Average White Band - Live at Montreux, 1977 The AVERAGE WHITE BAND (or AWB) came together in 1973 from various Scottish soul and jazz groups. They became one of the few white bands to achieve both success and critical acclaim playing funk. Their breakthrough release, Pick Up The Pieces, was a No.1 single in the US and a top 10 in the UK and across Europe in 1975. AWB only played at Montreux in 1977, but that year they not only had their own concert, which forms this DVD release, but also acted as the backing group for a number of other acts. However, this headline performance was definitely one of the stand-out nights of the ‘77 Festival. It includes the hit tracks Pick Up The Pieces, Work To Do, A Love Of Your Own and Cut The Cake. Makes 1 very large loaf, 16 slices ACTIVE TIME: 35 minutes TOTAL TIME: 24 hours EASE OF PREPARATION: Moderate 1/2 cup uncooked long-grain brown rice, preferably brown basmati 2 1/2 cups whole-wheat flour, plus 3 tablespoons, divided 2 cups unbleached bread flour (see Note), plus more as needed 1/3 cup old-fashioned rolled oats 2 tablespoons toasted wheat germ 4 tablespoons roasted pepitas or sunflower seeds, divided 3 tablespoons flaxseeds, preferably golden, divided 3 tablespoons poppy seeds, divided 3 tablespoons sesame seeds, divided 2 1/4 teaspoons table salt 1 1/4 teaspoons instant, quick-rising or bread-machine yeast 2 1/2 cups ice water (see Tip), plus more as needed 3 tablespoons clover honey or other mild honey 2 tablespoons liquid egg substitute or 1 beaten egg white, for glazing 1. Mix dough: Grind rice in a blender or coffee mill (a food processor won’t work) until mostly powdery but with some fine bits remaining. Transfer to a 6-quart (or larger) bowl. Thoroughly stir in 2 1/2 cups whole-wheat flour, 2 cups bread flour, oats, wheat germ, 2 tablespoons each pepitas (or sunflower seeds), flaxseeds, poppy seeds and sesame seeds, the salt and yeast. Thoroughly whisk 2 1/2 cups ice water and honey in a medium bowl. Vigorously stir the wet ingredients into the dry ingredients, scraping down the sides and mixing just until the dough is thoroughly blended. The dough should be moist and somewhat sticky, but fairly stiff. (The seeds will absorb moisture, stiffening the dough as it stands.) If the mixture is too dry, stir in just enough additional ice water to facilitate mixing, but don’t overmoisten. If the dough is too wet, stir in just enough bread flour to stiffen slightly. Lightly coat the top with oil. Cover the bowl with plastic wrap. 2. First rise: Let the dough rise at room temperature (about 70°F) for 12 to 18 hours; if convenient, stir once partway through the rise. For convenience (and improved flavor), you may refrigerate the dough for 3 to 12 hours before starting the first rise. 3. Second rise: Generously coat a 4- to 6-quart Dutch oven (or similar ovenproof pot) with oil. Coat the bottom and sides with 2 tablespoons whole-wheat flour. Vigorously stir the dough to deflate it. If it is soft, stir in just enough flour to yield a firm but moist dough (it should be fairly hard to stir). Transfer the dough to the pot. 4. Sprinkle the remaining 1 tablespoon whole-wheat flour over the dough; pat and smooth it in. Firmly tuck the sides underneath all the way around to form a round ball of dough; dust with more flour as needed. Brush the loaf with egg substitute (or egg white) and sprinkle the remaining 2 tablespoons pepitas (or sunflower seeds) and 1 tablespoon each flaxseeds, poppy seeds and sesame seeds over the top (it will be heavily coated). Using well-oiled kitchen shears or a serrated knife, cut two 1/2-inch-deep concentric circles in the top of the loaf, one about 2 1/2 inches out from the center, the other 3 1/2 inches out. Put the lid on the pot or tightly cover with foil. 5. Let rise at warm room temperature until the dough is double the deflated size, 1 1/4 to 2 1/4 hours. (For an accelerated rise, see Tip.) 6. 20 minutes before baking: Position a rack in lower third of oven; preheat to 475°F. 7. Bake, cool, slice: Reduce oven temperature to 450°. Lightly spritz or sprinkle the loaf with water. Bake, covered, on the lower rack until the top is lightly browned, 50 to 60 minutes. Uncover and bake until a skewer inserted in the center comes out with just a few crumbs on the tip (or until an instant-read thermometer registers 204-206°), 15 to 25 minutes longer. Cool in the pot on a wire rack for 10 to 15 minutes. Turn the loaf out on the rack and let cool to at least warm before slicing. Bake cake until tester inserted into center comes out clean, rotating them once front to back if your oven bakes unevenly, about 17 minutes. Cool cupcakes on a rack completely. Make the filling: Chop the chocolate and transfer it to a heatproof bowl. Heat the cream until simmering and pour it over the chocolate. Let it sit for one minute and then stir until smooth. (If this has not sufficiently melted the chocolate, you can return it to a double-boiler to gently melt what remains. 20 seconds in the microwave, watching carefully, will also work.) Click the picture for the recipe. Ingredients: 2 cups of quinoa, cooked 1 small regular zucchini, chopped 1 small white zucchini, chopped 1 onion, chopped 4 bell peppers (6 if you don't want any leftover, unstuffed quinoa) 1.5 tsp cumin 1 can diced tomatoes 2 cloves garlic, minced oregano (use your discretion) 3/4 cup cashews, chopped salt & pepper to taste Directions: The timing on this one is a little tricky so I recommend doing it on a night when you just want to chill out and cook without too much effort. 1. Chop the tops off of the peppers, about a half inch from the top. Cut around the stem and throw it out, then chop the remaining pepper and set it aside. Pull out the shit in the middle of the pepper (you know, seeds and all that crap). 2a. Cook the quinoa the way you'd cook rice. I use a plastic rice steamer, appx 2 parts water to 1 part quinoa, and microwave for 15 minutes. 2b. Boil a large pot of water and submerge the pepper bowls. Cook for about 5 minutes. 2c. Preheat oven to 400 degrees Fahrenheit 3. Heat some olive oil in a skillet-type-pot and add the onion and garlic and sautee for 3 minutes. Take them out and drain them in a large colander. Set aside. 4. Add the chopped bell pepper and cumin and sautee for another 5 minutes, stirring frequently. 5. Add the tomato, zucchini, oregano, and cashes, and salt and pepper (as desired). Sautee for another 5 min or so. 6. Fold in the cooked quinoa with the heat still on. Once everything is evenly distributed, turn off the heat. 7. Grease a baking pan and set the pepper bowls in open-side up. Spoon the quinoa mixture into the bowls. 8. Loosely cover the pan with foil and put the peppers in the oven for about 20 minutes. 9. Take them out and eat them. Four Cheese-Veggie Lasagna Cups INGREDIENTS 1 can (16.3 oz) Pillsbury® Grands!® Flaky Layers refrigerated original biscuits (8 biscuits) 1 bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen broccoli, carrots, cauliflower & cheese sauce 3/4 cup diced tomatoes with roasted garlic and onion (from 14-oz can) 1/3 cup Italian-style tomato paste (from 6-oz can) 1/2 teaspoon salt 1/2 teaspoon finely chopped garlic 1/2 cup ricotta cheese 1 tablespoon grated Parmesan cheese 1/2 teaspoon parsley flakes 1 1/4 cups shredded mozzarella cheese (5 oz) DIRECTIONS 1. Heat oven to 350°F. Separate dough into 8 biscuits. Separate 2 biscuits into 3 layers each; add 1 layer to each of remaining 6 biscuits. In ungreased jumbo muffin pan, press each biscuit on bottom and up side of muffin cup. 2. Microwave frozen vegetables as directed on bag. Pour vegetables into medium bowl; stir in tomatoes, tomato paste, salt and garlic. 3. In small bowl, mix ricotta cheese, Parmesan cheese and 1/4 teaspoon of the parsley. Spoon 1 rounded tablespoon ricotta mixture into each biscuit. Top each with 1 tablespoon mozzarella cheese and rounded 1/4 cup vegetable mixture. Sprinkle with remaining mozzarella cheese and parsley. 4. Bake 30 to 35 minutes or until biscuits are golden brown and filling is hot. Cool in pan 5 minutes. Carefully run knife around side of cups to loosen; remove from pan. Cool 10 minutes longer before serving. Bring mixture to a boil, stirring often, then reduce heat and simmer for 5 to 10 minutes. Remove from heat and cool for at least 15 minutes. (Batter can be completed up to this point, then covered and refrigerated for up to 2 days. Bring to room temperature before completing cake.) Heat oven to 325 degrees. Place a pan of hot water on the bottom shelf to prevent the crust from cracking. Combine dry ingredients and sift into cooled fruit mixture. Quickly bring batter together with a large spoon, then stir in eggs one at a time until completely integrated, then fold in nuts. [According to an old English custom, have all the members of your family hold the spoon as the batter is stirred to bring them good luck in the New Year.] Spoon into a 10-inch non-stick loaf pan (or a bundt pan) and bake for about 1 hour. Do not open oven for first 50 minutes! Check for doneness by inserting toothpick into the middle of the cake. If it comes out clean, it's done. If not, bake another 10 minutes, and check again. Remove cake from oven and place on cooling rack or trivet. Baste or spritz top with brandy immediately (prevents top from cracking as it cools) and allow to cool completely before turning out from pan. When cake is completely cooled, seal in a tight sealing, food-safe container. Every 2 to 3 days, feel the cake and if dry, spritz with brandy. The cake's flavor will enhance considerably over the next two weeks. Jak III Remember why you love games? Sometimes I don't. Sometimes I forget why I so ambitiously poked and prodded my way into this industry in the first place. Sometimes my eyes glaze over and I can't see anything beyond the dreaded fog of lowbrow racers, backward brawlers, and sensationally awful shooters whose only benefits are the neat arcs that zigzag out of the microwave after the third minute in. Sometimes I just want to vacate and make sandwiches for a living. Then I play Jak 3 and I remember -- I remember warmth and happiness and days untouched by the all consuming hopelessness of Varmint Hunter. (I hate that game something fierce, by the way.) Every so often a game comes around that's right and it makes me remember. It's a game that makes piles of other lesser games very, very wrong. There are precious few words that can so accurately describe this "correct" product in its entirety, but there are plenty to describe individual parts of it. Jak 3 is right, but if you dig through your lexicon you can easily break the game down into chunks of gorgeous, wonderful, fun, slick, polished, tight, balanced, well-produced, hilarious, intense, diverse, and wondrous... Buy it or die. And if I were a smart man, I'd leave the article there and fill the rest of this page with videos of me giddily smiling and playing (it's a sort of stationary prance). Since I'm not that intelligent, here comes my winded review of choice. As the third in a series of mascot titles, Jak 3 makes an even more radical departure from Jak 1 than Jak 2 did. Basically, there are more vehicles and there is a bigger emphasis on shooting. Before I explain how and why this is good, I feel compelled to clear the air a bit. On IGN, Jak 2 was grossly overrated. I'm sorry, but the tedium of hover driving just wasn't any good. In fact, Jak was probably regarded a touch too highly, also. All that is now spilt milk. Don't dwell on it, for whether you compare Jak 3 to its predecessors or take it as a standalone title, you're in for a phenomenal experience that must not be missed (less you welcome death at our hands). To understand this, let's first look at why the third is better than the second. Jak 2 had a real problem with pacing. Not only was it a tedious game that featured excessive use of hovercraft in Haven City, the missions weren't successively disparate enough, which made playing through a bulk of the title redundant and almost trivial. Jak 3 remedies this entirely. The first half of the game actually features little to no prerequisite world navigation. Missions come back-to-back and take moments to reach. When it is required to move to a distant point, the game will actually tack on extra missions between points A and B so that there is always something exciting to do. After the second half of Jak 3 there are a few instances where you'll be required to revisit a scaled down version of Haven and see it from the saddle of a hover-crap-thing, but even this is infinitely more enjoyable than it was before. First of all, you don't have to worry about wretched cops. Second, the city itself is engulfed in war and eventually every street turns into a massive battlefield where it can sometimes feel like there are more combatants than buildings. Not only do you move between missions faster than before (and over more interesting terrain), the missions themselves are also finely honed, balanced, and extremely diverse. It's not uncommon to rapidly switch between racing, time sensitive platforming, incredibly complex platforming, free-roaming action, free-roaming shooting, on-rails shooting, and freaking tobogganing. Some missions are more challenging than others and will require a few deaths to figure out, but the classic Jak instant load is in place, so getting back into things is never a big issue. Now we come to where Jak excels on its own. Simply, Jak didn't piss me off. It sounds tripe, but it's extremely important. I died a hundred times while playing through the game for this review, but I never became seriously upset and I did beat it. When I thought about this for a time, I figured something important out: I failed because I was no good. Jak 3 offers a gamer just about everything. There are twelve interesting guns, four melee attacks, a dark Jak with melee and ranged attacks all his own, and a light Jak capable of shielding himself, flying, freezing time, and self healing. There are also a handful of different vehicles, an ever-present hover-board Marty McFly would be proud of, and a lot of stationary turrets. It's also a game with the tightest control, the smoothest framerate, the clearest indicators, and the most responsive characters. But I still couldn't win most missions the first time through. The AI is good, the levels are well designed, and death is certainly avoidable, but I'd still die a lot. Why is that? Honestly, I couldn't win in one shot because I wasn't very good. Anyone who has gutted and dressed fish will recognise the skills, once practiced by legendary fish-wives, that make light work of a task many prefer to leave to others. It was in the all important buying, storing and handling of goods which can be so easily damaged and become poisonous when past their sell by date that Chris Scott excelled. His abilities were recognised in a market where reputation is all important and rewarded by promotion until he became the Regional Manager for the company which was by then known as Macfish. Fresh fish stored in refrigerators and displayed on layers of crushed ice was rapidly becoming replaced by convenient packs of frozen fish.
