisine and the general description adobo in Spanish cuisine share similar characteristics, they refer to different things with different cultural roots. While the Philippine adobo dish can be considered adobo in the Spanish sense—a marinated dish—the Philippine usage is much more specific. Typically, pork or chicken, or a combination of both, is slowly cooked in vinegar, crushed garlic, bay leaf, black peppercorns, and soy sauce then often browned in the oven or pan-fried afterward to get the desirable crisped edges.
Adobo has been called the quintessential Philippine stew, served with rice both at daily meals and at feasts. It is commonly packed for Filipino mountaineers and travelers because it keeps well without refrigeration. Its relatively long shelf-life is due to one of its primary ingredients, vinegar, which inhibits the growth of bacteria.
