Cook Like a Rock Star: 125 Recipes, Lessons, and Culinary Secrets

If chefs are the new rock stars, Anne wants you to rock in your own kitchen!

For Anne Burrell, a classically trained chef and host of Food Network’s Secrets of a Restaurant Chef (where she shares impressive recipes and smart techniques that anyone can master), and Worst Cooks in America (the show that transforms hopeless home cooks), being a rock star in the kitchen means having the confidence and ability to get a great meal on the table without a sweat. In her debut cookbook, she presents 125 rustic yet elegant recipes, all based on accessible ingredients, along with encouraging notes and handy professional tricks that will help you cook more efficiently at home.

With Anne's guidance, even the novice cook can turn out showstoppers like Whole Roasted Fish or Rack of Lamb Crusted with Black Olives, which are special enough for guests but easy enough for a weekday evening. For Piccolini (Little Nibbles), try making Truffled Deviled Eggs, Sausage and Pancetta Stuffed Mushrooms, or Baked Ricotta with Rosemary and Lemon. Delicious first courses include Pumpkin Soup with Allspice Whipped Cream and Garlic Steamed Mussels with Pimenton Aioli. And if you're craving pasta, Chef Anne's Light-as-a-Cloud Gnocchi, Sweet and Spicy Sausage Ragu, or Killer Mac and Cheese with Bacon will blow you away.

Whether she's telling you how to use garlic most effectively ("perfume the oil, remove the garlic, and ditch it—it's fulfilled its garlic destiny!") or reaffirming the most important part of cooking (it should have the “sparkle factor!”), you will never feel alone at the stove. Anne's effervescent personality and unmatched vitality will be there every step of the way--as teacher, coach, cooking partner, and friend.

Organized from “Piccolini and Firsts” to “Pasta, Seconds, Sides,” and, of course, “Dessert” Cook Like a Rock Star is all about empowering you with the confidence to own what you do in your kitchen, to be excited by what you're making, and to experience the same kind of joy that Anne feels everyday when she cooks and eats.

I went to photograph this, one Wednesday evening, and found it was all locked up inside these rather attractive gardens at a new development just off Thingwall Road. You can just see it in the background on the left. looking rather wistfully at the gate, hoping that someone might let it out.
That was a busy day - I had been riding, then gone to work, then gone to the gym, and I was then on my way to a second place of work. Each activity required different bits of gear such as clothing and equipment, hence the trailer. A good excuse to get the trailer in the picture.

Much to my delight, I found that 1/2" open ended wrenches fit PERFECTLY onto the BOB axle. I rooted through my wrench box and found that I had no less than six 1/2" wrenches, don't need that many! I used a long set screw & two bolts welded onto the bottom of the wrench to secure the hitch to the BOB axle.

Best Man's speech

Best Man's speech

"If I could have your attention for a moment, I'd like to say a few words about the bride and groom. I'm Kelly Thomas, Ryan's best man and Kim's best brother. We're all delighted to be here today on this joyous occasion.

When my wife and I got married, we had a rain storm. I guess my little sister is trying to show me up by having rain, hail, and snow on her wedding! Still, considering how well things turned out for Michelle and I, I think a little precipitation is auspicious. It's facing the little challenges in life together that keeps love ever-green.

I want to take a moment to thank the parents who gave us such a wonderful couple: Ryan's mother Nancy, step-father Ted, father Jim, and grandmother Freda; Kim's mother Karen and grandfather Louis, who gave the beautiful bride away today. There is one important person who sadly is absent today. Our dad Louis recently passed away, but he was so pleased when he heard that Kim and Ryan were engaged. I'm sure he's very proud of you today, Kim.

Kim had asked, now that Dad's gone, who is going to teach our kids to have a sense of adventure? I think I know. Despite the fact that they worked at the same for nine months, Ryan and Kim met while out hiking up to Mailbox Peak. Ryan mailed Kim some of the pictures he had taken, and things snowballed from there. They've been backpacking around Mt. Rainier, sea kayaking around Lake Union, and bicycling around Lake Washington. Did Ryan propose at a fancy restaurant? No sir, this adventurous guy proposed on the shores of a glacial lake at the end of a fjord in Norway! I think it's pretty clear that there will be no lack of adventure where Ryan and Kim are involved!

Now, if you'll all join me in raising a glass to our happy couple, Kim and Ryan, as together they begin the biggest adventure of their lives:

May the joys you share today be the beginning of a lifetime of great happiness and fulfillment. Cheers! "

Thank you, Kelly!

Brian the beer by bike man #7

Brian the beer by bike man #7

#7 In the series 100Strangers.com At least once a week, if not more, we see this guy riding his bike up our street in South Philadelphia, carrying/balancing a case of beer on his bike's handlebars. We call him the Schlitz Guy because he's usually carting a case of Schlitz Beer, though it does vary from week to week. The beers tend to be inexpensive cases of cans, something I might refer to as "low-rent" beers. I've seen this guy for years and have been fascinated by his tenacity and ability to balance the beer case on his bike handlebars. I've been wanting to take his photo but I've never had my camera handy until today; it must have been my lucky day. He was stopped at the corner of my street trying to figure out what one of my neighbors was doing (she was attempting to park, but wanted to back up and park in the spot where he was). My timing was perfect as I already had my camera handy. I pulled my bike over to The Schlitz Guy and we chatted for a bit, me telling him I see him every week, and he telling me that he's actually riding up the street EVERY day with his case of beer. I figured that since we were both on bikes, I'd have a good chance of asking him if I could take his photo - wanting to photograph fellow cyclists and beer enthusiasts. Brian couldn't have been happier to pose for me; he actually allowed me to take a few photos, but this one was by far the best. He was keen on my getting the beer brand and his balancing act in the shot. Brian says he buys a case a day. Hopefully he has crew of friends who help him drink it. I'd hate to think what his liver looks like.

Buckshee Wheelers Cycling Club Badge

Buckshee Wheelers Cycling Club Badge

The Buckshee Wheelers were a cycling organisation formed by British servicemen. They used to compete in races in North Africa and the association was continued in England after the Second World War ended.

Here's some information from Tim Hilton, writing in The Independent newspaper:

The Buckshee Wheelers is a fellowship club. By reason of its constitution the club is in terminal decline. The members of the Buckshee were in north Africa in the last days of Hitler's war and somehow managed to organise bike races in the desert. Their motto, one Buckshee Wheeler told me, was ''Growing and Growing and Growing''. Shouldn't that be ''Dying and Dying and Dying?'' I pertly said. The roll of honour is growing and growing. Though not rebuked, I felt chastened. The Buckshees allowed some post-war national servicemen to join their ranks, with a cut-off date of 1953. The youngest Buckshee Wheeler is said to be the fine roadman Brian Haskell, who is now 74.

Here's another write-up from the website 'Travels With a Tin Donkey,' a place dedicated to all things cycling and two-wheeled. It's from a review of Tony Hewson's book 'A Racing Cyclist's Worse Nightmare.'

''And who could doubt the merits of the Buckshee Wheelers, one of the most unlikely cycling clubs ever? Nothing could have been more eccentrically British than a group of soldiers stationed in the deserts of North Africa during World War II wanting to form a cycling club, going on outings when not fighting Rommel’s Afrikakorps. It started with two cyclists, who were soon joined by ten others, but there was only one spare bike. An appeal to British manufacturers got them a hundred new bicycles and soon they were racing for the Bully Beef Trophy (25 mile time trial event with a can of beef mounted on a plinth as the prize) or at the Grand Prix de Ghezira road race in Cairo. Unsurprisingly, operation of the club required a great deal of resourcefulness to bend military rules and this virtue is obvious in a short story about three fictional Buckshee Wheelers, now back in postwar England, who discover cyclists are not always welcome guests at public houses. This entertaining story shines a light on what it was like to be in a country that, while victorious in war, still had its citizens under rationing. The cyclists are truly thrilled to find ham sandwiches (albeit with margarine rather than butter) and tomatoes at the pub, which speaks either of the deprivations of rationing or the limited ambition of English cuisine. Other stories suggest that cycling in Britain was a sport outside the norm, and its practitioners deemed nuisances and freaks, a view that persists in not a few English-speaking nations today.''

1950 FEND Flitzer 101

1950 FEND Flitzer 101

1950 FEND Flitzer 101
Although the Flitzer was the precursor to the Messerschmitt KR175, it was NOT built in the Messerschmitt Factory.

Fritz Fend started building very primitive vehicles for people who had lost limbs during the war before he built his first vehicle.
Conceived as a method of transportation for the disabled, Fend did not want the vehicles labeled as "for the disabled", but as a "car" that also appealed to the handicapped.

The Fend Flitzer evolved from an invalid carriage with bicycle wheels and 38cc engine into this 100c Microcar with scooter wheels and a choice of open or enclosed bodywork.

Eventually Fend took his design drawings to Regensburg, the home of his former employer; Willy Messerschmitt, whose factory, now that the war was over was now desperately looking for things to manufacture.
Here the original Fend Flitzer designs were adapted, along with other designs that Fend had not produced to create the Messerschmitt KR175.

Built between March 1949 and December 1951, Fend built 252 of these models.

Today there are perhaps 4 known to survive.
This is the only one in all original condition.

Manufacturer: Fend-Motor GmbH, Munich, Germany

Raleigh Grand Prix restoration at Flying Pigeon LA

This bike came in totally disassembled, with a lot of sentimental value behind it.

We slowly rebuilt the bike, polishing everything in our path (Leticia did most of the work on this bike). The Phil Wood hubs laced into 27" Mavic MA 2 rims were sent back to the factory to have fresh bearings pressed in. A honey Brooks B17 and matching leather bar tape finish off the bike nicely.

To make the multi-speed rear wheel work as a single speed, we did some magic with a few hub shims, and a slightly shorter cottered bottom bracket than the one that came with the bike. We also reversed the chain ring on the crank arm spindle. The chain line isn't perfectly straight, but it is pretty darn close. MKS Sylvan Touring pedals are a good match for your typical flat-bottomed sneaker set (a pair of Chuck Taylors, Vans, etc.)

Schwalbe Marathons are the tires of choice for most of our hard core city riders - and this old Raleigh Grand Prix got a set.

We think the bike looks great and rides like new (or maybe better) after all of the time and attention we put into it.

The build labor and parts came to a little under $350. Paint was done by our customer (we typically charge anywhere from $120+ to have a bike powdercoated).

the super-commuter

the super-commuter

Final picture of my completed super-commuter. Built this from the ground-up, with custom parts that I chose specifically to achieve this final look. Frame is a 1984 Trek 400 series road bike which was media-blasted clean, then powdercoated with semi-gloss black.

Other accessories include laquered cork grips, polished chrome fenders, a cowhide seat, and stainless-steel brained cable housings from Velo Orange, stem-mounted shifting, a Nitto Northroads handlebar, and a Minnehaha seat-roll bag. MKS 3000 rubber-block pedals round it all out.

Riding to work in a sport coat and a tie is no problem on the super-commuter.

How I lock my Yuba Mundo

How I lock my Yuba Mundo

I use only Kryptonite orange locks or better (the best is yellow).

I have a LS (long shackle) and an STD (standard). The STD locks the front wheel to the frame (it has quick release levers). The LS locks the frame to the bike rack. Its length allows for more versatility in locking situations. I then run a cable around the back wheel to the LS.

I actually recommend AGAINST using OnGuard locks. I also recommend against using Kryptonite's black and gray locks. Only orange and yellow are acceptable.

Contact me if you want to use a photo without watermarking.

A photo of my classmate's defeated (via angle grinder?) Kryptonite Kryptolok. His Surly Long Haul Trucker was stolen. The thief (or thieves) left everything but the bike.

You should buy the most expensive lock you can afford. Also, keep in mind the lock's price relative to your bike. For example, if you purchase a $1,000 bike, you should spend another $100 on a good locking solution.

Me on my recumbent before the start of the 5 boro bike tour, courtesy of Bitchcakes.
Yes it's comfortable. Only way to describe them is 'lawnchair on wheels.'

Quick history: I bought it back in '93 or so. Made by a company called Infinity out of Mooresville, Indiana, they stopped production about 10 years ago. They are one of the few aluminum-frame long-wheelbase (LWB) recumbents, so it's actually pretty light.
Then last year I went on a buying spree and picked up 4 more of them on Craigslist all around the country. They were relatively inexpensive.
I can't build them up until I either find more of those handlebars or make bars myself. They come with 'under-seat steering' handlebars, which involves two steel cables that attach to the fork. No likey the USS. But if I make them I have to learn aluminum welding first. So there's another project on my list.

Over 500 miles bike ride to Idaho. Sept - Oct 2007

Over 500 miles bike ride to Idaho. Sept - Oct 2007

P9220252. Photo: On the road in Colfax, WA

A Bike tour From Portland (Troutdale) to Bonner's Ferry, Idaho. Eleven days of riding 530 miles (plus 40 miles of hitching). The return was made on the Empire Builder Amtrak train at Sandpoint, ID.

For the tour Matt and Carye bought new custom built Bike Friday (www.bikefriday.com) folding bikes that are made in Eugene, Oregon. Neither Carye or Matt own cars, so investing in a reliable, flexible bike for travel was important. However the bikes arrived two days before leaving, so getting used to new bikes while on the road, was literally a pain in the butt! By the end of the trip, gears, seat and handle bar placement, and proper riding shoes were figured out. Everyday of the ride had awesome weather (not too hot, not rainy), and Carye and Matt met many friendly people, ate as much pizza and icecream as desired, and enjoyed some beautiful scenery (though Washington wheat fields get dull to the eyes after 20 miles). The fourth day brought bad luck - 4 flats (at once!) caused by Goathead thorns, and wind in the face most the day. Also a family of earwigs hitched a ride in C & M's camping gear, and it took about a week to finally see the last one. Idaho is a cyclist paradise (what a secret). From The State Border near Coere D'Alene to just before Bonner's Ferry, there were many bike paths, nice scenery, and most flat routes.

Day 1:Troutdale to Hood River (55.6 miles)
Highlights: Gorgeous Columbia River (Get the bike map from ODOT). Ride to Council Crest, Ride by Falls, bike-ped paths on the old historic highway.

The campground listed on the bike map for Hood River was not there. We decided to treat ourselves and stayed at the Hood River downtown hotel. Hood River is a super nice town - though sad the Carousel Art Museum is closed and moving elsewhere. Also on this route, between Cascade Locks and Wyeth, do not take the Wyeth Bench Rd (aka Herman Creek Rd), it is a horrible grade hill, and you are better off taking the I-84. Note about I-84, it's not the most pleasant experience, but it's not bad, In order to bike to Hood River, you will need to get on I-84 at several points - The shoulder is pretty wide at most places, and it's a good idea to wear some bright orange!

Day 2: Hood River to Maryhill, WA (52.5 miles)
Highlights: The old historic highway section is really neat: it goes through the Mosier Tunnels (now just for ped/bike), The section through Mosier town, and to Rowena's Crest was on low traffic streets. No need to get on I-84 at all all the way to the Dalles.

The crossing over to Washington on the bridge in the Dalles was difficult. It was so windy and the sidewalk so narrow we had to walk. Biking to hwy 14 across the wind was also difficult. But once on hwy 14 heading East, the wind was at our bikes, and we cruised past the Maryhill Museum (Too late in the day to stop!) and stayed at the Maryhill State Park (back down by the river).

Day 3: Maryhill to Crow Butte (58.2 miles)
Highlights: Cruising sometimes 20 miles an hour easily with the wind at our back on Hwy 14. Lovely more deserty scenery, waving to trains. A Stop at Stonehenge.

From the campground, we hitched a ride in a pickup back up the top of the hill to hwy 14. The road was a major truck route, and the shoulder was pretty much missing for the first section of the hill, we decided htiching was the safest option. We enjoyed stopping at America's Stonehenge. I had been there before, but never thought I'd bike all the way! Crow Butte park was father than we thought. We could see it, but then had to ride about 4 miles all the way around and out to it. The RV park was expensive, and did not offer "primitive camper" sites.

Day 4: Crow Butte, WA to Hat Rock Park, OR
Highlights: Early morning hike past deer to the top of Crow Butte. Discovering the way over the I-82 - there is a bike route, but you need to go on the may freeway before the bike route appears, then you exit, cross under and go over on the otherside. Umatilla was nice little town to check out. At first we were excited about the Lewis & Clark Bike/Ped Bath, but it turned into a bad situation.

The wind in the gorge changed from E to W today, so we had to push hard for 20 miles, going about 5-8 miles an hour. Very hard reality after the day before. The road moved away from the Gorge and was now less interesting. Onion (Walla Walla) trucks passed us all day, leaving onion skin trails. We crossed back to Oregon, and instead of the main road decided to follow the Lewis & Clark trail to Hat Rock State Park. Unfortunately it turned into a bad idea. The path was badly marked and kept changing from paved to shared road, to bark-dirt to gravel. After a gravel section we discovered that we had rode through thorns and had 4 flats at once. We pulled out 15-30 thorns and only had two new tubes, One tube needed to be patched 7 times. We were able to ride out to the main road and hitched a ride with a priest. The State par

We were able to ride out to the main road and hitched a ride with a prie

Bike part heaven

Bike part heaven

There is a place where all used bike parts go when they die. It's called bike part heaven and it's a cardboard box under my bed.

This is just some of the parts from the last 3 years. I don't know why I haven't thrown them away, they might come in handy for something. I might clean up the old chains, an sell them on ebay as mountain biker bling!
