Contemporary Walnut Dining Table

Walnut bread proving
I've got a little time today to try something a little more time consuming in the bread department, so this is a walnut bread made with a combination of sourdough starter and dried yeast. The use of a small amount of bakers yeast with wild yeasts mean that it makes a lot longer to prove than a normal white loaf, but not as long as a sourdough with no bakers yeast.
Although this is made from mostly strong white flour you can see from the texture that it has wholegrain rye and wholegrain wheat flours in it too. This will add a depth of flavour (as will the walnuts and honey).
The proving basket, or banneton, is a very useful piece of kit, as it allows you to make nice looking loaves that (if using a very wet dough) don't end up sprawling everywhere. You can see the seam here is on top, but I will tip this onto a baking sheet, and the seam will become the bottom of the finished loaf.
