Today is my day..... I woke up... Sat outside in the front - which I seldom do alone in the dark... But the moss was swaying... I could hear an owl... The boars or deer were rustling out of my sight range... but they were very much there. I planned my day. NO WORK away from home. I can not tell you how happy this makes me. Got the boys off to school... Polished off 1/2 pot of coffee... Now I will tackle some of my boxes... Put away LOADS of clean laundry... Box up stuff for Goodwill & the local women & Childrens shelter. I have a HUGE thing of ground beef to brown and make 4 plan ahead meals. I feel free'd up and ready to tackle some long over due house needs. Yesterday a friend showed me an old barn neslted in the woods behind my fence on the 10+ acres... It felt as if I stepped back in to the 20's or 30's. Old moonshine bottles... Bales of stacked hay... All kinds of old old rusted farm equipment... like hoes... and plows... Had to use a machete to get through the woods... found a 100+ lemon and citrus orchard. Crazy good place to take pictures. (Kivajo bring your boots!) Today I WILL hang my bird feeders... I have seen blue jays, wrens, cardinals, hawks, and titmice so far. WooHooo! Excited!!! Have a Brown Sugar and Ginger Cupcakes recipe Brown Sugar and Ginger Cup Cakes Serves 10 people Ingredients For the Cake 3/4 cup molasses 3/4 cup sour cream 1/2 pound unsalted butter, melted 1 cup brown sugar 4 eggs 2 tablespoons ginger, grated fine 1/4 cup lemon juice 2 teaspoons lemon zest 4 cups flour 2 teaspoons baking soda 1 teaspoon salt To Garnish fresh fruit, whipped cream Special Equipment Cupcake papers Instructions For the Cake Whisk together the molasses, sour cream, butter, lemon juice and zest, eggs, brown sugar and ginger until smooth. Sift in the dry ingredients and stir batter until just combined. Bake in buttered ramekins at 325°F for 15 minutes or until dry in the center. To Serve Top with whipped cream and fresh fruit like Troy Farms nectarines, Frog Hollow peaches, or Knoll Farm figs.
