Should You Refrigerate Peanut Butter

Snickers Cookies
I lied about taking a hiatus from the cookie balls. Tonight was book club and it was an early morning and I still have to make my annual Christmas mix album and…I’m just plain tired. I’m not shortchanging you though because these cookies are the easiest, most indulgent cookies ever.
Here’s what you do. You go to the grocery store. You buy a tube of refrigerated chocolate chip cookie dough (or peanut butter if you can find it). You buy a bag of mini Snickers bars (the bite size version).
You come home and get someone to help you unwrap the Snickers bars. This person should also keep you from popping every other chocolate in your mouth. Then you unwrap the dough and pinch off pieces. Use your hands to form balls out of your dough (I feel like I’ve typed this before.) Then smash the dough in your hand, place an unwrapped Snickers bar in the middle and reform the ball. Place the balls on a parchment-lined cookie sheet and bake for 8-10 minutes at 350.
Eat while still warm but do not eat directly out of the oven or it will feel like you’ve just coated your tongue and mouth with napalm.
Snickers Cookies
1 tube (18 ounces) refrigerated chocolate chip cookie dough
24 to 30 bite-size Snickers candy bars
Cut dough into 1/4 inch thick slices. Place a candy bar on each slice and wrap dough around it. Place 2 inches apart on ungreased baking sheets. Bake at 350° for 8 to 10 minutes or until lightly browned. Cool on wire racks. Makes 2 to 2 1/2 dozen.

Ingredients
Raw shelled peanuts
Salt
Vegetable oil or sun flower oil or (just not olive oil)
Honey or Maple syrup
Preheat oven to 350 degrees F or 180 C.
In a large bowl mix together shelled raw peanuts, oil and salt. You don't want to much oil, just enough to coat the peanuts and a couple of teaspoons of salt. Spread the peanuts onto a large flat pan and roast for 15-20 min or until golden brown (when you can smell them, they're done). Check on them after 10 min and mix them around on the pan.
Once they're done remove from oven and let rest for 10 min. Put them in the food processor on high for about 30 seconds, add a bit more oil (table spoon or so) and process for another 30 seconds. At this point the peanuts will not resemble peanut butter but just hold your horses.
Let the chopped peanuts rest in the processor for about an hour or until they are fully cooled to room temperature. Add a bit more oil (tablespoon) and a heaping tablespoon of honey or maple syrup. Mix for 2 min. Let rest for 30 min, then mix again. Add more oil if needed and honey to taste.
Cover and refrigerate, it should keep for a couple months :)
