Sweet Pea and Barley Salad Sweet Pea and Barley Salad with an orange and poppy seed dressing for tomorrow. Buy 2 bags of best quality frozen baby/early pees you can find, I go with Hanover Silver early peas usually and let them thaw at room temperature - drain off any water from ice in the bag. Cook 2 cups of barley in 5 cups of heavily salty water (this will be the only salt added to the dish) . Mix the peas and cooked barley evenly and mix the dressing in gently so the peas hold their shape. Seal in air tight container and let sit in the fridge overnight before serving at room temperature or a little below. Orange Poppy Seed Dressing Ingredients: 2/3 cup salad oil 1/4 cup Lime juice 1/4 tablespoons Orange juice 3 tablespoons Orange zest, finely grated 3 tablespoons Honey (Orange Blossom preferred) 4 tablespoons Red Onion, minced finely 1 1/2 tablespoons Poppy seeds Finely ground pepper to taste Preparation: Slightly toast the poppy seeds in a hot skillet for 2 to 3 minutes. Place all ingredients in a screw-top jar. Shake vigorously. Sweet Pea decorations We used sweet pea baby food and a "Give Peas a Chance" onesie in the gift basket, in addition to two pea-themed books.
