The Curatorial Intensive Seminars
The Curatorial Intensive is a short-term, low-cost program that took place this June in New York for emerging curators. From an open competition, 17 individuals were selected to come to New York and work with some of today’s leading curators and artists. Through a rigorous schedule of workshops, discussions and critiques, as well as site visits to local institutions and artist’s studios, each participant was led through the process of developing an idea for an exhibition into a full exhibition proposal.

Preparation
(1) Foil - take two pieces, about 18" long per serving. Lay them together for a double layer of foil.
(2) Carrots - peel and chop about little finger size. Or cheat like I did and use 'baby' carrots.
(3) Potato - I used a Yukon Gold. Could have used a red or any other firm potato. Cut these up about the same size as the carrots. I don't peel them.
(4) Onion - one big one. I peel and slice in half. Then slice or chop. I should have made them into bigger pieces then I did, but that's ok.
(5) Butter - I just flipped some small pieces of it onto the veggies.
(6) Seasoning - anything you like will do. I used a Mediteranian blend that comes in it's own little grinder - bought it at the grocery store. Ground and sprinkled it all over the veggies.
(7) Meat - Halibut in this case. More seasoning too!
Then... seal up the foil tightly using the 'drugstore wrap'.
Put the whole thing on the coals (or on a grill right over the coals), seam side up. Let cook about 15 minutes. Flip over and cook about 15 minutes more. Since coals are not excatly regulated, you may want to (carefully) move the packages around so it will cook evenly.
Peel open, and enjoy!
The "Drugstore Wrap" --- Place food in the center of the foil, then bring the long edges together on top. Fold the long edge over once, then continue roll-folding until it's snug against the food. There should be several inches at each open end that are clear of food.
Roll the ends in tightly, compressing the food and making sure that each end has at least three complete rolls. This prevents the juices from escaping during cooking, and also gives you something to hold onto when turning the packet.

It is days like this that make work bareable. Every once in a while we use the grill we have in the office for a cookout. Some one will buy hotdogs, and someone will buy hamburger, and someone will make a dish. When the office comes together for food purposes, it makes the office feel like a place I could spend 10 hours a day. People like me put everything they have into their careers, sometimes doesn't need to feel so much like work.

Crookneck Squash and First Tomato
We thought we planted buttenut squash but instead it's crookneck. I think the wrong seeds were in the bag. Not a big fan of crooknecks but I chopped this one up with some onion and garlic and bit of sea salt and steamed it on the bbq. The tomato me and my hubbie split and ate it fresh. Yum,yum.! There will be many more.

Go Go Gadget Neck!
Had to change the title, I just loved what Adam wrote...
Going thru my archives to dig some of the interesting shots I never posted... never knew that a green backed heron could stretch its neck so much..!! I was just amazed when I saw it... the same bird with its neck retracted is in the first comment.. in both the shots, the bird had its eyes focused on a prey in the murky water.

Roasted Vegetables and Rice in a Sweet – Ginger Sauce with Roasted Eggplant
This is my Dad's picture, but this is MY recipe! :) Enjoy!
Serves 2 VERY hungry people or 3 moderately hungry people
Have Ready:
1c. Cooked brown rice, ?. Cooked lentils (or bean of your choice), ? cup crushed peanuts, and the whites of two scallions, chopped (reserve the green part).
1 recipe of Roasted Eggplant (Recipe Follows)
1 recipe of Roasted Vegetables (Recipe Follows)
1 recipe of Sweet – Ginger Sauce (Recipe Follows)
? English cucumber cut into wedges, 2 plum tomatoes cut into thirds, 1/8cup crushed peanuts, and the reserved scallion greens, cut lengthwise.
Roasted Eggplant:
? large Eggplant, or 1 small eggplant, sliced widthwise in 1cm. Slices, and then cut into half in the shape of half moons. Place in a greased ceramic baking dish. Mix 1 tsp. Cumin, 1 tsp coriander, 1 in. minced ginger, 1 glove minced garlic, 2 tbsp soy sauce, 2 tbsp water, 1 tbsp sesame oil, and 1 tsp. Brown rice vinegar. Drizzle over the eggplant and bake at 400?F for 15 – 20 minutes, or until the eggplant has browned.
Roasted Vegetables:
1 broccoli crown cut into fourths, 1 red bell pepper cut in half, 1 zucchini peeled and cut into eighths. Spray with oil and place on a cookie sheet that has been lined with parchment paper, and bake at 400?F for 30 – 40 minutes.
Sweet – Ginger Sauce:
This recipe comes from How it All Vegan, pg 82, with a few variations
In a blender combine 2 cloves garlic, 1c.water, ?tsp.Curry powder, and 1 inch of fresh ginger, 1 cup natural peanut butter, 3 tbsp soy sauce, 1 tbsp sesame oil, and a dash of cayenne. Puree until smooth and set aside.
Assembly:
Mix the rice, lentils, onions, peanuts and 1/3 of the sauce together.
Mix the roasted vegetables and another 1/3 of the sauce together.
For serving 2 people, cut everything in half, for 3 people, cut everything into thirds.
In a bowl layer 1/3 of the way with the rice mixture, then another 1/3 of the way with the roasted vegetables. Arrange the raw tomato and roasted eggplant to look like flower petals on top, the cucumber slices as leaves. Drizzle with some more sauce, and sprinkle some more peanuts over top. Place some of the green onion slices to look like stamens.
Continue with the next bowl.
rosemary marinade
Ingredients:
1 cup olive oil
1/2 cup red wine vinegar
3 tbsp mustard (spicy brown or Dijon)
3 cloves peeled garlic, roughly chopped
3 - 4 sprigs fresh rosemary, chopped roughly
1 tsp salt
many grinds of fresh pepper
Put all of these ingredients in a deep bowl or measuring cup (large enough to use with an immersion blender*). Blend them until the marinade is thickened and all the rosemary is well chopped.
How to use this marinade: I brush it on everything I grill. It is my standby favorite. It is thick enough that it sticks to my vegetables and I love the rosemary and mustard combination. One of my very favorite ways to use it is to roast the following vegetables:
eggplant
mushrooms
onions
summer squash
Then chop all the roasted vegetables, combine with fettuccine pasta, and add some marinade to the pasta for sauce. Serve with Parmesan.
This would also be great on tofu.
I have never used a marinade on meat (because I have never been a meat eater) so I can't say if the proportions of vinegar and salt are enough to partially cook meat before being grilled as marinades are often used for. I do know that this is a very flavorful way to dress anything you want to grill or broil. I don't use it as a salad dressing because I don't like rosemary for my salad as I think it's too strong. So I don't think of it as a dressing.
*If you don't have an immersion blender, use a regular blender. Or a food processor. And then let me convince you that an immersion blender is so much better than a regular one.

Italian Sausage Soup Recipe
INGREDIENTS:
1 lb turkey Italian sausage links, cut into 1-inch pieces
2 cups broccoli flowerets
1 cup uncooked mostaccioli pasta (3 oz)
2 1/2 cups water
1/2 teaspoon dried basil leaves
1/4 teaspoon fennel seed, crushed
1/4 teaspoon pepper
1 can (28 oz) whole peeled tomatoes with basil (Italian style), undrained
1 can (18.5 oz) Progresso® Vegetable Classics French onion soup
DIRECTIONS:
1. In 4-quart Dutch oven, cook sausage over medium-high heat, stirring occasionally, until no longer pink; drain.
2. Stir in remaining ingredients, breaking up tomatoes. Heat to boiling; reduce heat to medium-low.
3. Cover and cook about 15 minutes, stirring occasionally, until mostaccioli is tender.
Yummo
Cook the broccoli, sausages (I used beef instead of pork) and pasta before hand.
Then chop up the sausages and mix them up with some onion and tinned tomatoes.
Then mix everything together and turf it into an ovenproof dish, cover with slices of mozzarella and then bake in the oven at 180 or so for about 15-20mins.
And VOILA! Delish!

Although its origins are in the Canary Islands, this meaty stew is most associated with Cuban cuisine.
The name translates literally to mean "Old Clothes". One tale suggests the name comes from a poor man making a stew from old clothes to feed his family. So full of love was this meal that the clothes were transformed into a fabulous feast.
Personally, I think it is more accurate to offer that the broth this beef is cooked in is so delicious, even a pair of worn out socks would taste fantastic.
When a friend suggested this one to me I looked down the list of ingredients - Beef, peppers, green olives, vinegar, wine and a mix of spices that all sit at the front of my spice rack. Vamos a echar un pie!
Spicy and rich, with a tangy zest that makes your lips tingle a little, this is my kind of stew.
I made this in my dutch oven in about three hours, but this one would also do well as a slow cooker recipe (particularly if your cut of meat leaves something to be desired).
RECIPE (adapted from Cooking Light)
INGREDIENTS
2 Lb Flank Steak
2 Red Onions, sliced thin
2 Red Bell Peppers, sliced thin
1 Green Bell Pepper, sliced thin
1 Chile pepper, minced
4 Garlic Cloves, minced
1/3 c Green Olives, pitted and sliced
1 tsp Dried Oregano
1 tsp Cumin Seeds
1 tsp Cayenne Pepper
1/2 tsp Dried Rosemary
Heavy Pinch Salt
Dash Black Pepper
1/4 c Cider Vinegar
1/3 c Red Wine
3 c Beef Broth
3 Tbsp Tomato Paste
2 bay leaves
DIRECTIONS
Coat the bottom of a dutch oven with olive oil and heat to high. Sear steak 2-3 minutes on each side and remove from pot.
Reduce heat to medium and add all listed ingredients listed through black pepper. Cook until soft (5-10 min),
Add vinegar and wine and cook for another 5 minutes, stirring and deglazing constantly.
Add broth, tomato paste and bay leaves and return steak to pot. Reduce heat to low and cook 2 hours.
Remove steak from pot. Shred using two forks and return to pot. Stir well and let cook another ten minutes or so,
Serve garnished with grilled tortillas and sour cream, if desired.
Almost no-knead bread
The latest Cook's Illustrated (Jan/Feb 2008) had an elaboration on the no-knead bread recipe that does involve a bit of kneading: 10-15 kneads, in fact, but supposedly produces much better flavor. It requires 3 oz of a mild lager light Budweiser to give it some of the yeasty flavor from a starter. I wasn't about to buy a six-pack of Budweiser just for 3 ounces of it. Icehouse was the closest substitute I could find that the grocery store would sell as a single can. Let's hope it works.
But the aroma is wonderful and I look forward to eating it with some of the Italian pot roast that's going in the slow cooker right now.

they're LIES!! heh.
these are gluten free, lactose free, casein free...cookies. a few years ago i found out that i was lactose intolerant but up until a few months ago i didn't pay any attention to it. once i did actually start to cut the dairy out of my diet, i discovered that my stomach didn't get upset as often and i didn't feel bloated and sick. some of you know that i have been sick for a while now. i am constantly tired and groggy and forgetful. i am testing out a new gluten free (well, starting to limit it) diet to see if that helps any. after this, i will be moving to other foods that could make me sick.
as far as the cookies go...well, they're not completely awful. the texture is really strange, kind of fluffy and the taste is a little stale. i'm hoping that i will find some foods that are gluten free that are more tasty. if anyone has any suggestions, let me know!

rice ball lunch - Copy
My lunch! Itsumi taught me how to make rice balls. We cook the rice in the rice cooker, then mix it with a flavoring packet containing seaweed and salmon flakes, form it into balls and top with sesame seeds. I take rice balls with me when I go out sightseeing, so that I don't have to spend money on lunch in a restaurant. Also pictured are tangerines and rice crackers.
