From Cooking for Geeks: Butternut Squash Soup
Puree in a food processor or with an immersion blender:
2 cups (660g) butternut squash, peeled, cubed, and roasted (about 1 medium squash)
2 cups (470g) chicken, turkey, or vegetable stock
1 small (130g) yellow onion, diced and sauteed
1/2 teaspoon (1g) salt (adjust to taste)
Notes
The weights are for the prepared ingredients and only rough suggestions. So, prepare each item individually. For example, for the squash, peel it, then coat it with olive oil, sprinkle it with salt, and roast it in the oven at a temperature around 400–425 F / 200–220 C until it begins to brown. When you go to puree the ingredients, hold back some of the squash and some of the stock, taste the puree, and see which you think it needs. Want it thicker? Add more squash. Thinner? Add more stock.
This soup by itself is very basic. Garnish with whatever else you have on hand that you think might go well, such as garlic croutons and bacon. Or top with a small dab of cream, some toasted walnuts, and dried cranberries to give it a feeling of Thanksgiving. How about a teaspoon of maple syrup, a few thin slices of beef, and some fresh oregano? Chives, sour cream, and cheddar cheese? Why not! Instead of purchasing items to follow a recipe exactly, try using leftover ingredients from other meals to complement the squash soup.
If you’re in a rush, you can “jump-start” the squash by microwaving it first. Peel and quarter the squash, using a spoon to scoop out the seeds. Then, cube it into 1–2” / 3–5 cm pieces, drop it into a glass baking pan that’s both oven and microwave safe, and nuke it for four to five minutes to partially heat the mass. Remove from microwave, coat the squash with olive oil and a light sprinkling of salt, and roast it in a preheated oven until done, about 20 to 30 minutes. If you’re not in a rush, you can skip the peeling step entirely: cut the squash in half, scoop out the seeds, add oil and salt, roast it for about an hour (until the flesh is soft), and use a spoon to scoop it out.
Pumpkin Cake
There are two broad types of cake batters: high- ratio cakes--those that have more sugar and water than flour (or by some definitions, just a lot of sugar)--and low-ratio cakes—which tend to have coarser crumbs. For high-ratio cakes, there should be more sugar than flour (by weight) and more eggs than fats (again, by weight), and the liquid mass (eggs, milk, water) should be heavier than the sugar.
Consider this pumpkin cake, which is a high-ratio cake (245g of pumpkin contains 220g of water--you can look these sorts of things up in the USDA National Nutrient Database, available online at http://www.nal.usda.gov/fnic/foodcomp/search/).
In a mixing bowl, measure out and then mix with an electric mixer to thoroughly combine:
1 cup (245g) pumpkin (canned, or roast and puree your own)
1 cup (200g) sugar
3/4 cup (160g) canola oil
2 large (120g) eggs
1 1/2 cups (180g) flour
1/4 cup (40g) raisins
2 teaspoons (5g) cinnamon
1 teaspoon (5g) baking powder
1/2 teaspoon (5g) baking soda
1/2 teaspoon (3g) salt
1/2 teaspoon (2g) vanilla extract
Transfer to a greased cake pan or spring form and bake in an oven preheated to 350 F / 175 C until a toothpick comes out dry, about 20 minutes.
Notes
Try adding dried pears soaked in brandy. You can also hold back some of the raisins and sprinkle them on top.
One nice thing about high-ratio cakes is that they don’t have much gluten, so they won’t turn out like bread, even with excessive beating. With a total weight of 920 grams, of which only roughly 20 grams is gluten, there just isn’t enough gluten present in this cake to give it a bread-like texture. There’s also a fair amount of both sugar and fats to interfere with gluten development.

DESCRIPTION

Enjoy the cheesy-bacon-broccoli combo you love in a top-the-tater pizza.

INGREDIENTS

1 can (13.8 oz) Pillsbury® refrigerated classic pizza crust
1 medium white potato
1 tablespoon CRISCO® Pure Olive Oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 box (10 oz) Green Giant® frozen broccoli and cheese sauce
2/3 cup sour cream
1 tablespoon ranch dressing
1 cup shredded Colby-Monterey Jack cheese blend (4 oz)
5 slices cooked bacon, coarsely chopped
1 small tomato, seeded, chopped (1/2 cup)
2 medium green onions, chopped (2 tablespoons)

DIRECTIONS

1.Heat oven to 375°F. Spray large cookie sheet with CRISCO® Original No-Stick Cooking Spray. Unroll pizza crust dough on cookie sheet; press dough into 13x9-inch rectangle. Bake 10 to 13 minutes or until crust is light golden brown. Remove from oven; set aside.

2.Meanwhile, pierce potato with fork; place on microwavable paper towel in microwave oven. Microwave 4 to 5 minutes, turning once, until tender. Cover; let stand 5 minutes. When potato is cool enough to handle, peel potato and cut into 1/4-inch cubes (1 cup). In small bowl, mix potato, oil, salt and pepper; set aside.

3.Cook broccoli in microwave as directed on box. Empty from pouch into another small bowl to cool slightly; set aside.

4.In another small bowl, mix sour cream and ranch dressing. Spread mixture over pizza crust to within 1/2 inch of edges of crust. Sprinkle 1/2 cup of the cheese evenly over sour cream mixture. Sprinkle with bacon.

5.Spread broccoli mixture and potato mixture evenly over bacon. Sprinkle tomato, onions and remaining 1/2 cup cheese evenly over potato mixture.

6.Bake 15 to 22 minutes longer or until crust is golden brown and cheese is melted. Let stand 5 minutes before cutting.

High Altitude (3500-6500 ft): No change.

One quart chicken stock.
Three quarts heavy whipping cream.
3 cups grated parmesan
1 cups grated asiago cheese.
4 cups grated Cheddar.
1 cup grated Monterey Jack.
2 cups grated Gruyere

Thinly sliced deli ham. 2 slices for lunch size, 3 for dinner
Sliced Mushroom
Chopped, cooked bacon. 3 strips for lunch size, 4 for dinner

Cook the chicken broth and heavy whipping cream, and add some white pepper to taste. Also add 23tablespoons onion powder and two tablespoons garlic powder. When hot, add all the cheese and cook until melted. Thicken with a mixture of cold water and cornstarch mixed together.

Cook penne noodles.

Saute the crumbled bacon, mushrooms, and ham together, and add to the noodles and sauce.

At TipTop, we mix it all toether, and microwave for 1:45.

At work we heat all this to order, and then top with a mixture of breadcrumbs, butter and parm cheese, and place under the broiler to brown.

Breadcrumb mixure.
Melt 2 sticks butter or a half pound. Mix the melted butter with 3 quarts panko breadcrumbs. Add one cup shredded parmesan cheese. Place in salamander to brown, and spinkle with chopped parsley.

Heart Healthy Cooking: Easy Lo-Fat Lo-Cholesterol Recipes






After I had by-pass surgery in 2008 my doctor gave me a list of things I shouldn't eat and a list of things I should eat. Everything I like is on the "no no" list and everything on the "good" list is tasteless. So I went digging around the internet looking for low-fat, low-cholesterol recipes that might taste good.

Now that I have a Kindle I decided to format my set of recipes into a Kindle book - and after doing that I decided to share it. So here it is, 132 low-fat, low-cholesterol, heart-healthy, easy-to-make recipes that taste good. There are soups, stews, main dishes, side dishes, beef, chicken, fish, pasta, vegetarian, desserts, etc.

The book is formatted to work well on the Kindle with a working table of contents that's broken down into several subsections. I've also included a small metric conversion section for those of you that are not used to working with cups, teaspoons, ounces, etc. Most recipes also include detailed information on calories, fat, saturated fat, cholesterol, carbohydrates, protein, fiber, sodium, and potassium, as well as serving sizes.

I prefer using a cookbook on the Kindle because I can easily bookmark recipes I want to try, insert notes, and if I want to give a copy of a recipe to a friend all I have to do is highlight the entire recipe then copy the "My Clippings" file to my computer for printing.

The stove is currently manufactured by the Swedish company Dometic AB. Currently there is a one and two burner model made either entirely from stainless steel or made with a mix of aluminum parts and stainless steel parts.

Originally a boating stove made for niche markets, the CleanCook is being adapted to serve energy needs throughout the developing world.

A conservative estimate of the stove life is 10 years.

this is a bracket i put together using 2 store bought stand adapters and a stainless steel L-bracket i had, gets the flash right where i want it!!! i put this together for my new brolly box, but this was something i wanted to do for my regular umbrellas too.

In order to join the track pieces and be able to remove them easily after Halloween, I welded brackets on every end. Then I grind it smooth and test it with a spare trolley to make sure it rolls through with out binding.

Ingredients:

4 cups Rice Chex® cereal
4 cups Wheat Chex® cereal
2 cups Parmesan-flavored crackers
2 cups pretzel twists
6 tablespoons butter
2 1/2 tablespoons hot sauce
1 packet ranch dressing mix
2 teaspoons celery seed

Directions:

1. In large microwavable bowl, mix cereals, crackers and pretzels; set aside. In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in hot sauce and seasonings. Pour over cereal mixture; stir until evenly coated.

2. Microwave uncovered on High 4 to 5 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool. Store in airtight container.

I cook sauteed tofu with fried rice and veggies 3 or 4 nights each week, because it is such a big fave for lunch and dinner. I guess you can say it is a household addiction.

It occurred to me that this would make a great tamale filling, so I modified the cooking process a bit and made tamales based on this favorite meal.

They turned out just heavenly. I truly enjoyed making these as much as I will continue to enjoy eating them.

This is basically what I used/did:

(This is not an actual recipe, just what I recall. Sorry, measurements are not given.)

Masa:
Maseca Masa Harina
Warm Water
A bit of baking powder
Salt & coarse ground black pepper
Corn Oil
Crushed Red Pepper, quite a bit

Filling:
I sliced extra firm tofu into strips, then cut them further. I sauteed just until golden brown. Seasoned with salt, coarse ground black pepper, lime juice, bit of Chardonnay.

Sauteed onions, garlic, and poblanos, along with the jasmine rice. These were sauteed in Canola oil. I use only Corn Oil for the masa, but Canola oil for sauteing rice and veggies.

The broccoli and edamame were steamed (separately) in the microwave, then the broccoli was added to the jasmine rice in the skillet. The edamame was added to the tofu/poblano/onion skillet. Before I added the edamame I stirred it into it hot chili seame oil, salt, coarse ground black pepper, and that's it.

After the rice became tender, I added it to the tofu, poblano, edamame, onion, medley. I added lime juice to both that medley and the rice/broccoli/garlic/onion saute mix.

One of the challenges in making these tamales was saving the filling to used as the filling. I must admit that I ate some, you know, just to make sure that the seasoning blend, texture, etc., were right. I made a total of about 4 dozen.

INGREDIENTS:

1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2 cup butter or margarine, melted
1 egg, slightly beaten
1 can (14 oz) sweetened condensed milk (not evaporated)
1 teaspoon instant coffee granules
1 package (11.5 oz) milk chocolate chips (2 cups)
1 package (8 oz) toffee bits (1 1/2 cups)
1 cup chopped pecans

DIRECTIONS:

1. Heat oven to 350°F. In large bowl, stir cookie mix, melted butter and egg until soft dough forms. Spread dough in bottom of a 9x13-inch ungreased pan. Bake 12 to 15 minutes or until light golden brown.

2. Meanwhile, in small microwavable bowl, microwave sweetened condensed milk uncovered on High for 1 minute. Stir in instant coffee until coffee is mostly dissolved; set aside.

3. Sprinkle warm crust with chocolate chips, toffee bits and pecans. Drizzle sweetened condensed milk mixture evenly over pecans.

4. Bake 23 to 27 minutes or until top is golden brown and bubbly in center. Cool completely, about 2 hours. For bars, cut into 9 rows by 4 rows. Store covered at room temperature.

I felt like Leonard Nimoy when he filmed that TV show ... "In Search of ...." I literally had to search for Mt. Hood which to me seemed like the disappearing mountain. I headed to Trillium Lake which is supposed to give you amazing views of Mt. Hood for a sunset shot. I arrive there and the mountain had disappeared. The result was this 3 image HDR taken from the boardwalk area. I know the mountain was there, but it was simply invisible. So my Mt. Hood shot from Trillium Lake was not in the bag this evening.

Five Tips for Buying a Heater
Choosing a space heater is a matter of sifting through a bewildering array of types, power ratings, and fuel sources. Let's break it down a little to make the process easier.
What are the different types of space heaters?

Radiant heaters emit infrared radiation that directly warms the objects in front of the heaters (rather than the surrounding air). If you only need heat by a desk or in a small section of a room, a radiant heater is quiet and will use very little power.
Forced-air heaters use a fan to blow air that has been warmed by metal or ceramic heating elements. A forced-air heater is appropriate for quickly heating up a small- to medium-sized room, but can be noisy.
Convection heaters draw cold air from the floor; the air is warmed by heating coils and emitted from the top of the heater. A convection heater is appropriate for quickly heating up a small- to medium-sized room, but also can be noisy.
Radiators work by heating oil enclosed in a reservoir, gradually heating the surrounding air. If heating speed isn't an issue, you might want to opt for a radiator. These are extremely quiet and effective--perfect for bedrooms.
Should I buy an electric or a combustion model?
If you want a heater that will be available in emergencies, or that can heat areas larger than a single room, choose a "combustion" model--one that is powered by a gas or fuel like propane, kerosene, natural gas, or diesel. Which fuel type you choose depends largely on convenience and local availability. For example, diesel would be appropriate for a heater you take with you on long car trips.
How powerful a heater do I need?
Heaters are rated by BTU, which stands for British Thermal Unit (the amount of heat needed to heat one pound of water by 1 degree F). To find out how many BTU you need:

Calculate the volume of the space to be heated by multiplying square footage by height.
Multiply that number by 4 if your insulation is poor, 3 if it's average, or 2 if it's good.
The resulting number is a ballpark figure for how many BTU you'll need.
Do space heaters cost a lot to operate?
As a general rule, electric space heaters are more expensive to use than combustion models. To ensure energy efficiency, a thermostat is a must-have feature for any heater. For radiant heaters, models with a 360 degree heating surface can heat larger spaces. If you need a forced-air heater, models with ceramic elements tend to be more efficient.
Are space heaters a fire hazard?
Space heaters are implicated in about 25,000 residential fires every year. To ensure proper safety, always follow the manufacturer's usage instructions and fill out the warranty card to receive informational updates from the manufacturer. Also, look for extra safety features such as an automatic shutoff switch that can shut down the unit if, for example, it gets upended. In addition, choose a model where the heating element is adequately enclosed within the unit.

just been for a walk with mummy, she made me wear two jackets because it's -4?C here in London. all the leaves on the ground were frozen, my feet were not too muddy as everything was frozen solid, but they got so cold, so mum put me in the shower to warm them up, then put these magic boots on my feet. these boots have some kind of beans in them, they went into a box with light, spinning for 2 mins, came out so warm. love them, but i think i may need one more pair for my front paws :P

The world has gone mad. Look at the confusing amount of info on the back of this pack. I should say early on in this rant (at the usual suspects), that although it wasn’t really my sort of thing the food was okay. Prawn toasts, wonton, vegetable spring rolls, duck in plum sauce, chicken with cashew nuts and egg (they just had to go and spoil it!) fried rice.

Mrs. L had two hospital appointments today so, in the interests of rejoining real life as quickly as possible, for a dinner plan I hit the knockdown counter at a certain well-known supermarket, you know the one, founded 1869 etc etc. Carefully avoiding the gaze of her diabetes consultant (who I think was buying cigarettes btw) I picked up a “Chinese banquet for two” reduced from ?8.69 to ?4.30 – well, something different y’know. I’d rather pay a real Chinaman a bit more, but at 3.30 in the afternoon and on my present finances that’s not an option. But, to my tale...

Now I know it’s not a brilliant photo, but you don’t need the detail. Just LOOK at all the traffic-light info! Never mind Chinese we’re talking Spaghetti Junction. 4 different sets of allergy info. Yeah, like you're gonna divide it depending on who is allergic to what and who isn't allowed any fat/sugar. IT'S A CHINESE FOR GOD'S SAKE! contents aside the whole principle is that you share the thing out. Look at the cooking instructions – a whole column of small print – it transpired that the conventional vs microwave oven pargarphs weren’t alternatives, they were complimentary – you could ONLY do the rice in the micro, and ONLY do the other bits in the conventional. Within the conventional-bits’ there was pierce this, open that, discard the next thing, give this the whole time, add that towards the end – not even do this for so long, add that and give it so much longer, no no give this a total and add that so much before the end (unless of course the sauce reduces in which case, d’oh! And forget the maths). Even the recycling instructions were in two parts, (a) most councils will collect xxx for recycling (b) sorry yyy is not yet recyclable (but keep it in the shed until HM Governemnt develops the technology???)

Like you, I am constantly told by the government I don’t work hard enough and will need to work harder to create a financially secure future. Yet they expect us all to make the time to actually read all this BS and sort our refuse into absurdly homogeneous small piles(*), while their downward pressure on prices ripples though the economy to the extent that I, a self-employed professional and almost full-time carer, can only justify buying the stuff when it’s on the reduced aisle at the end of its shelflife.

So in what respect is it convenience food? Well, it was quite near the door.

(* but happily not yet here in Dyserth where the poly bag continues to reign supreme. Pink see-thru nowadays for ease of examination, but still ...)

Cleaned out the cellar yesterday from old furniture, an old TV, paint buckets, other buckets filledwith whatever, VCR's, satellite recievers, a microwave oven and much more. Turned out to be bad idea when you have the flu! Dizzy Spell here I come! The people at Blomorado then filled their big truck and drove off to the "atervinningsstation", or recycle station if you like.

Bastard!

The irony is that there was nothing in the fridge it wanted to eat, except some smelly cheese from Lille that was in a heavy glass dish. It spurned my ageing red cabbage and carrots.

But it has ruined my irreplacable Zanussi Electrolux side by side under the counter fridge freezer. They stopped making them a year ago, and noone else makes a comparable model.

And my household insurance doesn't cover damage by vermin.
