Smoked Tri-Tip
Five pounds of pre-marinated Trader Joe's Tri-Tip smoked with hickory and mesquite for three hours at about 225 Fahrenheit. I put the meat on the rack in the smoker so the fat was on top, as Alan recommended, so the fat dripped through the meat as it cooked, leaving it quite moist.
