add in the egg yolks and work the dough together quickly.
put in a cool place for almost an hour ( aka the terrace in a below zero°c sweden ).
roll out the dough and cut out cookie-cutter stars ( or what your heart desires ).
brush them with lightly whipped egg white.

hot cinnamon sugar cookie
I added cinnamon at a rate of 1 tablespoon & about 1/2 teaspoon of cayenne pepper per cup of flour to a crispy sugar cookie recipe . I wanted them to be some "red hot". :) They have a good cinnamon flavor with a touch of heat. I love them. I want to have a fun Valentine's Day dinner and these will be part of it.
