Pot Roast Beef
Stuart is happy with anything that has "beef" and "roast" in the name. However, I didn't cook it long enough and had to be remedied by going into the pressure cooker for awhile longer - that pot is a life saver!
Served with steamed asparagus and baby sweetcorn (totally unseasonal, I know but when is baby sweetcorn ever in season in this country?), roasted Anya potatoes and a gravy made with beef stock, carrots and parsnips.
My First Pot Roast!
Making a last minute pot roast forced me to buy a pressure cooker, which I must say is a welcome addition to my arsenal. It's like a delicious, magical funnel to food bliss.
