Peppercorn Chicken with Lemon Spinach
3 tablespoons dijon mustard
3 large skinless, boneless chicken breasts (about 1 3/4 lb)
2 to 3 tbs coarsely ground peppercorns
3/4 tsp finely minced fresh rosemary
Kosher salt
3 tbs olive oil
2 shallots, thinly sliced
1/3 cup brandy or red wine
1/3 cup chicken broth
1 tbs chopped fresh parsley
2 cloves garlic, chopped
1 lb spinach
1/2 tsp finely grated lemon zest
Preheat the oven to 350 F. Brush 1tbs of the mustard all over the chicken. Sprinkle with the pepper, rosemary and salt to taste.
Heat a large skillet over medium-high heat ; add 2 tbs oil. Add the chicken and cook until golden brown, about 3 minutes per side. Transfer to a baking dish; bake chicken until cooked throug, 10 - 15 minutes.
Meanwhile, add th shallots to the skillet and cook unti soft. Remove from heat and add the brandy, return to heat and scrape up any brown bits. Add the broth, bring to a boil and cook until slightly thickened, about 2 minutes. Stir in the remaining 2 tbs mustard and the parsley.
Heat 1 tbs oil in another pan over medium-high heat. Stir in the garlic and cook about 30 seconds. Add the spinach, season with salt and cook until wilted; add the lemon zest.
Serve the sauce over the chicken along with the spinach.
The recipe is from the February/March 2009 issue of the "Food Network Magazine". We made a few changes.
We used spicy brown mustard instead of dijon and we used dried rosemary and dried parsley instead of fresh.
We used another 1/3 cup chicken broth in place of the brandy and just served the spinach with lemons instead of using the zest.
The spinach was great and the chicken was good. Would make both of these again.
Chicken Enchilada Mummies Recipe
INGREDIENTS:
2 teaspoons vegetable oil
6 boneless, skinless chicken breasts (about 2 1/2 lb), cut into 1-inch pieces
1 medium onion, chopped (1/2 cup)
1 teaspoon ground cumin
1 teaspoon garlic salt
1/2 teaspoon dried oregano leaves
1 1/2 cups sour cream
3/4 cup chopped roasted red bell peppers (from a jar)
1 can (4.5 oz) Old El Paso® chopped green chiles
3 cups finely shredded Mexican cheese blend (12 oz)
2 cans (10 oz each) Old El Paso® enchilada sauce
12 Old El Paso® flour tortillas (8 inch)
DIRECTIONS:
1. Heat oven to 350°F. Spray 13x9-inch (3-quart) and 8x8-inch (2-quart) baking dishes with cooking spray.
2. In 12-inch skillet, heat oil over medium-high heat. Add chicken and onion; cook and stir 4 to 5 minutes or until chicken is no longer pink in center. Stir in cumin, garlic salt and oregano. Cook 1 minute longer; drain if necessary. Pour chicken mixture into large bowl.
3. Reserve 2 tablespoons sour cream in small bowl; refrigerate. Into bowl of chicken mixture, stir remaining sour cream, roasted peppers, chiles and 1 1/2 cups of the cheese blend.
4. Spread heaping 3/4 cup chicken mixture in center of each tortilla. Roll up tortillas; arrange 8 seam-side down in 13x9-inch baking dish and 4 seam-side down in 8x8-inch baking dish.
5. Top each baking dish evenly with enchilada sauce. Sprinkle with remaining 1 1/2 cups cheese. Spray 2 sheets of foil with cooking spray; cover each baking dish with foil, sprayed side down.
6. Bake about 50 minutes or until enchiladas are hot. Place reserved 2 tablespoons sour cream in Ziploc® Brand snack bag. Seal bag; cut off 1 corner of bag. Squeeze bag to pipe eyes and mouth on each mummy.

Caution: Food Crossing
Students exit the walk-in frdige in the Culinary Arts Dept. Kitchen, which I might add, is state of the art, in everything. This is the place to come and do your Culinary Arts program if you want to be a chef, baker, etc. I photographed all parts of this dept. for 4 hours and I was very impressed with what I saw. I have been very impressed with all the vocational programs here at Laney, which the Photography Dept. is also part of. Now, my dept., it needs some help. We desperately need some funding for some upgrades. My son's high school had a state of the art darkroom and digital lab, for goodness sakes. We do now have a top notch Mac digital lab. But, I think we seriously need some upgrades to our darkroom and to our Studio. And, there are just not enough classes in Photojournalism, there is not even an actual program in PJ, just a couple of courses, that's it. If I want to continue, I have to move on to San Francisco City College or State. Or go south to Foothill College. Or basically do what I am doing now, supplement with outside workshops and seminars, at much higher costs, in most cases. I like going to community college, it affords me a lot of education I can't get anywhere else. Next semester I am expanding my studies to include Social Justice Studies.

Laney College Culinary Arts student chefs grab their fresh ingredients inside the walk-in fridge to prepare dinner for their class meal today. It was a really yummy looking dish, basically steak and potatoes. I took this photo through the thick glass window, from the outside, looking in. I liked the trippy look I got from the image that ensued.

Child beggars West Delhi 2006
Kids begging for money in west Delhi. They didn't want to be photographed because they thought that somehow the police would then be able to catch them. I assured them afterwards that i wasn't with the police. The two kinds in the back, are also poor but were not beggars and watched this with amazement.

Pumpkin Walnut Cupcakes with Caramel Filling and Cream Cheese Frosting
The Frosting was a bit wet/loose after making it so it was very hard to get it even. After the cupcakes were refrigerated it was much easier to deal with...I should have added more powdered sugar but I didn't want it to get too sweet and spoil the taste of the cupcake.
Pumpkin Cupcakes
Ingredients:
•2 1/4 cups all-purpose flour, sift before measuring
•1 tablespoon baking powder
•1/2 teaspoon baking soda
•1/2 teaspoon salt
•3/4 teaspoon ground cinnamon
•1/2 teaspoon ground ginger
•1/2 teaspoon ground nutmeg
•1/2 cup butter/margarine, softened
•1 1/3 cups sugar
•2 eggs, beaten until frothy
•1 cup mashed cooked or canned pumpkin
•3/4 cup milk/soy milk
•3/4 cup chopped walnuts
Preparation:
Sift together the flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg into a bowl. Cream butter/margarine and sugar until light and fluffy; beat in eggs. Blend in mashed pumpkin.
Stir in the sifted dry ingredients alternately with the milk, blending until batter is smooth after each addition; stir in chopped walnuts. Spoon batter into well-greased and floured or paper-lined muffin pan cups. Fill about 2/3 full.
Bake at 375° for 25 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
Let cool completely before filling.
I cheated on the filling and used a Caramel that I got from a Russian Deli but you can use any Caramel Spread or even pre-made if you'd like. Once the cupcakes were completely cool, I filled them with caramel.
Cream Cheese Frosting
•8 ounces Cream Cheese/Soy Cream Cheese
•1/2 cup butter/margarine
•2 cups powdered sugar
•2 tsp vanilla
•a dab of food coloring of your choice
•jimmies
Blend in mixer until fluffy and spread on cool cupcakes. Add jimmies.
I recommend refrigerating the cupcakes when completed and eating them cold.
BEST Butter milk pancakes ever! + RECIPE
butter milk pancakes with syrup and butter. not the best presentation, but these hot cakes are delicious!

1 1/3 cup sifted flour (don't forget to sift the flour BEFORE you sift it with the other 3 ingredients)
3 Tbsp sugar
2 and 1/2 tsp baking powder
1 tsp salt
2 eggs, slightly beaten
1 cup buttermilk
3/4 cup milk
1 tsp vanilla
3 Tbsp melted butter
Sift the first 4 ingredients together into a large bowl.
In a medium bowl combine eggs, milk, and vanilla and add to dry ingredients, beating just until dry ingredients are moistened.
Stir in melted butter.
For each pancake, pour 1/4 cup of batter onto a hot, lightly greased griddle or frying pan.
Turn the pancakes when they are puffed, full of bubbles and cooked along the edges.
Pancakes.....yummy.....

1 cup All purpose flour
3 tbsp Demerera sugar (or white sugar)
1/2 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp salt (or as per taste)
1-1/2 cups thick buttermilk
2 egg whites (or 1 egg)
1 tbsp butter (optional)
1 tbsp vanilla extract
I guess the instructions are the same as above.

I feel like i'm a Coca-Cola Model in this haha.
I hosted a classy Christmas party last night. We all dressed up, cooked, did white elephant and of course played games. It was a great time and fun to relax right before finals week.
I set up an area to get some nice photos of the gang. Everyone looked so cute!
I have a massive case of the sidetrackitis. Can't seem to focus but I must! Wish me luck on finals :)
The Baby Shower Jelly Breasts Game
Fiona organised a baby shower: ostensibly so kind friends would fill my freezer with food. What new parents want to cook or go supermarket shopping? We played games: 'pin the bits on the lady,' 'the dress up relay game,' and my favourite: 'the Jelly Breast Game.' Kate & Babs were the two good sports that competed to find the earrings in the jelly: Kate won!

at the big store where we go for staples once a month (organic flour, butter, milk, etc) they have a last chance meat bin, where is goes on super sale right before the trash can (their is padlocked out back or i would be there in an instant). this month they had local rabbits and free range chickens for 3 bucks each.
coated in mustard, dredged in spiced up flour, fried in pig lard in the dutch oven. browned all the pieces (this is the key for cooking rabbit or it will be dry and stringy- it doesnt have much fat), poured over homemade chicken stock, fresh thyme and rosemary went in and a bay leaf. then cooked in the woodstove for a few hours. an hour before, put in sliced spuds. the sauce is wonderful or you can thicken it to make a gravy. the rabbit was moist and succulent. one of the best i have had.
in a way we did rescue it from the trash. i am glad that some stores do mark down to sell their waste rather than dumping it. not all stores do that.
this was a hearty lunch for three (amaya ate the heart and liver) and with the leftovers tonight i'll make rabbit n' rice with fried bananas (kind of cuban flavored) and a polenta cake. then i'll make a nice broth with the leftover bones and with the left over sauce, i'll make a thick gravy for future mashed potatoes or biscuits and gravy. probably four meals for 3 bucks.

Cooking Fireplace in 1810 Pennsylvania German Farmhouse
While the cooking area could be called a "walk-in" fireplace, the cooking pot could actually be swung out on the swiveling bar that held it. The 1810 restored farmhouse is located on the grounds of "the farm", a living history museum, located at the Pennsylvania German Cultural Heritage Center, Kutztown, Pennsylvania. The Center, of which I'm a member, exists to preserve and educate related to the rural Pennsylvania German life of southeastern Pennsylvania.
Chicken Pot Pie Made the Old Fashioned Way at Fall Fescht-2008.
A very large batch of Pennsylvania German chicken pot pie was slow cooked in this large barrel for several hours according to the cook . The Fall Fescht ( festival) is held annually on "the farm", located on the grounds of the Pennsylvania German Cultural Heritage Center, Kutztown, Pennsylvnia. "The farm" is a living history museum celebrating the rural Pennsylvania German heritage of southeastern Pennsylvania.

Cooking on Saturday afternoon
My first some what successful attempt at timelapse. There will definitely be more to come. I made rhubarb cake.
Things that happened during this video:
1) my tea kettle broke. I tried plugging it in different places, but it refuses to boil water.
2) the recipe used a lot more bowls than what I would have liked, and it made a lot more batter than I expected, and required a second cake pan at the last minute.
3) the butter that was suppose to be room temperature was still fridge temperature leading to a microwave fiasco.
4) cornmeal somehow got everywhere. The floor, in my glass of water, I'm sure if I had pockets it would be in there too.

Cassidy has really taken a liking to cooking lately. I mean she's always liked to cook but not she's getting to where she can handle knives that might possible cut her finger off and hot pans.
So yesterday while I took an afternoon nap she attempted to make hashbrowns IN THE MICROWAVE. It looked like DEATH had blown up all over my kitchen. Her punishment was to cook us dinner tonight then clean the kitchen afterwards. She loves to cook, but it's still work so we figured that the punishment was appropriate.
This is the first time I've let her cut onions all on her own.
Punishment: TOTALLY AWESOME. ;)

Porcelain doll
I bought this one over the weekend for just a few dollars. It's made of porcelain and I think that it may be German Victorian. It's about 7 cm long and has arms and legs missing.
