INGREDIENTS Cookies 1 roll (16.5 oz) Pillsbury® refrigerated sugar cookies 16 craft sticks (flat wooden sticks with round ends) White Frosting 1 cup powdered sugar 1 tablespoon milk 1 tablespoon butter or margarine, softened Chocolate Frosting 1 cup powdered sugar 2 tablespoons unsweetened baking cocoa 1 to 2 tablespoons milk 1 tablespoon butter or margarine, softened Assorted candies (gumdrops, candy corn and licorice) DIRECTIONS 1. Freeze cookie dough 1 hour. 2. Heat oven to 350°F. Cut frozen dough into 16 (1/2-inch) slices; roll each into ball. On ungreased cookie sheets, arrange balls in circle, 3 inches apart and 2 inches from edges. Securely insert a craft stick into each ball with end pointing toward center of cookie sheet. 3. Bake 10 to 14 minutes or until golden brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes. 4. In small bowl, stir white frosting ingredients until smooth. If necessary, add additional milk 1 drop at a time for desired consistency. 5. In another small bowl, stir together all chocolate frosting ingredients except assorted candies until smooth. If necessary, add additional milk 1 drop at a time for desired consistency. 6. Frost half of cookies with white frosting; frost remaining cookies with chocolate frosting. Arrange candies on frosted cookies to create jack-o'-lanterns, cats, owls or ghosts. Snappy Joes on Texas Toast INGREDIENTS 1/4 cup LAND O LAKES® Butter, softened 2 tablespoons chopped fresh Italian (flat-leaf) parsley 1 clove garlic, finely chopped 1/4 cup chopped fresh chives 1 can (11 oz) Pillsbury® refrigerated crusty French loaf 1 tablespoon Crisco® Light Olive Oil 1 1/2 lb extra-lean (at least 90%) ground beef 1/2 cup pickled jalapeno chiles, drained, chopped and 2 tablespoons liquid reserved 1 teaspoon ancho chili powder or regular chili powder 1 can (8 oz) garlic-and-onion tomato sauce or regular tomato sauce 1/4 cup Smucker’s® Seedless Blackberry Jam 1 tablespoon Dijon mustard 1/4 teaspoon coarse (kosher or sea) salt 1/4 teaspoon pepper 1/2 cup sour cream DIRECTIONS 1. Heat oven to 350°F. In small bowl, mix butter, parsley, garlic and 2 tablespoons of the chives; set aside. 2. Bake French loaf as directed on can. Cool 5 minutes; cut into 12 (1-inch) slices. Spread butter mixture on one side of each slice. 3. While bread is baking, in 10-inch skillet, heat oil over medium heat. Add beef; cook 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in chiles, reserved chile liquid, chili powder, tomato sauce, jam, mustard, salt and pepper; heat to simmering. Reduce heat to low; cover and cook 5 minutes. 4. For each serving, place 2 bread slices on each plate; top each slice with heaping 1/4 cup beef mixture, dollop of sour cream and some of remaining chives. 122/365 French Apple Tart I love to cook, but hate to bake, but this is hands-down the easiest thing I have ever made, and it tasted fantastic. French Apple Tart 1 pie crust (use whatever recipe works for you. I cheated and used store bought) 5-6 apples (I used Granny Smith) 1 tsp cinnamon 3 Tbs sugar 2 Tbs unsalted butter Preheat oven to 400. Prepare pie crust and press into 8 or 9 inch tart pan. Peel and core apples, slice into 1/4" thick slices. Chop one of the apples into smaller pieces and spread over the bottom of the pie crust. Sprinkle with about 1/2 teaspoon of cinnamon. Arrange the remaining apple slices neatly in the pie crust. The apples should be piled a little bit higher than the pan - they'll cook down. Sprinkle the remaining cinnamon and all of the sugar over the top of the apples. Cut the butter into small pieces and dot the apples with it. Bake for 60-75 minutes. Fearless These necklaces belonged to my grandmother, Jane Dewhurst Wilson. My parents gave them to me for Christmas, which I thought was a really lovely recessionesque gift. Their understated simplicity is very representative of my grandmother, who I realize has been gone for almost ten years. This is kind of shocking to me since she played such a big role in my family's life during my formative years. She was really closest to my brother; they would talk on the phone every day when he got home from school. I always knew that I annoyed the shit out of her sometimes and this was confirmed by my mom, who dutifully reported the contents of grandma's diary to me after she (grandma) passed away. Nevertheless, she was always there for me when I needed her most: In seventh grade when my cat absconded (most probably down the throat of a coyote) and I was too heartbroken to go to school, she was there for me. In third grade, when I would crack under the hostile eccentricities of Mrs. Peaches Rodgers and fake sickness, she would always pick me up, driving her long white old-lady car that did not have power steering. My grandma's passion was gardening and she was really good at it. I also enjoyed her cooking, but in retrospect I realize it consisted mostly of margarine, condensed soup, Spam, boiled vegetables, Wonder Bread and ham. But she was a firm believer in eating ice cream every night before bed, which is probably why my brother wanted to stay out at her place so often. My grandmother was born in Idaho, but attended elementary school in Bend, Oregon--at the same school I went to 50 years later (the same school that employed Peaches). During World War II, she worked in an airplane factory, a la Rosie the Riveter. The best part of her life was certainly her three boys, of whom my dad was the baby. The last years of her life were not good. They were so bad for her that they still mark a low point in my own life. But having her necklaces reminds me of an important lesson that I took from that terrible time, but which I admit to having forgotten in the past few years. Jane Dewhurst Wilson was a fundamentally suspicious person. She was afraid of practically everything and always assumed that people were out to take advantage of her. And toward the end of her life, somebody did. In about the worst imaginable way. In later adolescence, it occurred to me that the fear and suspicion that she had nurtured so carefully over the course of a lifetime had FAILED TO KEEP HER SAFE. It only served to limit her life to a very confined, fearful state. At the time, I vowed to take her example and do the opposite--live fearlessly. But I admit to having gradually forgotten this lesson over the past few years, as I've focused less on having adventures and more on work, spousehood, avoiding eye contact with my eight million neighbors. That is, until these necklaces brought my grandmother crashing back. So yes, 2010: This will be my year of remembering how to be fearless. The Long Road To Woodstock---Layover In Regina, Saskatchewan By the time I got to the east side of Regina, Saskatchewan (I think this was the night of the day of the morning of the snowfall, or perhaps it was the next day). I had every intention of keeping on the move, even though it was already dark. Some fellow pulled up in a late model car (I'm guessing) and when I got in, he asked me if I wanted something to eat, or if I wanted a bed for the evening. I don't remember how he put it, but of course I was immediately suspicious. Of course I was hungry and dirty, so I accepted the offer of something to eat, and the possibility of a shower. When we got to the fellow's house, it turned out to be a large ranch house. Inside, he led me down a long hallway that seemed to be lined with bedrooms. "You can have this room here," he said. It had its own bathroom, so I took a shower. When I got out and got dressed, I went to the kitchen. My host had rustled-up some sort of hot meal (I'm guessing). No one else was in evidence in the house. I accepted the offer of the bed, and went back and immediately went to sleep. When I got up in the morning, I discovered that my host had prepared a hot breakfast. I want to say bacon and eggs, but again, I'm just guessing. It wasn't like cold cereal----I suppose I should have been grateful for cold cereal, but that's not me. If you're going to invite me for breakfast, cook something, dammit. My host had told me he would take me back out to the east side of the city (and I remember nothing about Regina) and let me out. He had one more gift to give me. He had a big plastic bread bag, and he had filled it with ham and cheese sandwiches (the kind of sandwich is just a guess). "Take these with you," he said, or words to that effect. "If you meet some other hitchhikers, pass them out.". I would guess that I was waiting for my host to say something like, "Have you accepted Jesus Christ as your personal savior,", but he never said anything like that, at least not that I can remember. Whether or not his actions were a result of Christian charity, or just your average ordinary garden-variety charity, they were extraordinarily gracious, and welcome. I'm not so impolite that I didn't say thank you, but let me say it again: "Thank you, kind sir, for doing me a good turn." I hope I can find ways in my life to do likewise. I don't remember giving the sandwiches away, but I don't remember eating all of them either, which I probably would, guilt-ridden as I am. I must have given at least some of them away. 6th Course: Black Sea Bass Filet of black sea bass on lemon-black pepper risotto, tuna bottarga and English peas. This dish was topped with a bottarga emulsion and garnished with fresh thyme. Notes: "OH YUM" was my first thought. And my instincts were correct. The chef later explained to me that this fish was cut thin and roasted across the grain for a "more pleasant texture." By "more pleasant," I gather that he meant that it makes the fish meat more steak-y, more meaty and substantial. In fact, the fish was so firm that I didn't recognize it as black sea bass - which I've always known to be soft and almost flaky. In fact, the reason I asked the chef was because I thought either I heard incorrectly or the server mispoke when it was presented as black sea bass. Upon further inquiry, the chef told me that by cooking the fish on a cross-grain allows for more even-cooking - which makes sense. I guess this just shows how a skillful chef can play with techniques to yield very different results! The risotto had a brilliant lemon-blackpepper kick to it. The high note of the lemon followed quickly with a nice hefty wollop of bitter heat. I loved it. These two flavors were counterbalanced by the sweet Enlighs peas that lended a nice grassy note.. The emulsion had been fortified with pungent tuna bottarga - literally the egg sack of the fish which has been cured in salt. While the flavor was somewhat distinguishable, I would have to say that I wished the bottarga had taken a more prominent role. Keep in mind, though, I'm partial to gutsy and bold flavors. The risotto was a tad more al dente than I prefer - I like it softer, creamier and porridge-like. But, certainly, anyone who prefers their risotto to have just a bit of resistance would be pleased. 186/365 Say goodbye to Summer Snapped by Shan at a humid summer night. We went to Josie's farm yesterday to fish. It was really fun, I took the most of the pix thou (cast a little bit). Lingling got luck in the very beginning. She caught a young bass (< 9 in.) when she was teaching a young girl how to cast. :) But we have to let it go. I missed one fish as soon as it bit my bait. But Josie got one bass with good size! Haha, then I cooked it in a Chinese way using the microwave. The steamed fish was so popular! It starts to get chilly at night. Meal of Thu 22 Sep 2005. Plaice is gently baked at about 170 C loosely wrapped in tin foil (pre-greased with a generous helping of butter to ensure the fish doesn't stick). The sauce of olive oil, butter, garlic, parsely and lemon juice should be drizzled all over the fish: make the tin foil parcel with fully closed sides but an open top, and then once the sauce has been applied fold so that the parcel has a small opening in the centre at the top, and permits airflow inside. Keep the sauce to repour over fish when serving. The flesh will simply fall off the skin when gently encouraged by a knife and fork and is absolutely melt-in-the-mouth soft. The skin is also perfectly edible and probably very nutritious. Comedy So there I am, on the couch with my maitresse, trying to create a romantic atmosphere. Alas, no peace for the wicked! We are disturbed by: -a thief, -the wife of the thief (who likes to ring her husband when he is out working), -my own wife, -my wife’s lover. As you will understand: we are talking about a farcical comedy. The past months I found out how hard it is to do comedy. Pace and timing are essential. We worked hard, we sweated, we cursed, we almost despaired but in the end we pulled it off! We entertained a crowd of 500 people for an hour, kept their attention and got a lot of laughs. Lasagna Mr. Moc’s favorite italian food is lasagna and being the good wifey that I am, I made lasagna for dinner. Honestly though, this is probably only the 2nd or 3rd time I’ve made lasagna for Mr. Moc in all the years we’ve been together (over 7 years). So when I spotted whole wheat lasagna noodles at the local supermarket, I had no excuses left not to make lasagna. I tried to make it a bit healthier with the whole wheat lasagna noodles but I also added in as many veggies as I could for BabyMoc. I steamed and pureed cauliflower and hid it in the "white sauce". I also added a lot of veggies (carrot, celery, onion, zucchini, mushroom, and obviously tomatoes) in the meat sauce. The only problem with making lasagna for a family of three is that we have enough leftovers for the week! Next time, I'm going to send half of it over to our neighbors. Lasagna: Noodlin' around the Sauce I didn't boil the lasagna noodles. Every pack I saw in the store said "No Boiling!" - however all of the horror stories I'd heard had one common element, dry and crunchy pasta. So Ina's recipe calls for soaking the noodles in hot tap water for about 20 mins. Annalisa wouldn't dream of kissing Luella the cow, even though her mother kisses her every day after singing her a song and milking her. Still, inquisitive Annalisa is awfully interested in milking Luella, and one day she sneaks off and does everything just the way her mother does--all except for the kiss on the nose. The next day, Luella refuses to give any milk. And the day after that is the same. Annalisa's mother and her many brothers and sisters beg the stubborn little girl to relent, but Annalisa says "Never!... Never, never, never." Will the whole family have to live without milk and cheese forever? Or will Annalisa's innate curiosity get the best of her? Both Phyllis Root and Will Hillenbrand claim to have tried to kiss cows while working on this story, but to no avail. "I was willing," Hillenbrand says, "but the cow wasn't." Bunny Cookies 1 small carrot, pureed 1/2 banana, mashed 1 tbsp. honey 1/4 cup oats 1/4 cup pellets, ground Puree carrot, banana, honey, and oats in food processor. Mix with ground pellets to make dough. Form cookies by dropping dough onto lined baking sheet, flattening to 1/4 inch thick with hands or back of spoon. Bake at 325 for 30 minutes. Turn off oven and allow cookies to sit in warm oven for 1 hour. Recipe makes 12 cookies or 24 miniature cookies. Store cookies in air tight container.
