This is one of my favorite pieces to cook with! Fill the well with some wonderful herbs and wine, or with fruit juice and your favorite spices. Then place chicken vertically over the well (neck cavity is facing up)...then put veggies all around if desired. Roast in oven, baste if you want, and voila!
